How To make Banana Buttermilk Buckwheat Pancakes
1 c All-purpose flour
1/3 c Whole-wheat flour
1/2 c Buckwheat flour
2 tb Sugar
1 ts Baking soda
4 ts Baking powder
2 Eggs; slightly beaten
4 tb Butter; melted
1 1/2 c Buttermilk
1/2 c Milk
2 Ripe bananas; mashed
In a large bowl, combine flours, sugar, salt, baking soda and baking powder. In another bowl, combine remaining ingredients. Add liquid mixture to the dry ingredients, stirring well. Drop by 1/3 cupfuls onto a 340 degree griddle.

Buckwheat Pancakes with ricotta – fluffy + light
Light, fluffy buckwheat ricotta pancakes with a hint of lemon are delicious for a weekend breakfast.
This buckwheat flour pancake recipe is surprisingly light and super quick to whip up. I use oat milk in my pancake batter but feel free to swap out for your preferred milk.
These pancakes are perfect served a drizzle of maple syrup and topped with blueberries, strawberries or your favourite fruit.

Buckwheat flour is naturally gluten-free. This whole grain is jam-packed full of protein, fibre, vitamins and minerals, and antioxidants.

Buckwheat Flour (or swap out for Regular white flour) – 130g /4.6 oz
Ricotta Cheese – 250g / 8.8 oz
Eggs (separated) – 2
*Milk (I use oat milk) – 60 to 80ml / 2.7 fl oz
Baking Soda – 1/2 tsp
Baking powder – 1/2 tsp
Sugar – 2 tsp
Vanilla Extract – 1/2 tsp
Lemon Juice – 2 tsp
Lemon Zest – 1 tsp
Butter or Oil for cooking – 1/2 -1 tbsp

Vegan Buckwheat Pancakes Recipe
1 cup of buckwheat (blended into flour)
1 tbsp cocoa powder
2 tsp baking powder (or baking soda)
1 tsp cinnamon (or more)
2 tbsp date syrup (any other syrup will work)
3/4 cup of plant milk + 1 tsp apple cider vinegar (combined)
water if needed
Blueberries or chocolate chips
1. Blend buckwheat groats into flour
2. Combine the dry ingredients
3. Make vegan buttermilk by mixing apple cider vinegar and soy milk
4. Add the wet ingredients and stir until well combined
5. Spoon out 1/4 cup of batter per pancake
6. Cook on medium heat until cooked through
