Bran Muffin Recipe
2. cups Bran cereal
1/2 cup. Boiled water
2. pcs Eggs
3/4 cup. Sugar
1/2 cup. Melted butter
2 1/2 cup AFP
2 1/2 tsp. Baking soda
Bran Muffins
I'm a firm believer that healthy can also be delicious. Bran muffins can be great or they can be cardboard. I started with a decent bran muffin recipe and then played with it until I felt it was as much a treat as anything, while still being good for you. These muffins freeze well. So you can make the batch and freeze what you need to in ice cream buckets, thawing as needed.
BRAN MUFFIN RECIPE
INGREDIENTS
1 cup boiling water
3 cups divided whole bran cereal -Weetabix Flakes (or approximately 8 Weetabix biscuits gently crushed), FlaxPlus Bran Flakes, All Bran or a combination of bran cereals
½ cup shortening or butter
1¼ cups white sugar
2 eggs
2¼ cups buttermilk
2 cups all‑purpose flour
½ cup whole wheat flour
½ cup wheat germ
2½ tsp baking soda
½ tsp salt
DIRECTIONS
1) Preheat oven to 400 F/204 C
2) In a small bowl, add boiling water to 1 cup of bran cereal; set aside to cool
3) Cream shortening or butter and sugar
4) Add the eggs and thoroughly combine
5) Add the buttermilk
6) Add bran/water mixture, flour, wheat germ, baking soda, and salt; it will be very soupy
7) Add remaining 2 cups bran cereal, folding only until moistened.
8) Using a third cup measure, scoop into muffin cups ( if you use a scant third cup per muffin, you'll get 3 dozen muffins)
9) Bake 15 minutes
VARIATIONS (the ones I used are marked with an *)
* Flax Seed Variant:
add 1/3 cup unground flax seeds (scant ½ cup after grinding)
increase buttermilk to total 2 1/3 cups
Grind flax seeds in food processor and add with wheat germ
*Sugar Substitution Variant:
substitute ½ cup brown sugar and ½ cup white sugar for the sugar listed in the recipe
* Whey/Milk Variant:
Substitute 1½ cups whey and ¾ cups milk equal measures of the buttermilk (if following the flax seed variation, use 1½ cups whey and ½ + ⅓ cups milk)
Dried Fruit Variant:
Any dried fruit will work, but it should be small pieces. Raisins and craisins work well without any extra work. These should be added at the very end (or sprinkle a few into each muffin cup), and you may add as many or few as you like.
* Wheat or Oat Bran:
Add ½ cup wheat or oat bran, no additional liquid necessary
* Dry milk Variant:
Add 1/2 cup dry milk and increase liquid by 1/2 cup
Higher Protein Variant:
add ½ cup soy protein powder
use ⅓ cup less white flower (for a total of 1⅔ cups)
increase buttermilk amount by ¼ cup

Best Homemade Bran Muffins
This is a super delicious recipe that my kids absolutely love. When I have family visit they are always asking me to make these bran muffins. This recipe is very easy to make as you can see by watching this video and it's very easy to change up to so you can switch out the sugar with applesauce, molasses or even honey depending upon your tastes, dietary requirements etc.
This is a great family recipe to make with your children and I love to make these sometimes with different shape pans. For instance for Valentine's Day I'll use heart-shaped pans and make heart-shaped bran muffins. I have different size ones. I have also made into loaves. You can do it however you want.
My kids prefer that I make it into the regular to a half inch to 3 inch across muffins. When I make these my kids are usually yelling down the stairs are they ready yet over and over again until they finally are. They really are that good. You can also substitute the bran flakes with raisin bran or even Wheaties.
It's entirely up to you how you want your bran muffins to come out as you can see in this recipe video I use straight plain bran muffins from Walmart.

Bran Muffin Recipe, Awkward Cooking #10
Get regular again with this easy and delicious recipe. Sprinkled with raisins, these healthy muffins are going to be a favorite in your household, no matter your age.
Bran Muffin Recipe (with raisins)
2 Large Eggs
3 Tbsp. Cooking Oil
6 Tbsp. Brown Sugar
2/3 Cup Raisins
1/2 Cup Milk
2 Tsp. Vinegar
1 Cup All Bran Cereal
1 1/3 Cup All-Purpose Flour
1/2 Tsp. Baking Soda
1/2 Tsp. Baking Powder
Pinch of Salt
Mix first 4 ingredients in a bowl.
Stir milk and vinegar in a cup and let sit for 3 minutes. Add to bowl and stir.
Mix last 5 ingredients in a separate bowl and stir until well mixed. Now add this mixture to the first bowl and stir again just until completely mixed.
Pour muffin mixture into a greased muffin tin.
Bake at 400°F for about 15 minutes. When an inserted wooden toothpick comes out clean, the muffins are fully cooked.
Makes 6 Large muffins.

Bran Muffins
I have been a long-time fan of my local bulk food store. They carry so many interesting and unique things that you don't find at the supermarket. When I saw this big bag of wheat bran for less than $1.50, my mind started racing with ideas about how I could use it. As a fan of the good old bran muffin, this was the first on my list to create with my wheat bran treasure!
1 1/2 cup wheat bran
1 cup buttermilk or sour milk
1/3 cup vegetable oil
1 egg
2/3 cup brown sugar
1 tsp vanilla
1 cup flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 dried fruit (diced dates, raisins, diced apricots, dried cranberries - you could also use chopped walnuts or chocolate chips)
Preheat oven to 375 degrees.
Line standard muffin pan (one dozen) with liners or spray with non-stick spray.
In a large bowl, mix wheat bran and buttermilk/sour milk together. Let stand for 10 minutes.
In another bowl, beat together the oil, egg, brown sugar and vanilla. Add to the bran/buttermilk mixture and combine.
Sift or whisk together the flour, baking powder, baking soda and salt. Stir into the wet mixture until just blended. Fold in fruit.
Divide batter evenly between the 12 muffin cups.
Bake for 15-20 minutes or until tops spring back when gently pressed or a toothpick inserted into the middle of the muffins comes out clean.
Remove muffins from baking tin immediately and allow to cool on a wire rack.

1/4 tsp salt
2 1/2 cups almond milk or other nondairy milk
1 cup applesauce unsweetened
3 tsp vanilla extract
Make about 16-18 muffins.
Bake 350 for 20-24 minutes
