How To make Brainy Bran Muffins
PHILLY.INQUIRER:
8 tb Butter,room temperature
1/2 c Brown sugar
1/4 c Honey
2 Eggs
1 1/3 c Flour
1 1/2 ts Ground cinnamon
1/2 ts Salt
1 1/2 c Bran flake cereal
1 1/2 c Buttermilk
1/2 c Raisins
IRWIN E.SOLOMON:
Place paper liners inside muffin tin.Preheat oven to 375~.
Combine butter and sugar in mixing bowl and cream together until smooth. Add honey and blend. Add eggs and blend on low speed.Mixture will look soupy.Add 1/2 the flour,all of the baking soda,cinnamon and salt.Add bran flakes and blend.Add 1/2 the buttermilk and blend.Then add the remaining
flour,followed by the remaining buttermilk.Blend until smooth. Stir in raisins.Spoon batter into muffin tin until 3/4 full.
With mitted hands,carefully place muffin tin into oven and bake for 25 minutes. Turn oven off,and,with mitted hands,carefully remove tin.Let muffins cool for 10 minutes,then,with covered hands,turn tin on its side,letting muffins fall out. Use a table knife to loosen any stubborn muffins.Cool completely before wrapping in plastic wrap to freeze.Makes 12 muffins.

BRAN MUFFINS - the delicious muffin you've never heard of
Bran muffins are delicious and relatively healthy muffin that is super easy to make that even I could make it. It's not an overly sweet muffin like most - and is a great thing to have for breakfast or a light snack.
For this recipe we pulled some inspiration from Toni's childhood. Bran muffins are a hidden gem and you should definitely try it out!

Almond Milk Recipe:
INGREDIENTS (makes 12 muffins)
2 tbsp egg replacer + 4 tbsp water OR 2 eggs OR flax egg equivalent
2 cups bran cereal
1 3/4 cup almond milk (recipe here:
1 1/2 cup all purpose flour
1/2 cup brown sugar
1 tbsp baking powder
1/4 tsp kosher salt
1/4 cup apple sauce
DIRECTIONS
1. Preheat oven to 400F
2. Prepare egg replacer by combining with water and whisk. Set aside.
3. Put bran cereal in bowl with almond milk. Set aside.
4. Put flour, sugar, baking powder and salt in bowl and combine.
5. Add egg replacer mixture to cereal mixture. Mix well.
6. Add the wet ingredients into dry ingredients. Mix enough to combine - avoid overmixing.
7. Spray muffin tray with cooking oil and spoon equal amounts of muffin mixture into tray.
8. Bake for 18-22 minutes. Start timer at 18 and cook additional if needed. Use toothpick or touch test to check for doneness
9. Serve on its own or with butter.
10. Enjoy :)
These store well in a plastic container with the lid slightly ajar.

2 Cups Kodiak Buttermilk Pancake Mix
1 Egg
1/4 Cup Applesauce
1 Can Pure Pumpkin
1 TSP Baking Soda
2 TSP Ground Cinnamon
2 TSP Pumpkin Pie Spice
3/4 Cup Splenda or other sweetener
1/4 Water
Preheat oven to 350 degrees
Pour all ingredients into a medium size bowl & mix well
Scoop the mixture evenly into each muffin tin
Bake for 16 to 18 minutes (tops will be lightly brown)
