RECIPE BELOW: Classic Black Bean Sauce is the delicious base for this chicken stir fry with asparagus.
Serves 4-6
Ingredients:
• 2 small or 1 large skinless & boneless chicken breasts
• 1 bunch asparagus, washed, trimmed & cut 2”diagonal
• ½ med yellow onion-sliced
• 2Tbsp Chinese Fermented Black Beans-soaked and rinsed
• 4 garlic cloves, minced
• 1 Tbsp minced ginger
• 2 spring onions-cut small
• 2 Thai red chilies-seeded and sliced *optional
• Seasoning salt mix -Watch video-S1Ep76-
• ½ Tsp Ground white pepper
• 1 Tbsp Oyster sauce
• 2Tbsp Lite soy sauce
• 1 Tsp Shaoxing wine
• 2 Tsp Sesame oil
• 1 Tbsp Cornstarch + 2-3 Tbsp water for slurry
• 1 C water
• Oil for cooking
Black Bean Sauce: combine black beans with the ginger, garlic, chilies; add 1 Tsp seasoning salt, 1 Tbsp lite soy, 1 Tsp sesame oil
Chicken Marinade: 1 Tsp seasoning salt, ½ tsp white pepper, 1 tsp sesame oil, 1 Tbsp lite soy, 1 Tsp wine, 1 Tsp cornstarch
Asparagus: 1 Tbsp water, ½ tsp seasoning salt, 1 Tbsp wine

Beef & Mushroom Stir-Fry in Black Bean Sauce Chinese Style
Welcome to Sleaford Chinese Cooking Class. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.
Ingredients:
200g Beef Fillet
100g Button Mushrooms
½ Green Pepper
3 Cloves Garlic
5g Ginger
2 Spring Onions
200ml Black Bean Sauce
1 Egg
½ Green Pepper
1 Tbsp Cornflour
Method:
1. Finely chop the garlic and ginger
2. Roughly chop the spring onions
3. Cut green pepper into bite-size pieces
4. Cut the mushrooms into halves or quarters depending on the size of the mushrooms
5. Cut beef into thin strips and place into a bowl
6. Break the egg onto the beef, add cooking wine, soy sauce and cornflour. Mix well and leave to marinate for 10 minutes
7. Heat 2 Tbsp of oil in a wok over high heat
8. Place beef single-layered in the wok, stir-fry for 2minutes or until lightly brown, remove beef from wok but leave the oil
9. Place ginger and garlic into the wok, fry for few seconds
10. Add the mushrooms and pepper, stir fry for a minute
11. Add the black bean sauce, stir and then bring to the boil
12. Add the beef and stir-fry for a minute
13. Add spring onion
14. Transfer to a dish and serve

8 TREASURE VEGETABLES IN BLACK BEAN SAUCE
Here comes a very easy Chinese gravy that pairs beautifully with a fried rice or noodles alike.
INGREDIENTS
Bell peppers mixed( red, yellow and green) - 1cup
Carrot - 1/2 nos
Baby corn - 8 to 10 sliced thick
Asparagus - 4nos
Onions - 1 small
Spring Onions - 5 to 6
Roasted Cashews - a handful
Cornstarch - 5tbsp
Oil - 2tbsp
Dark soy sauce - 2 tbsp
Tomato puree - 3 tbsp
Black bean sauce - 3 tbsp
Sugar - 1tsp
Black pepper powder - 1tsp
Sesame seeds - 2 tsp
Chopped garlic - 3 tbsp
Green Chillie slit - 1nos
Chopped ginger- 1tbsp
Spring onion greens chopped- 3 to 4 tbsp
Basil leaves roughly torn - 5 to 6 leaves
METHOD
Heat oil in a wok and add the sesame seeds. Allow it to splutter. Add the chopped ginger, green chili, garlic and sauté a little. Add the roughly diced onion, spring onion bulb and sauté till onions are translucent but still crunchy. Add in the mixed chopped vegetables, salt and pepper . Mix well and allow it to fry for a couple of minutes.
Now add the soy sauce, tomato puree and black bean sauce one after the other and mix well. Add water and sugar. Cook the vegetables till they are well done but not overcooked.
Mix water to cornstarch and make a slurry.
Add this to the vegetables and cook till the cornstarch cooks and obtains a glossy look.
Adjust the consistency by adding water if required.
Add the torn basil leaves and spring onion greens. Stir and cook for another 2 to 3 minutes.
Transfer to a serving dish and serve as an accompaniment for your choice of fried rice or noodles
