Top tip - make an extra big batch and freeze the cut out dough. Then whenever you’re feeling peckish pop in the oven and cook until golden and warm.

Apple Cinnamon Scones
I spent a good part of my childhood in Germany where I fell in love with baked goods. There is nothing better than walking into a bakery at 6am and smelling the fresh scent of bread, cookies, croissants and scones.
Over the years, I have tried scones from many different bakeries, but they never quite tasted the same. This is where my scone journey began. I didn't know how deep down the rabbit hole I would go, but I think it is safe to say, my family and friends are all scone lovers now due to the large volume they have tried over the past few months.
Along this journey, I also discovered why it is so hard to recreate a dish your grandmother makes, even when you have her recipe card. I took a simple recipe I found on the internet and made it my own. I believe no baked good can be called a baked good if it doesn't have pure vanilla extract in it. This is something I learned from my mother. No matter what the recipe says, you always need at least 1 teaspoon of vanilla. Also, I prefer heavy whipping cream to just milk, and why shred your apples when you can have nice apple chunks. Of course, my recipe card does not have any of this information on it, it is all stored in my head - good luck future grandchildren!

Autumn Apple and Date Scones
Recipe::
British Autumn Apple and Date Scones are perfect for fall/autumn to enjoy for breakfast or afternoon tea. Made with warming spices like cinnamon and nutmeg along with sweet honeycrisp apples and soft, sweet medjool dates. Remember, when you enjoy an English scone, don’t forget the jam and clotted cream.
Apple Butter Scones With Maple/Honey laze.
Fizzle the drizzle !! These scones are easy to make and the drizzle adds just the touch of extra yum to this already sweet delicious treat. Good to go with a hot cuppa tea on a rainy evening! These buttery scones are flavored with apple butter and a maple/honey glaze.
Ingredients
2 ¼ cups all-purpose flour
2 tsp baking powder
1 tsp ground cinnamon
¼ tsp salt ¼ cup butter, cubed and chilled 1 tbsp light brown sugar
2 eggs, at room temperature
½ cup + 2 tbsp buttermilk
¼ cup apple butter
1 tbsp cinnamon + sugar mix, for the top For the glaze:
1 cup powdered sugar
8 tbsp pure maple syrup/honey
4 tbsp butter, melted
1-2 tbsp milk
Method
Preheat oven to 425°F/218°C. In a large bowl, combine flour, baking powder, cinnamon, and salt.
Add in the cold butter and cut into the flour till you have a bread crumb texture
In a separate bowl add in the eggs at buttermilk and apple butter and sugar. Mix well. Gradually add the dry mixture to the wet, and mix just until combined.
Pour mixture onto a floured surface. Use your hands or a roller to form a disk. Cut into slices, like triangles, and place on a parchment-lined baking tray. Brush the tops with buttermilk and sprinkle cinnamon sugar.
Bake for 10-12 minutes, or until crusty and golden brown. Meanwhile, make the glaze by combining all ingredients in a bowl.
Remove scones from the oven and place them on a wire rack. Allow cooling for about 5 minutes, before adding the glaze on top.
To make the glaze:
In a bowl add the powdered sugar, melted butter, and honey/maple syrup. Whisk together
Add in a tablespoon at a time of milk. Just enough to have a consistency to drizzle.
Slow cooker Apple sauce
8 medium to large apples
1/3 cup water
1 1/2 tablespoons lemon juice
1 1/2 teaspoons ground cinnamon
Dash salt
Optional: 1 to 2 tablespoons sugar (brown or granulated)
Method
Peel and core the apples. Cut them into 1 to 2-inch chunks.
Put the chopped apples in the inner pot of the Instant Pot. Add the water, lemon juice, cinnamon, salt, and sugar, if using. Toss to coat the apples. Secure the lid and turn the slow cooker on low and I let it cook for 10 hours.
An hour into the process I gave it a quick stir and that's it.
Put the lid on and hours laters perfect apple butter.
