How To make Apple Crumb Cake (Mrs.Entemann's)
1/3 c Butter 1 pk Active dry yeast
4 Granny Smith Apples 3/4 c Water
3/4 c Sugar 1/3 c Butter
1 ts Lemon peel 1 Egg
1/2 ts Cinnamon 1 ts Lemon peel
1/8 ts Mace 3/4 c Chopped pecans
1/3 c Currants 6 tb Flour
2 1/2 c Flour 1/4 c Confectioner's sugar
3 tb Sugar 3 tb Butter
1/2 ts Salt 1/4 ts Cinnamon
Melt butter in large skillet. Pare,core and slice apples to 1/2" pieces. Add apples to butter and cook, stirring, 8 minutes until tender. stir in suygar, peel, cinnamon, mace andcurrants. Cook 15 minutes, stirring until thickened. Cool. In large bowl, combine 1 cup flour, sugar,salt and yeast. In small saucepan, combine water and butter. Heat on low flame until 120 F Gradually add to dry ingredients. Beat 2 minutes, Beat in egg, peel and 3/4 cup flour. With mixer, beat 2 minutes. Add remianing flour, stir in. Cover, let rest 20 minutes. Grease 2 baking sheets. Place half the dough on well floured work surface, roll to 14"x12". Place on sheet. Spread 1/2 filling lenghtwise down center of the dough,. Starting about 3/4" for filling, cut 1" wide strips diagonally from filling to edges of dough. Alternately fold
opposite strips of dough at angles across filling. Fold ends over filling. Brush large piece of waxed paper with vegetable oil. Loosely cover sheet. Top with plastic wrap. Refrigerate 2 hours. Uncover, let stand at room temperatue 10 minutes. Preheat oven to 375 F. Combine rest of ingredeints for topping. Sprinkle over loaves. Bake 30-25 minutes until lightly

Herbie’s Crumb Cake was born with a passion for baking and love of a great man. This great man was my father named Herbie Collomb.
When I was a child, I was up for adoption for a number of years until Mom (Barbara) & Dad (Herbie) came along. Mom & Dad found me after looking through 100s of pictures of children that were available for adoption at that time. Dad said he picked me because of my smile.
During the 1970's, adoption was not an easy process. Mom & Dad fought with the justice system for 10 long years in order for me to obtain a permanent place their home. During all of this, Dad became my real father in every sense of the word. He taught me many things. Most of all, Dad taught me perseverance. This was evident by his long
fight for me with the Justice system. Other important things Dad taught me were patience, compassion, and how to give back to the community.
In 2004, Dad passed away leaving behind a legacy of family, friendship, & love. Today, I think Dad would be pretty proud of this little girl. The girl who he adopted that had the big smile; the girl who persevered to become a great baker; the girl who loves giving back, just like her dad did. This time, though, I give back by providing delicious crumb cake to all communities.
Two of Dad’s all-time passions were classic cars & crumb cake. This is the reason I use the truck logo on my crumb cake packages. It is one small way that I can honor his memory.

This is a taste test/review of the new Entenmann’s Little Bites Crumb Cakes. There are 5 pouches in the box. Each pouch has four mini cakes covered in brown sugar and cinnamon. Each pouch is 230 calories or 57 calories per cake. They were $2.99 at Target.

This is a mega buttery and moist Crumb Cake with EXTRA brown sugar cinnamon crumb topping. Yes, the crumb topping is just as thick as the cake layer! The topping is soft, not crunchy, and the cake is perfectly sweet. If you’re looking for a classic go-to crumb cake recipe, this one is for you. You’ll fall in love too.
Ingredients
For the Crumb Topping:
* 1¼ cups all-purpose flour divided (150g)
* ½ cup firmly packed light brown sugar (110g)
* ¼ cup granulated sugar (50g)
* 2 teaspoons ground cinnamon
* ½ teaspoon salt
* ½ cup unsalted butter melted (113g)
For the Cake:
* 1½ cups all-purpose flour (180g)
* ½ teaspoon baking powder
* ½ teaspoon baking soda
* ¼ teaspoon salt
* ½ cup unsalted butter softened (113g)
* ½ cup granulated sugar (100g)
* 1 large egg
* ⅓ cup sour cream
* ¼ cup milk (60mL)
* 2 teaspoons vanilla extract
* confectioners’ sugar
Instructions
* Preheat the oven to 325F. Butter an 8x8-inch square baking pan or spray with baking spray. Line with parchment paper.
For the Crumb Topping:
* In a large bowl, whisk together ¾ cup flour, sugars, cinnamon, and salt. Using a fork, stir in the melted butter until mostly combined but still crumbly. Stir in the remaining ¾ cup flour until the mixture is very crumbly and still has large pieces.
For the Cake:
* In a bowl, whisk together flour, baking powder, baking soda, and salt.
* In a large mixing bowl, combine the butter and sugar and beat on medium speed until light and fluffy, about 3 minutes. (Use the paddle attachment if using a stand mixer.) Add the egg and beat until combined. Scrape down the bowl. Add the sour cream, milk, and vanilla, and beat on medium-low speed until combined. (The mixture will look runny and curdled.)
* With the mixer on low speed, slowly add the flour mixture to the butter mixture. Beat just until all of the flour is incorporated, stopping to scrape down the bowl as needed. Transfer the batter to the prepared pan and spread it evenly. (Batter will be very thick.) Sprinkle the crumb topping all over the batter.
* Bake for 40 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. If the cake is browning heavily before 40 minutes, loosely cover with foil. Let the cake cool completely in the pan. Sprinkle with confectioners’ sugar before slicing and serving.
