APPLE PIE:
1/2 c Brown sugar
1/4 ts Nutmeg
1/2 ts Cinnamon
1/2 ts Salt
1 ts Grated lemon rind
Unbaked 9"pastry for 1 crust 6 x Apples; peel; core; chunk
1 tb Lemon juice
CRUMB TOP:
1/2 c Sugar
3/4 c Flour
1/2 ts Cinnamon
1 ds Salt
8 tb Cold butter
***All time favorite. Serve warm with java and remember to have that chunk of cheese on the side or perhaps a scoop of vanilla ice crm instead. Preheat oven 450. Mix sugar; nutmeg, cinnamon, salt, and lemon rind. Line a pie plate with pastry and fill with a few apple chunks; sprinkle on some of the sugar mixture and a bit of lemon juice. Add more apples, more sugar mixture, and lemon juice; continue until pie pan is full, making sure the top layer of apples is liberally covered with sugar and seasonings. Sprinkle top with crumb mixture. CRUMB TOPPING: Combine sugar, flour, cinnamon, and salt. Cut in butter by hand or in food processor until mixture is crumbly. Sprinkle on top of apple pie. Bake crumb-topped pie 15 mins, reduce heat to 350 for 30 mins, until crumbs are golden brown and apples sizzle. Serve warm with Cheddar Cheese or a scoop of vanilla ice cream. -----

Apple crisp is a simple dessert of apples topped with a crumbly, sweet pastry mixture, like a streusel, baked until brown and crisp. Isabel Ely Lord created the earliest written record of this recipe in 1924 in the Everybody's Cookbook. However, it didn't become popularized until WWII when pastry products like sugar, butter, and flour were rationed. The more elaborate apple pie was out, and the apple crisp was in.

• 1 cup flour 130 g

• 1 cup oats 100 g
• ½ tsp sea salt
• 1 ½ tsp cinnamon

• 4 granny smith apples
• 4 fuji apples 1000 grams total
• 3 tablespoons ap flour
• ½ cup brown sugar 100 grams

This apple crisp has browned butter in the crisp topping, giving it a beautiful nutty aroma that complements the apples perfectly.
Yield: 6-8 servings
Prep Time: 20 minutes
Cook time: 45 minutes
Ingredients
6 cups (900 g) apples (such as Gala, MacIntosh or other sweet, eating apple), peeled and sliced
¼ cup (60 mL) maple syrup
1 tsp (5 mL) vanilla extract
½ cup (115 g) unsalted butter
1 ¼ cups (115 g) regular rolled oats
1/3 cup (50 g) whole wheat flour
½ cup (100 g) packed light brown sugar
1 tsp (5 mL) ground cinnamon
pinch salt
Directions
1. Preheat the oven to 350 F (180 C).
2. Place the sliced apples in a 6-cup (1.5L) by volume baking dish (any shape). Stir in the maple syrup and vanilla to coat the apples.
3. Melt the butter in a small saucepot over medium high heat until it browns and takes on a nutty aroma (once the foam subsides, it should be done). Set aside.
4. Stir the oats, flour, brown sugar, cinnamon and salt in a mixing bowl. Add the browned butter and stir until blended. Spread this evenly over the apples and bake for about 45 minutes, until the apples yield easily when a paring knife is inserted in the centre of the crisp (the crisp should be bubbling at the edges.) Allow the crisp to cool for 15 minutes before serving.

Ingredients:
For the crust:
2¾ cups (250g) Rolled oats
1¾ cups (220g) Flour
3/4 cup (150g) Brown sugar
1/2 cup (100g) White sugar
1 teaspoon Cinnamon
1/2 teaspoon Salt
1 cup (230g) Butter, cold
For the filling:
5 apples
2 tablespoons (15g) flour
2-3 tablespoons sugar
1 teaspoon cinnamon
Directions:
1. Preheat oven to 350F (175C).
2. Make the crust: in a large bowl, mix oats, flour, brown sugar, white sugar, cinnamon and salt. Add cold, cubed butter and mix with your hands until crumbly. Reserve two cups of the mixture in the fridge for a later use.
3. Press the remaining crust mixture into a baking pan (13*9 inch). Press firmly.
4. Bake the crust for 15 minutes, then set aside.
5. Make the filling: peel the apples, then thinly slice. Arrange apple slices in a row on the cooled crust.
6. Sprinkle the apples with flour, sugar and cinnamon. Then, crumble the reserved crust mixture.
7. Bake for 35 minutes, until the crust is golden brown and the apples are tender.
8. Allow to cool, then cut into bars.
Notes:
• In the video you can see I’ve arranged apple slices in one row, but after trying it, I think it’s not enough, try layering two layers or more (5 apples should be enough).
