How To make Apple Carrot Muffins
1 1/4 cups Flour
whole wheat
1/3 cup Sorghum
1 cup Wheat bran
1 cup Soymilk
1 teaspoon Baking soda
1 teaspoon Vanilla
1 teaspoon Cinnamon
1/3 cup Carrots :
shredded
1/4 cup Oil
1/3 cup Apple -- finely chopped
Preheat the oven to 400. Combine flours, bran, baking soda and cinnamon. In another bowl, mix together oil, sorghum, soymilk and vanilla.
Combine wet and dry ingredients; mix well. Stir in carrots and apple. Fill greased and floured mufin tins 1/2 full, and bake for 25 minutes.
Makes 1 dozen muffins.

Apple Carrot Ginger Muffins
Ingredients
* 1 cup brown sugar
* 2 medium carrots, shredded about 1/2 cup
* 2 medium apples, cored and shredded about 1 cup
* 1 cup buttermilk
* 1/2 cup vegetable oil
* 3 eggs
* 2 cups all purpose flour
* 2 teaspoons baking powder
* 1 teaspoon baking soda
* 2 teaspoons freshly grated ginger (optional) OR use 1/2 teaspoon ground ginger
* 1 teaspoon ground cinnamon
* 1/2 teaspoon ground nutmeg
* 1/4 teaspoon ground cloves
* 1/2 teaspoon salt
Instructions
* Preheat your oven to 350 degrees Fahrenheit and prepare a 12-cup muffin tin with paper liners.
* Add the brown sugar, grated carrots, grated apples, buttermilk, oil, and eggs to a large bowl and whisk together to combine.
* Add the flour, baking soda, baking powder, ginger (if using), cinnamon, nutmeg, cloves, and salt to the bowl and combine with a wooden spoon or rubber spatula just until the flour disappears.
* Divide the batter evenly between the prepared muffin cups, filling them each about 2/3 full.
* Bake at 350 degrees Fahrenheit for about 17-18 minutes or until golden brown.

INGREDIENTS
• 100ml Sunflower Oil
• ½ tsp Vanilla Extract
• 2 Eggs
• 175 g All-Purpose Flour
• 165 g Brown Sugar
• 1 tsp Baking Powder
• ½ Baking Soda
• 180 g Grated Carrots
• 1 Grated Apple
• 35g Nuts
Step 1
In a bowl add 100ml sunflower oil and one and a half teaspoon of vanilla extract.
Separately crack 2 eggs and beat them a little bit. Once done add them in the bowl and stir.
Step 2
In a separate bowl add 175 g of flour, 165 g brown sugar, 1 teaspoon baking powder and half teaspoon of baking soda and then mix them up together.
Combine the liquid ingredients with the dry ingredients and stir until well combined.
Step 3
Grate 180 g of carrots and one apple then incorporate them in the mixture and continue stirring.
In a little plastic bag add 35 grams nuts and smash them easily with a rolling pin.
When done add them in the mixture and stir a little bit more.
Step 4
Pour the mixture in 12 shapes and add some extra smashed nuts on top.
Bake them for 30 minutes at 180°C.

15 g melted butter(or coconut oil) / 1 tbsp
1 apple
1 medium carrot
30 g chopped walnuts / 4 tbsp
18 x 13 cm / 7 x 5 inches baking tray
decorate with nuts
bake 35 minutes at 180°C/ 360°F

Carrot Apple Coconut Muffins written recipe
Ingredients
1 1/2 Cups All Purpose Flour
1 Tsp Baking Powder
1/2 Tsp Baking Soda
1/2 Tsp Salt
1/2 Cup unsweetened coconut flakes
2 Carrots, peeled & grated, about 1 cup
1 apple, peeled and grated, about 1/2 cup (gala, fuji, pink lady or red delicious are good choices)
2 large eggs
1 Tsp Vanilla Extract
1/3 Cup Milk*
1/4 Cup Vegetable or Canola Oil
1/2 Cup honey
Preparation
1. Preheat oven to 350 degrees.
2. Combine the first 7 ingredients in a bowl.
3. In a separate bowl, combine the remaining ingredients.
4. Slowly add the dry ingredients into the wet and stir to combine.
5. Place 1 tbsp of batter into greased mini muffin tins.
6. Bake for 15 minutes.
