How To make Low Fat Carrot Cake Muffins

bran flakes

cup
milk, skim
1 1/2
cup
carrots, shredded
1/3
cup
brown sugar, firmly packed
1
each
egg, slightly beaten
2
tablespoon
oil
1/3
cup
raisins
Directions:
Preheat oven to 400 degrees. Mix flour, baking powder, cinnamon and salt in large bowl. Mix cereal and milk in another bowl; let stand 3 minutes. Stir in carrots, sugar, egg and oil. Add to flour mixture; stir just until moistened (batter will be lumpy). Stir in raisins. Spoon batter into muffin pan which has been sprayed with vegetable cooking spray, filling each cup 2/3 full.
Bake 25 minutes or until golden brown. Serve warm.

Ingredients
Cake:
* 2 1/4 cups whole wheat flour (270 g)
* 3 teaspoons baking powder (*see note below)
* 1 teaspoon baking soda
* 3 teaspoons cinnamon
* 1/2 teaspoon nutmeg
* 1 teaspoon sea salt
* 1/2 cup applesauce (125 g)
* 1 cup oat milk (250 ml) or any type of milk
* 2 teaspoons vanilla
* 1/3 cup honey (100 g) or 1/2 cup sugar
* 1/2 cup melted coconut oil (110 g) or any vegetable oil
* 2 cups grated carrots (2,5 - 3 medium carrots)
* 1/2 cup raisins and chopped walnuts
Frosting
* 2 tablespoons honey (43 g)
* 1 1/2 cup low-fat cream cheese (350 g)
Instructions
1. Preheat the oven to 350°F and grease a 7x11 baking pan.
2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg and salt.
3. Pour into the bowl the applesauce, oat milk, vanilla, honey and oil.
4. Mix the mixture until just combined.
5. Fold in the carrots, raisins and walnuts.
6. Bake for 45 to 60 minutes or until a toothpick inserted comes out clean. Let cake cool completely before frosting!
7. Make the frosting: combine cream cheese and honey until very smooth, scraping down the sides occasionally.
8. Frost the cake and sprinkle with something.
9. Store frosted cake in the fridge.

A lot of you were asking a for a low calorie carrot cake so here's my version of it.
It's a 4'' cake and each slice has 30 calories (if divided into 4 pieces). You can double this recipe to make a 8'' cake and each slice would have 40 calories (if divided into 6 pieces)

Oat/All purpose flour: 4 tablespoons
Sweetener: 1.5 tablespoons
Brown sugar(optional): 1 teaspoon
Low fat almond milk: 1/4 cup
Unsweetened applesauce or melted butter: 1 tablespoon
Grated carrot: 3 tablespoons
Vanilla essence: A few drops

You can use this recipe to bake an entire cake or make muffins. I usually like to eat these in the morning for breakfast so I make it into muffins to make it easier to eat. In the morning it fills you up and gets your day going with all the healthy ingredients.

3/4 cup Whole Wheat Pastry Flour (Organic, Sifted)
1/2 cup All Purpose Flour (Sifted)
1 tsp Baking Soda
1/4 tsp Salt
1/2 tsp Ground Cinnamon
1/4 cup Canola Oil (Organic)
3/4 cup Firmly Packed Brown Sugar (Organic)

HEALTHY Carrot Muffins recipe | Healthier, low fat, low sugar (just one tablespoon sugar) BLW recipe
Back with a second 1 tablespoon sugar cake/muffin video! These carrot muffins are soft, fluffy, crumbly, aromatic with cinnamon and cardamon and appropriately satisfies a sweet craving with the raisins in them! Feel free to add more raisins and any other nuts you like. Great for the whole family including the little ones!
Ingredients:
2 eggs
1.5 tbsp brown sugar
a tsp vanilla
1 tsp cinnamon
1 tsp cardamon powder
1 tsp baking powder
1 tsp baking soda
sprinkle of salt
1/2 cup olive oil
1/2 cup whole wheat flour
1/2 cup white flour
2 cups grated carrots
1/3 cup raisins (or more if you like)
-Whip up the eggs till fluffy, add brown sugar. Whisk some more until fluffy and the sugar has dissolved. Add vanilla and turn on hand mixer, add oil in a steady stream and mix till blended.
-In another bowl add the flours, cinnamon, cardamon, baking powder, soda and salt and whisk together.
-Add the grated carrots and raisins to the egg mixture and mix till combined
-Add flour mixture to wet mixture and mix until just combined. Do not overmix.
-Bake in a lined muffin tray at 180C for 20-25 mins or until a toothpick comes out clean.
