How To make Carrot Apple Sauce Muffins
1 1/2 cups all-purpose flour
1 cup whole wheat flour
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon grated nutmeg
1 teaspoon ground cardamom
3 eggs
2/3 cup firmly packed light or dark brown sugar
2 teaspoons vanilla extract
1/3 cup vegetable oil
2 cups applesauce
3 cups grated carrots
1 cup raisins
Grated peel (no white attached) of 2 oranges
Preheat the oven to 350 degrees F. Lightly spray muffin tins with cooking spray containing flour.
In a large bowl, sift together the flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cardamom. In a medium bowl, combine the eggs, brown sugar, and vanilla, mixing well. Stir in the vegetable oil, applesauce, carrots, raisins, and orange peel. Add to the flour and mix just until incorporated. Pour into the prepared muffin tins and bake until a tester inserted comes out clean, about 20 minutes. Cool 10 minutes on a wire rack, then invert and cool completely.
Makes 18 large or 36 small muffins

Ingredients:
100 g rolled oats (1 cup)
pinch of salt
6 g baking powder ( 1 1/4 tsp)
1/2 teaspoon cinnamon
2 eggs (Replacement: 3 tablespoons water + 3 teaspoons baking powder + 2 teaspoon vegetable oil
50 g eritrytol/green sugar (4 tbsp)
1 tsp vanilla extract
25 g melted butter (1 3/4 tbsp)
1 big carrot (90g/3.2 oz)
50 g chopped walnuts(1/2 cup)
bake 20-25 minutes at 180°C/ 360°F

BAKED APPLE OATMEAL CUPS RECIPE
3 cups old-fashioned rolled oats
1 teaspoon baking powder
1/2 teaspoon cinnamon
1 cup organic buttermilk (you can sub any milk you prefer)
2 eggs, beaten
1/2 cup applesauce (I used cinnamon applesauce)
1 large apple, chopped (1 heaping cup)
1/4 cup raisins
Preheat oven to 350ºF. Spray a 12-count muffin pan with non-stick cooking spray or coat with coconut oil and set aside.
In a large bowl combine oats, baking powder, cinnamon, buttermilk, eggs, and applesauce. Mix together until everything is well incorporated.
Add in chopped apple and raisins and gently toss until they are evenly distributed throughout the batter.
Divide batter amongst all 12 muffin cups and pop in the oven for 25-30 minutes or until they have set through and are golden brown on top.
Cool and enjoy.
*I like to store these in an airtight container and keep them in the fridge. They will last a good week stored this way.

Easy Cinnamon Spiced Muffins with Applesauce | Gluten-Free & Vegan Options
Ultra fluffy, super soft, and full of cinnamon spice – these Applesauce Muffins are made without oil or butter making them healthy enough to eat for breakfast! You’ll taste the flavors of Fall with every bite of this spiced muffin recipe. They’re also super adaptable and can easily be made gluten-free, vegetarian, and even vegan.

INGREDIENTS
2 cups flour gluten-free 1-to-1 blend
½ cup coconut sugar
1 ½ tsp. baking soda
1 - 1 ½ tsp. apple pie spice to taste*
½ tsp. salt
1 cup applesauce unsweetened
⅓ cup pure maple syrup
2 eggs room temperature
1 tsp. vanilla
1 Tbsp. sugar optional
⅛ tsp. cinnamon optional
INSTRUCTIONS
Preheat oven to 350 °F.
Mix together flour, coconut sugar, baking soda, apple pie spice, and salt in a medium-sized bowl.
Whisk together applesauce, maple syrup, eggs, and vanilla in a separate large bowl.
Add dry ingredients to wet ingredients. Mix by hand until just combined.
Place muffin cup liners into 12 cavities of a regular-sized muffin tray. Spray each liner with non-stick cooking spray.
Evenly distribute the muffin batter into all 12 cups. They should end up being about ¾ full.
Whisk together cinnamon and sugar in a small bowl and sprinkle ¼ teaspoon over each of the muffins.
Bake muffins in preheated oven for 22-25 minutes, or until a toothpick when inserted in comes out clean.
Let cool to room temperature before serving. Enjoy!
RECIPE NOTES
Make your own Apple Pie Spice or substitute with 1 teaspoon cinnamon and ½ teaspoon nutmeg.
Use flax eggs or chia seed eggs if vegan or dairy-free.
