1 1/4 c Flour 3/4 c Creamota -(quick cooking -rolled oats) 2 ts Baking powder 1/4 ts Salt 3/4 c Milk 1 c Grated carrot 3/4 c Raisins 1/2 ts Cinnamon 1 Egg 3 tb Oil Mix flour, creamota, baking powder & salt. Stir in carrot, raisins & cinnamon. Beat egg, milk & oil. Make a well in centre of dry ingredients, pour in liquid. Mix lightly. 3/4 fill greased muffin pans & bake at 375oF for 15-20 mins. In this installment, the Geeky Gourmet gets ready for breakfast with a little dessert. Get ready for some muffin stuffin' with his oft-imitated, but never duplicated Glazed Carrot Raisin Muffins.
Carrot Muffins
Recipe: 3 cups Frankie's all purpose flour 1-1/2 cups granulated sugar ½ tsp. baking soda ½ tsp. baking powder ¼ tsp. salt 2 tbsp. ground cinnamon Mix together in a stand mixer until blended.
To this add: ¾ cup of veg. or canola oil ¾ cup of water 4 eggs 1 tsp. of vanilla Beat on high for at least 30-45 seconds.
To this add:
3 cups of grated carrots and 1 cup of raisins. Mix until combined.
Scoop into muffin paper lined muffin pans and bake at 350F for 30 minutes.
