Healthy Banana Carrot Muffins (One Bowl)
Delicious, moist and fluffy banana carrot muffins are really easy to make. Whip them up quick, in just 30 minutes, with one bowl! The perfect make ahead breakfast, snack or dessert. This healthier recipe is sweetened naturally with extra ripe bananas and agave nectar (zero refined sugar). We're also using whole wheat flour for a less processed, more nutrient dense treat. Whole wheat flour isn't gluten free, but you can sub a gluten free baking flour. Find more info on how to make this substitution in the post!

6 Types of Muffins with only One Batter - Without Oven - No Butter & no beater used
Welcome to MJ's Kitchen
Today I bring for you another exciting recipe of Muffins
I'll make one basic batter
then I'll make 6 different kinds of muffins from that
you can change the flavors to your choice
very easy recipe it is
no beater & no oven is used to make this recipe
with this quantity of batter, 12 muffins can be made
let's start making muffins
to make basic batter for muffins we need:
2 cup Flour,
1 cup Powdered Sugar,
2 tbsp Vanilla Essence,
½ cup Oil,
2 Eggs,
½ tsp Baking Soda,
1½ tsp Baking Powder,
¼ tsp Salt,
& to make butter milk we need:
1 Cup Milk,
& 1 tbsp Vinegar
Method:
First of all make butter milk by adding vinegar in milk.
Then mix all dry ingredients in a bowl
flour, sugar, salt, baking powder & baking soda.
Take another bowl & mix all the wet ingredients in it. Add oil, Eggs, vanilla essence & butter milk.
now mix the wet ingredients into dry ingredients
Basic batter for muffins is ready
grease the muffin tray with oil
pour batter in it
fill only half & keep the half empty
first muffin will be of Carrot & Raisins
using 1 tbsp grated carrot & 7~8 pieces of raisins.
Second will be Double Chocolate Chip
Add 1 tbsp Chocolate Chips & 1 tsp Cocoa Powder,
third muffin will be with Tutti Fruit,
add 1 tbsp Red & Green tutti fruit,
forth muffins will be with Banana & Walnuts
mashed half of the banana & 1 tbsp crushed walnuts
fifth muffin will be Almond muffins
add 1 tbsp chopped Almonds
sixth flavor will be with Apply & Cinnamon
add 1 tbsp Apple & ¼ tsp Cinnamon Powder
now mix these all.
tab the tray twice or more
put the tray on stand in a big pot
cover & let it bake on medium to low flame
for 25 to 30 minutes.

Carrot, Apple and raisin muffins - Cooking with Kids

Cooking with kids doesn't have to be complicated, stressful or impossible. My son is 3 and he loves to help me in the kitchen. I can hardly go in there without him following along to make sure he doesn't miss out. Give this recipe a try. Get your kids involved and have fun! Let me know how you go.

Ingredients:
1 carrot
2 ripe bananas
1 apple
100g (1/2 cup) sugar
1 egg
33g (1/4 cup) butter
150g (1 cup) flour
45g quick oats
1 tsp baking powder
1 tsp salt
1 tsp cinnamon (optional)
Handful of raisins
Instructions:
Preheat oven to 170°C (350°F). Prepare Muffin tin/molds. Peel and grate carrot. Peel and dice apple. Set aside. In a medium mixing bowl, mash bananas. Add carrots and mix to combine. Add sugar and mix. Add egg and mix. In a microwave safe bowl, melt butter. Add to mixture and mix to combine. Add in flour, oats, baking powder, and cinnamon (if using). Stir until the dry ingredients are just mixed in. Don’t over mix. Gently fold in apples and raisins. Spoon batter into tin/molds. Bake for 20-25 minutes until center is cooked (test with a toothpick or knife). Allow to cool before serving.
