Recipe here: Stephanie Jaworski of Joyofbaking.com demonstrates how to make a Tomato Spice Cake.
This is a recipe for a Tomato Spice Cake. Also known as a Tomato Soup Cake, a Mystery Cake, or a Surprise Cake. Of course, the mystery of surprise refers to the addition of a can of tomato soup to the cake batter. This cake was first made with canned tomatoes and was considered a cake you made in the winter. Later the recipe changed from using canned tomatoes to a can of tomato soup. I know it sounds a little weird, adding tomato soup to a cake batter. But when you think about it, it isn't so weird as tomatoes are a fruit and they are juicy sweet. While not absolutely necessary, I like to cover the top of the cake with a cream cheese frosting, as its tanginess pairs perfectly with the sweet and spicy flavor of the cake.

Cranberry Spice Layer Cake with Cream Cheese Frosting
Cranberry Spice Layer Cake has all the flavors of the holiday wrapped up into one cream cheese-frosted confection.
Fresh or frozen cranberries can be used for this recipe. If using frozen, thaw them before using in this recipe.

INGREDIENTS
Cranberry filling
2 1/2 cups fresh or frozen whole cranberries divided
1 cup granulated sugar
1 tablespoon orange zest from 1 orange
3 tablespoons freshly squeezed orange juice from 1 orange
2 tablespoons cornstarch
2 tablespoon cold water
2 tablespoons unsalted butter
Cake layers
1 cup unsalted butter at room temperature
2 cups granulated sugar
4 large eggs at room temperature
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon fine grain sea salt or table salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1 1/2 cups buttermilk at room temperature
1 teaspoon vanilla extract
Cream cheese frosting
16 oz. cream cheese at room temperature
1/2 cup unsalted butter at room temperature
8 cups confectioners’ sugar 2 lbs.
2 teaspoons vanilla extract
Décors
2 tablespoons clear corn syrup
2-3 tablespoons water
1 cup coarse crystal sugar
1/2 cup whole fresh cranberries
12 pieces candied orange peel about 1/4 cup
2 large stems fresh rosemary
INSTRUCTIONS
Cranberry filling
Chop 1/2 cup of the whole cranberries and set aside.
Place the remaining 2 cups of cranberries, the sugar, orange zest, and orange zest in a medium saucepan. In a separate small bowl stir together the cornstarch and water. Add the cornstarch mixture to the pan and stir.
Cook over medium heat until the cranberries begin to pop and the mixture bubbles (about 5-6 minutes). When the mixture is thick, shiny, and translucent, add the 1/2 cup chopped cranberries and the butter to the pan. Stir until the butter is melted. Let cool about 30 minutes, then transfer to a bowl. Cover the filing with plastic wrap touching the surface (see video) and refrigerate until set, 4 hours or overnight.
Cake layers
Preheat the oven to 350F. Coat three 8-inch round cake pans with flour-based baking spray (or grease and flour pans).
In the bowl of an electric mixer, beat the butter until creamy. Slowly add in the 2 cups of sugar while the mixer runs. When the mixture is light and fluffy, add the eggs 1 at a time.

Their bright orange color makes me instantly think of Fall. Both the cookie and the cream cheese filling are flavored with Pumpkin Pie Spice which is a combination of ground cinnamon, ground ginger, ground cloves, and freshly grated nutmeg. And I couldn't resist adding a little pumpkin puree to the filling.
