How To make Venison Picadillo
3/4 c Chopped onion
1 ts Chopped garlic
2 tb Olive oil
2 lb Venison shoulder or leg,
Ground 2 ts Red chili flakes
1 ts Dried oregano
1 ts Ground cumin
1 ts Ground coriander
1/2 ts Ground cloves
2 c Canned whole tomatoes,
Seeded and chopped 2 tb Red wine vinegar
2 tb Raisins
1/4 ts Salt
1/4 ts Black pepper
In a large pan,saute onion and garlic in the oil until onion is golden.Add ground venison,chili flakes,oregano,cumin,coriander and cloves.Cook,stirring occasionally,until venison is pink in color. Mix in tomatoes,vinegar,raisins,salt and pepper.Cook over low flame until liquid is reduced by half.Adjust seasonings and serve with tortillas and fresh salsa.Makes 6 to 8 servings.

Poor Man's Green Chile Stew
Ingredients:
5 medium red potatoes, chopped into 1 in. pieces
1 lb ground beef
3 tbsp flour (you can use a cornstarch slurry instead, if you’d like)
5 cups water, or beef broth
1 cup chopped green chile
1 tsp kosher salt
1 garlic clove, minced or pressed
Directions:
Peel and chop 5 medium red potatoes and set aside. Cook 1 lb ground beef in a large saucepan until completely browned. Add 3 tbsp flour and cook for another minute. Next add the potatoes. Cook until everything is combined. Now add 5 cups of water/broth and 1 cup chopped green chile. Bring up to a boil. Once boiling, add 1 tsp kosher salt and 1 garlic clove. Mix and turn the heat to low so the stew can cook at a low boil. After about 20 minutes, or until the potatoes are soft, the stew is ready. Enjoy!
