Picadillo

Ingredients:
¼ cup oil
1 onion
1 large chili pepper
1 clove garlic
½ lb ground beef
½ of ground pork
¼ ground ham
¾ cup of capers or green olives
1 tsp salt
1 tsp accent
1/8 tsp pepper
½ cup tomato sauce
¼ dry wine
Preparation
Heat the oil and sauté the minced onion, the crushed garlic and the minced chili pepper in it. Add the meats and ham and cook it all for a few minutes stirring so it doesn't stick. Add the rest of the ingredients and let it cook over medium heat for about twenty minutes. Makes 6 servings.

This week we’re bringing it back to our Miami roots with a healthy twist: Cuban Picadillo Lettuce Wraps to keep it clean con sabor!

Picadillo is a personal favorite of what we like to call our Peasant Dishes. Those inexpensive, traditional foods that allow you to feed your family with not a lot of $$. The word picadillo comes from the word picado, meaning “chopped up/minced” because this dish is made with minced meat. It’s the filling for empanadas, rellena de papa, acapurrias, pastelón and canoas de plátano: it’s the starting point of any great party. Ground beef is sautéed with onion, garlic, bell peppers, tomato, capers, olives and lots of spices!
This time, we’re going to lighten it up by serving them with lettuce wraps, for a low-carb/keto spin on this classic dish.
Here is our ingredients list so you can cook along with us ????????????:
▫️1 lb ground beef
▫️2 TBS olive oil
▫️1 yellow onion
▫️1 red bell pepper
▫️8 cloves garlic
▫️1 tomato
▫️4 oz tomato sauce
▫️1/2 TBS Adobo
▫️1 TBS Sazón
▫️3 bay leaves
▫️1 tsp ground cinnamon
▫️1/2 tsp ground cloves
▫️1/2 ground nutmeg (freshly grated if possible)
▫️2 tsp ground cumin
2 tsp dried oregano
▫️2 TBS red wine vinegar
▫️1/4 cup Manzanilla olives
▫️2 TBS capers
▫️1/2 cup raisins (optional)
▫️1 head butter lettuce with large leaves
Cilantro, for garnish

Recipe:
3 tablespoons or vegetable oil
2cups diced white onion
2 teaspoons kosher salt
3 large garlic cloves
2 ¼ pounds of ripe tomatoes cored and chopped
2 dried bay leaves
½ teaspoon of dried thyme
1 tsp of red pepper flakes (Optional)
1 teaspoon sugar
2 teaspoons apple cider vinegar
1 pound of lean ground beef
1 pound of lean ground pork
black pepper
½ generous cup of pimento stuffed olives sliced or halved
¼ cup of raisins
3 tablespoons of pickled jalapenos including liquid
1 tablespoon of drained capers
¼ cup of slivered almonds
¼ cup cilantro
2 tablespoons of chopped flat leaf parsley
2 tablespoons of mint leaves
Heat oil in pan and add onions and a generous pinch of salt ,then cook stirring occasionally until onions are translucent about 5 minutes . Add garlic,cook for a minute then add tomatoes ,bay leaves,thyme,sugar,vinegar and 1 teaspoon of the salt. Let the mixture come to a boil,then lower the heat to maintain a vigorous simmer and cook, stirring occasionally until all the liquid has evaporated about 45 minutes. Transfer to bowl.
Wipe out the pot, set it over high heat, and when it's hot, add the ground beef and pork without any oil. Season with freshly ground black pepper and 3⁄4 teaspoon kosher salt. Cook, stirring and breaking up the meat, until it is cooked through, then add the olives, raisins, pickled jalapeños, and capers. Cook until the liquid from the meat has evaporated, about 5 minutes. Add the tomato mixture and lower the heat to medium. Cover and cook until the flavors have melded, about 5 minutes, then stir in the almonds and herbs.
