NANA'S PICADILLO RECIPE INGREDIENTS:
- 1 pound ground beef (can be kosher)
- 1 cup of Uncle Ben's Instant Rice
- 1 onion
- 1 large green pepper
- 1 eight ounce can of tomato sauce
- 1 eight ounce jar of sweet red peppers
- 1 eight ounce can of peas
- 1 small jar of slices olives (just a few spoonfuls)
- 1 small jar of capers (just a few spoonfuls, also)
- some dry wine
- oil (Goya or any spanish oil works great)
- some salt, oregano, GARLIC POWDER (or diced fresh garlic, if you're fancy), & italian seasoning
SERVES: ABOUT 4 - 6 (depending on how hungry you are)

PICADILLO is a traditional dish in many Latin American countries and the Philippines. It is made with ground meat (most commonly beef), tomatoes (tomato sauce may be used as a substitute), and also raisins, olives, and other ingredients that vary by region. It is often served with rice (hence it is commonly known in the Philippines as arroz a la cubana, Cuban-style rice) or used as a filling in dishes such as tacos, savory pastries or croquettes. The name comes from the Spanish word picar, meaning to mince.
Picadillo can be eaten alone or incorporated into other dishes, like tacos, empanadas, pastelón, chiles en nogada, or alcapurrias.
In the Philippines, picadillo is a soupy dish traditionally made with ground beef and either potatoes or chayote. There are also drier versions of the dish. It is also called giniling. Cubans call picadillo arroz a la cubana. In Cuba, arroz a la cubana and picadillo are understood as separate dishes instead of the same, with the former being rice cooked in tomato sauce and served with egg and plantain. The Philippine version is similar to normal Latino picadillo usually made with raisins, tomato sauce and diced potatoes added, but without green olives and capers, and is often served with white rice, fried plantains (maduros in Spanish, saging na saba in Filipino) on the side, and a fried egg on top. For The Sofrito
▢¼ cup extra virgin olive oil
▢1 medium red onion diced
▢1 cubanelle pepper seeded, deveined and diced
▢4 garlic cloves peeled and chopped
▢12 oz can no-sodium diced tomatoes
▢1 cup fresh herbs medley basil, oregano, parsley, etc.
▢Salt and black pepper to taste
For the picadillo
▢2 tablespoon olive oil
▢1 medium yellow onion finely chopped
▢1 medium bell pepper cored and seeded, finely chopped
▢2 tablespoon tomato paste
▢4 cloves garlic finely chopped
▢2 teaspoon ground cumin
▢2 teaspoon smoked sweet paprika
▢2 teaspoon dried oregano
▢½ tablespoon Kosher salt
▢½ tablespoon ground black pepper
▢2 bay leaves
▢½ cup dry white cooking wine
▢1 ½ pounds ground beef
▢½ cup pimento stuffed olives
▢2 tablespoon olives brine from the jar
▢2 tablespoon capers

The Best Picadillo Stuffed Potato Balls, Las Mejores Papas Rellenas con Picadillo
These are the best picadillo stuffed potato balls ever. The crispy exterior made by the Panko bread crumbs, the mash potato base with NO BINDERS just pure potato and who can forget the meaty filling of the beef picadillo. Gold Potato Mashed
Ingredients
4-5 GOLD Potatoes
Salt and pepper to taste
Peel potatoes, cut to even sizes and boil them until cooked.
Drain the water from the pot the potatoes were cooking in. Place the potatoes in the pot onto the stove to remove any excess moisture from the potatoes.
Once the potatoes have dried you can mash them until smooth.
Season to taste only using dry seasonings.
Let cool before handling.
Beef Picadillo
Ingredients
1 lb ground beef
2 tbsp Olive Oil
1 Medium Yellow Onion diced
6 cloves minced garlic
1 Whole Roasted Red Pepper
1 tbsp Cumin
1/2 cup whole green olives with pimentos
1/4 cup of capers
1/3 cup tomato sauce
Salt and pepper to taste
Combine all ingredients. Stir constantly to avoid clumpy meat. Cook for 35 minutes or until done.
Refrigerate picadillo until firm to the touch, preferably for at least 4 hours.
The firmer the meat mixture the easier it will be to form into a ball.
Egg Wash
Ingredients
1 egg
3 tbsp all purpose flour
2 tbsp milk
Potato Ball
Take a scoop of the potato mash and flatten it with the palm of your hand.
Place the meat ball mixture in the center of the potato mash and wrap the potato mash covering the meat ball mixture.
Take the stuffed potato ball and dip it into the egg wash, coating evenly.
Drain any excess egg wash from the stuffed potato ball and place it into the Panko Bread crumbs, coat evenly.
Cook
Fry the potato balls until golden brown.
