1 lb Stale cake (pound, angel) 3 tb Jam 1 x Measure whisky 5 fl Sherry 1 pt Warm custard 10 fl Whipped cream Break up the cake or cakes and gently mix the jam through -- the mixture does not have to be completely even. Place in a glass bowl. Mix sherry and whisky and sprinkle over cake. Press down lightly. Pour custard over the cake, and chill. Then spoon whipped cream over top and serve.

Tipsy Cake
An old school cake very popular back in the day in Dublin made up of leftover cake and sponges with rum and jam topped with fondant icing and chocolate feathering
Recipe
1kg of Leftover sponge or cake 120g of Raspberry Jam 60g of Butter 100 ml of Rum (add more or less if you prefer)
The tin I used was 20 x 30 x 5 cm. I made a 3/4 portion of the Sponge Cake Recipe below. If the sponge is not level after it is baked trim it a bit.
If you don’t want the hassle of making the fondant icing you can make a substitute icing using icing sugar. Just add water or milk until you reach a medium thick consistency
I used some dark chocolate 50% cacao for the chocolate feathering. Melt it in the microwave with 30 second intervals
For a chocolate sponge just replace 60g of flour with cocoa powder

Traditional Scottish Christmas Trifle Recipe Typsy Laird recipe Scotland
Scotch broth, Christmas Turkey and all the trimmings and just when you thought it couldn't get any better Granny pulls out her traditional Scottish trifle from the fridge! Delicious!
We love a good old fashioned traditional Scottish Trifle just the way my mum would make it and its so easy to make too! Starting with the sponge and jam layer we then add in some tinned fruit, jelly and custard and top the whole thing off with whipped cream, sprinkles and cherries.
A traditional Scots trifle was a rather boozey affair indeed and was traditionally known as a Typsy Laird. The older recipes that I have found didn't contain any jelly and fruit which must have been a later addition. I haven't added booze to this trifle but you can add booze in if you wish and the instructions are in the video above on how to do so and in the recipe in the blog post.
