Zelia ezell 1 c Butter
2 c Sugar
4 Eggs; separated
1 c Pecans; chopped
1/2 c Bitter chocolate; melted
1 ts Cloves
1 ts Nutmeg
1 ts Cinnamon
1 c Mashed white potatoes
2 c Flour; sifted
1/2 c Milk
1 ts Vanilla
1 c Raisins
2 ts Baking powder
Cream butter and sugar. Add beaten egg yolks, pecans, chocolate, and spices. Add potatoes and flour. Then add milk and beaten egg whites, vanilla, raisins and baking powder. Bake in a bundt pan. Instructions:

Irish Potato Cakes
Ingredients:
• I Ib (450g/15 oz) Potatoes, (Roosters or any potato will do).
• ½ cup + 3 tbsp (110g/4 oz) Self Raising Flour/All Purpose Flour
• ¼ cup (55g/2 oz) Salted/Unsalted Butter, Melted
• Good pinch of salt
Method:
1. Peel and dice the potatoes.
2. Place in a saucepan and cover with cold water.
3. Bring to a boil and simmer until soft before draining the water off them.
4. Allow to cool slightly before adding melted butter and salt, mash until smooth.
5. Add in the flour and mix until it comes together into a round ball.
6. Turn out onto a lightly floured area and gently fold over until smooth.
7. Divide into two equal portions and form each into a ball.
8. Roll one ball out to about 1/3″ thick, then cut into quarters.
9. Repeat with the second measure of dough.
10. Heat a pan to medium-high. When hot, begin cooking the Irish potato bread (do not use oil or butter.)
11. When brown on both sides, place on a clean tea towel and cover.
