How To make Irish Potato Cake
Zelia ezell 1 c Butter
2 c Sugar
4 Eggs; separated
1 c Pecans; chopped
1/2 c Bitter chocolate; melted
1 ts Cloves
1 ts Nutmeg
1 ts Cinnamon
1 c Mashed white potatoes
2 c Flour; sifted
1/2 c Milk
1 ts Vanilla
1 c Raisins
2 ts Baking powder
Cream butter and sugar. Add beaten egg yolks, pecans, chocolate, and spices. Add potatoes and flour. Then add milk and beaten egg whites, vanilla, raisins and baking powder. Bake in a bundt pan. Boxty Irish Potato Pancakes (great recipe for leftover mashed potatoes)
Boxty is a traditional Irish potato pancake that originates from County Mayo in Ireland. I understand many cultures have their own version of potato pancakes (I know there are at least three different versions of Korean potato pancakes I can think of). Boxty tastes like a hybrid of potato pancakes as we know here in the US and hash browns we also are accustomed to here in the States. It's made with a combination of raw grated potatoes and cooked mashed potatoes. Boxty is typically served with butter, but my kids love to eat them with sour cream.

I've never had such delicious potato cake! Easy and Cheap Mashed Potatoes Recipe
Ingredients:
3 Potatoes (420g)
¼cup Parmesan cheese
1 Green onion
Salt and black pepper
2tbsp Unsalted butter
2 eggs
½cup All purpose flour
1/3cup Bread crumbs
Vegetable oil
Recipe:
3 potatoes
Dice the potatoes
Add the potatoes in a pot
600ml water
A pinch of salt
Cook for 15 minutes on medium-high heat
After 15 minutes
Drain the water after 15 minutes
Add 1tbsp unsalted butter
Salt and black pepper
Mash the potatoes
1 green onion
Add the chopped green onion to the bowl
¼cup parmesan cheese
Mix well
Refrigerate for at least half an hour
1/3cup All purpose flour
2 eggs
½cup bread crumbs
Shape the potato into small flattened balls
Repeat
Coat with flour, egg, and then breadcrumbs
Repeat
Medium heat
Vegetable oil
Fry for 3 minutes
Flip over and fry for another 2 minutes
Done!

Irish Potato Bread/Farls, Tattie Griddle Scones or English Potato Cakes? Recipe and controversy!
Now, far be it from me to commandeer the food culture of another country but I hereby claim potato farls, or tattie scones, for the Queen of England - and they will now be officially forever known as potato cakes. I'm doing this of course due to my massive sense of entitlement as an Englishman as I hold on to the idea that we are still somehow, some kind of major world power.
This is not delusional thinking in any way. But you would have to be deluded to believe that this simple griddle scone isn't an absolutely cracking recipe. So simple and yet so satisfying. So don't worry about its origins. Just make it and then eat it with no sense or admission of guilt.

Potato farls or tattie scones or potato cakes full recipe
400g cooked potato
80g all purpose flour
A third of a teaspoon of salt
50g melted butter
Cook on each side in a preheated, lightly floured pan for 5 minutes per side.

Mix well and drop by spoonful into heated pan. Fry until golden brown over medium heat. Makes 17.
