One pot Sundried tomato pasta ????

I know one pot pastas are not traditional (I am part Italian okay) but sometimes you just want something easy.
INGREDIENTS
This makes 3-4 servings
1 shallot - minced
4 cloves garlic - minced
1 ~80z jar sundried tomatoes in olive oil
2 1/2 cups water
1 cup coconut milk* (see notes for subs)
1/4 cup nutritional yeast
1 tbsp miso or soy sauce
1 cup parsley or basil - finely chopped (from 1 bunch)
pinch red pepper flakes
1-2 tsp salt
black pepper to taste
1 box wheat or brown rice pasta (I don't suggest using other gluten free pasta)
INSTRUCTIONS
Add shallots and garlic to a deep pan or pot with a splash of oil over medium heat. Cook for 3 minutes.
Add in sundried tomatoes along with the oil they came in into the pan. Cook for 4 more minutes.
Add all remaining ingredients to the pan and bring to a boil. Cook for 8-12 minutes, stirring frequently until pasta is al dente. If your pasta dries out while cooking add in water 1/2 cup at a time.
Let pasta cool and serve.
NOTES
*I also have made this pasta with 1 cup cashew cream Blend 3/4 cup cashews with 1 cup water in a high speed blender until smooth and creamy. If you don't have a high speed blender you may need to soak your cashews for 2 hours.

This Italian Style Pasta Salad with Artichokes and Tomatoes is a super quick and easy pasta salad recipe that takes just 20 minutes to make.

Ingredients
Salad:
▢2 tsp sea salt
▢8 oz (226g) short-cut pasta of choice
▢6 oz (170g) Italian salami - chopped
▢1 14-ounce (396g) jar marinated artichoke halves - drained and chopped
▢8 oz (226g) fresh mozzarella pearls - drained
▢1/4 cup (25g) Parmesan Cheese - finely grated
▢1/2 cup (90g) black olives - pitted and sliced diagonally
▢1/2 cup (90g) green olives - pitted and sliced diagonally
▢10 oz (283g) cherry tomatoes - halved
▢1/2 medium red onion - finely diced
▢1/3 cup parsley - finely chopped
Italian dressing:
▢3 tbsp (45ml) white wine vinegar
▢1/4 cup (60ml) extra virgin olive oil
▢3 tbsp (45ml) mayonnaise
▢2 tsp Italian seasoning mix
▢1 tbsp raw honey
▢1 garlic clove - finely grated or pressed
▢Sea salt and ground pepper - or to taste
Instructions
1. Fill a large pot with water and add 2 teaspoons of sea salt. Bring to a boil over high.
2. Once bubbling, carefully add in the pasta and cook according to package instructions.
3. Meanwhile, in a small jar, add all the dressing ingredients and shake vigorously to emulsify.
4. Chop all the ingredients for the salad.
5. Once the pasta is cooked to al dente, drain and set aside in a large bowl. Allow it to cool for a few minutes.
6. Add the remaining prepped ingredients to the bowl with the pasta.
7. Drizzle with the dressing.
8. Toss to combine and serve!

Expert Tips
Be sure to only cook the pasta to al-dente, which usually means 1-2 minutes less than the time on the package. Also, if your pasta noodles tend to stick together, you may want to add a tablespoon of oil to the cooking water.
When it comes to cutting the artichokes, olives, and tomatoes, I recommend cutting some into very small pieces and others into larger pieces. The tiny pieces will mix up very well and infuse the dish with flavor, and the bigger ones will give the salad more texture.

If you ask me, this makes the perfect pasta salad for meal prep. That’s because it doesn’t include any greens that get mushy. So go ahead and double or triple the recipe so you can enjoy it all week long. Then simply store the salad in air-tight containers in the fridge for up to 5 days.
However, I do not recommend freezing the salad. That’s because cooked pasta and cheese will lose their nice texture after freezing and defrosting.

Creamy Sundried Tomato Bluehouse Salmon Pasta
Ingredients:
- 1 tbsp butter
- 3 Bluehouse salmon fillets
- Salt
- Pepper
- 2 tbsp sun-dried tomato oil
- 3 large garlic cloves minced
- ½ yellow onion minced
- 3-4 oz sun-dried tomatoes
- ¼ tsp red pepper flakes
- ¼ tsp paprika
- ½ tsp italian seasoning
- ½ cup vegetable stock
- 1 cup half and half
- Pasta (bowtie or your choice)
- 1 tbsp Parmesan
Steps:
1. Add butter to a pan
2. Place 3 Bluehouse salmon fillets on pan
3. Add salt and pepper
4. Cook until done (flip halfway through)
5. On a separate pan, pour sun-dried tomato oil
6. Add garlic cloves, yellow onion, sun-dried tomatoes, red pepper flakes, paprika, and italian seasoning
7. Mix and add vegetable stock
8. Let simmer for 5 minutes and add half and half to the mix
9. Add pasta and stir well
10. Add parmesan
11. Serve with cooked salmon filets and enjoy!
