How To make Penne with Sun Dried Tomatoes & Chicken
1/4 c Sun-dried tomatoes, not
-packed in oil 6 oz Boneless, skinless chicken
-breast 1/4 c Dry white wine
1 tb Italian seasoning
3 tb Chopped shallot (one large
-shallot) 1 1/4 c Chopped fresh portabello
-mushrooms (2 smallish -mushrooms) 1/2 c Fresh peas or thawed frozen
-peas 8 oz Dried penne
Light vegetable-oil cooking -spray 5 Garlic cloves, peeled and
-minced 1 tb Flour
12 oz Evaporated skim milk
1/8 ts Ground nutmeg
1/8 ts Crushed red pepper flakes
1/2 c Chopped fresh basil
1/4 ts Salt, optional
5 md Black olives, thinly sliced,
-for garnish
Preheat oven to 350 degrees. Put the sun-dried tomatoes in a bowl, add 1/2 cup boiling water and set the bowl aside for the tomatoes to reconstitute. Fill a large pot with water, and bring it to a boil. Combine the chicken and the wine in a shallow baking dish. Sprinkle the italian seasoning on top. Bake for 15-20 mins, until the meat is no longer pink and the juices run clear. Remove and shred the chicken, reserving the cooking juices. Drain the sun-dried tomatoes and slice them thin. Pour the reserved cooking juices from the chicken into a saut

In this week's episode of Recipe on the Back, I'm testing out the Penne with Chicken and Sun-Dried Tomatoes recipe from the back of a box of pasta that I've never heard of before. It's a wild ride!

Creamy Tuscan Chicken Pasta ????
2lbs Chicken breast
2 Tbsp flour
2 tsp garlic powder
2 tsp paprika
2 tsp chili powder
1 tsp onion powder
Salt to taste
Brown on both sides and finish in the oven for 10-15 minutes at 350F (depends on thickness)
8oz Pasta
1/2 onion & bell pepper
5 sun dried tomatoes
5 cloves garlic
2 Tbsp tomato paste
1/4 cup stock
1/2 cup heavy cream
1-2 oz Parmesan or pecorino Romano
1/2 cup cherry tomatoes
2-4 oz spinach
Chicken Penne Pasta with Sundried Tomatoes
2 tsp garlic
4 oz sundried tomatoes
2Tbsp olive oil
1tsp Hungarian paprika
3 chicken breast( sliced or cut up )My family prefer it cut up.
salt
pepper
3/4 c heavy cream
1/4 c milk
1 1/4 c parmesan cheese(or cheese of your liking)
8 oz penne pasta
1 Tbsp basil
1/2 tsp red pepper flakes
In large skillet sauté garlic and sundried tomatoes in olive oil until garlic is fragrant and tomatoes are slightly darkened. Season chicken breast with salt, pepper and paprika. Add to the garlic and tomatoes and cook until done. In the video I cook the chicken separate because my daughter was eating it and she likes the chicken cooked separate. The girl is crazy but we love her:) Take out chicken and put it aside. Add the milk and heavy cream to the pan and cook until it coats the back of a spoon. Add your cheese and stir until melted. Add the basil 1 tsp paprika and red pepper flakes. Add chicken. Season with salt to your taste. Cook pasta according to directions. Drain pasta and mix in the chicken and sauce and enjoy!

Creamy Garlic Parmesan Pasta and Chicken with Sun-dried Tomatoes
This easy creamy garlic parmesan pasta dinner with chicken and sun-dried tomatoes is so good and comforting, it makes an easy delicious weekend dinner.
INGREDINTS
( I forgot to mention this in the video; The cooking time for chicken may be longer depending on the thickness of your chicken or the type of pan you are using. So make sure you check with a meat thermometer for internal temperature of 165F, that's the perfect temperature for fully cooked chicken)
1 lb chicken breast tenderloins
1/2 salt and 1/4 black pepper
1/2 tsp smoked paprika
1/2 tsp dried thyme
olive oil (use as much as needed to cook chicken)
8 oz Penne Pasta ( i cooked my pasta in tsp salted water. Don't over salt the water )
2 Tbs butter
1 small onion, minced
3 cloves garlic, minced
1/3 cup sun-dried tomatoes, oil drained and chopped
1/4 tsp red pepper flakes
1 cup half and half
1 cup grated parmesan cheese
1 chicken bouillon cube
1/2 cup pasta water
fresh parsley

Ingredients -
Chicken & Seasoning -
4 - Small Chicken Breasts or 2 Large, Butterflied
1 Tbsp (20ml) - Unrefined Olive Oil
1 tsp (3g) - Onion Powder
1 tsp (3g) - Garlic Powder
1/2 tsp (1.5g) - Paprika
Seasoning To Taste
Tuscan Sauce -
1 Tbsp (14g) - Clarified Butter or Regular Unsalted Butter
1 - Brown (Yellow) Onion, Diced
6 - Garlic Cloves, Minced
1 Tbsp (35g) - Tomato Paste
100g (3.5oz) - Sun-Dried Tomatoes, Roughly Chopped
1 tsp (1g) - Dried Oregano
1/2 tsp (1.5g) - Paprika
100ml (100g) - White Wine or Chicken Stock
180ml (3/4 Cup) - Chicken Stock
400ml (410g) - Thickened Cream (Heavy Cream)
60g (2.1oz) - Parmesan Cheese, Freshly Grated
10g (0.3oz) - Basil, Roughly Chopped
120g (4.2oz) - Baby Spinach
Seasoning To Taste
Notes -
If you cant consume alcohol, substitute the wine for chicken stock and reduce it following the original recipe instructions then add in more chicken stock as per the recipe.
