Quick & Easy Strawberry Shortcake for a Crowd | F&W Cooks | Food & Wine

What's better than individual biscuits stuffed with strawberries and whipped cream? Well, if you're asking cookbook author Ben Mims, it's a version that still delivers a gorgeous dessert and serves the same amount of people but is much simpler to make. It doesn't get much easier than strawberry shortcake, but this family-style version he created definitely makes it foolproof. Instead of punching out all those small cakes, the dough is pressed into a pan and baked as one giant cake, which is much quicker and less stress-inducing, especially when you want an effortless dessert for a weeknight that truly takes no time at all.

오늘은 부드러운 바닐라 스펀지케이크에
달콤하고 향긋한 딸기가 한가득 들어간~~
딸기 케이크를 만들어 보겠습니다.

우리는~~
항상 멋진 케이크를 만들고 싶지만..
우리의 풀리지 않는 숙제....
아이싱~~!!!

동영상도 많이 보고
이론도 다 아는데...
우리 몸은 말을 듣지 않죠..
남이 하는 베이킹은 세상 쉬운데...
왜~~?
난 안 되는지...????

항상 중요한 날이 오면..
우린 망설입니다..
케이크를 살지..만들지...
아이싱 잘 못해도
멋진 케이크 만들 수 있도록 해 드릴게요~????

*재료/ ingredients

( 18cm *18cm *7cm 케이크 몰드.. 완성 16cm. 사각형 . )

● 바닐라 제누와즈 (스펀지 케이크)
달걀 310g ( 5~6개 )
설탕 150g
꿀 38g
우유 60g
박력분 187g
무염버터 60g
소금 2g
바닐라 익스트랙 7.5ml (1/2TSP)

*화이트 가나슈 몽떼 생크림
화이트 초콜릿 120g
따듯한 생크림 120g
차가운 생크림 400g
연유 20g
설탕 35g
키르슈 5g( choice)

딸기 800~900g

* 데코레이션용 데이지 꽃장식 만들기


* 시럽
설탕 35 g
물 50g
키르쉬 2.5g (1/2tsp)

ㅡㅡㅡ 만드는 방법 ㅡㅡ
물과 설탕을 계량하여
전자레인지로 설탕을 녹여 주세요..
키르슈를 넣고 섞어 주세요.

** 사전준비
1. 모든 재료를 실온에 준비합니다.
2. 가루류는 체쳐 줍니다.
3. 우유와 버터를 따듯하게 준비합니다.
4. 오븐을 175도로 예열합니다.
5. 틀에 유산지를 깔아 주세요.

종이가 틀 사이즈보다.. 미세하게 커서.
꽉 끼워 넣는 걸 보실 수 있을거에요..
틀 종이를 준비하실때..
이런 경우는 안쪽을 표시하는 게 아닌.
틀 바깥쪽을 표시해서 끼워 넣으시면..
반죽이 삐져 나오지 않는답니다~..

**만드는 방법
1. 달걀에 설탕,소금,꿀을 넣고 중탕으로 40~42도까지 올려 주세요.
2. 바닐라 익스트랙을 넣어 주세요.
3. 고속으로 휘핑하여 색이 아이보리로 변하면서 풍성한 볼륨이 생길때까지 휘핑합니다.
-- 리본이 그려지고 3초 정도 후에 없어지는 정도까지 휘핑해 주세요.
-- 저단으로 기공정리 해 주세요.
4. 40~45도 사이에 우유를 넣어 주세요.
--- 우유를 먼저 넣으면 반죽의 유동성이 좋아져서 가루를 더 쉽게 섞을 수 있어요.
5. 가루를 두 번에 나눠서 섞어 주세요.
6. 55~60도까지 데운 버터에 반죽의 일부를 덜어내서
섞어주어 텍스춰를 맞춰 주세요.
7. 신속하고 매끄럽게 섞어 주세요.
8.팬닝후에 꼬치로 기포를 다시 정리해 주고.
9. 탕~!!쳐 줍니다.

내려칠 때....
(오븐에 들어가기전과 나온후..영상~~^^)
바닥팬과 무스링을 꽉 잡고 칩니다~^^
그렇지 않으면 반죽이 새어나와요..
그리고 한번 새어 나온 반죽은..
응집력 때문에..
그 틈으로 완전히 구워지기전까지 조금씩 새어 나올거에요..
그러니 밑이 없는 무스링을 이용하시는 분들은 내리치는 동작에서 주의해 주세요~~

10. 175도로 예열한 오븐에서 165도로 33~35분 구워 주세요.
11. 가운데를 손바닥으로 살짝 눌러보아 물렁하지 않고 탄탄하면 오븐에서 꺼내세요.
12. 오븐에서 나오자마자 탕~! 쳐서 수증기를 빼 주고, 뒤집어서 식힙니다.
13. 3장으로 슬라이스 해 줍니다.
14. 딸기를 손질해 주세요.
15. 크림을 만들어 주세요.
16. 녹인 초콜릿과 뜨거운 생크림을 섞어 매끈한 상태에서 30~35도 정도로 식으면..
17. 차가운 생크림을 부어서 얼음볼 위에서 휘핑합니다.
18. 영상처럼 몽따주 해 주세요.

--- 화이트 가나슈 몽떼 대신에 생크림을 사용하셔도 좋습니다)
