If you’re looking for a strawberry cake that is bursting with fresh strawberry flavour, then this recipe is it! Super soft strawberry cake layers are sandwiched between a strawberry cream cheese buttercream and fresh strawberry filling – YUM!
HOMEMADE CAKE RELEASE:
INGREDIENTS:
Strawberry Filling/Reduction
▢3 cups (600 g) fresh strawberries - hulled and halved
▢¾ cup (150 g) white granulated sugar - see note 5 on blog post if you have very sweet strawberries
▢1 tbsp lemon zest - about the zest of 1 lemon
▢¼ cup (60 g) fresh lemon juice
▢3 tbsp (22 g) cornstarch - also known as cornflour
▢2 tbsp water
Strawberry Cake
▢2⅓ cups (300 g) flour - regular all purpose (see note 1 on blog post if you want to use cake flour)
▢¼ cup (25 g) cornstarch - also known as cornflour
▢2½ tsp baking powder
▢½ tsp salt - omit if using salted butter
▢¼ cup (60 g) milk - room temperature
▢¾ cup (195 g) strawberry filling/reduction - made in the first step of this recipe
▢1 drop red gel food colouring - optional but recommended, see note 6
▢½ cup (113 g) unsalted butter - room temperature
▢½ cup (105 g) unflavoured vegetable oil - I use canola
▢1½ cups (300 g) white granulated sugar
▢6 large (225 g) egg whites - room temperature, size 7 eggs
▢3 tsps strawberry essence/extract
▢1½ tsp vanilla essence/extract
▢1 tsp white vinegar
Bake at 160 °C (320°F) with the fan on (convection mode) for 35 minutes, or until a toothpick comes out clean. If you don't have a fan function, increase the temp to 175°C (347°F).
Strawberry Cream Cheese Frosting
▢1 cup (225 g) unsalted butter - room temperature
▢4½ cups (570 g) icing sugar - also known as powdered sugar/confectioners sugar
▢1½ cups (335 g) cream cheese - cold, firm type not spreadable
▢¼ cup (65 g) strawberry filling/reduction - made in the first step of this recipe
▢2 tsp strawberry essence/extract
▢1 tsp vanilla essence/extract

- 3 egg whites
- 3 egg yolks
- 70g sugar (30g + 40g)
- 55g vegetable oil (or any neutral flavour oil)
- 60g milk (I used soy)
- 90g cake flour
- 5g vanilla extract
- 15 - 29 strawberries
- 450g whipping cream (add sugar if you would like it sweetened)

✅Ingredients
Strawberry Cake:
• 1 pound fresh strawberries, hulled
• ¾ cup salted butter, softened
• ¼ cup vegetable oil
• 1 ½ cups granulated sugar
• ¼ cup sour cream
• 1 ½ teaspoons vanilla extract
• 1 teaspoon strawberry extract
• 3 ½ cups cake flour
• 4 teaspoons baking powder
• ½ teaspoon table salt
• 3 large eggs, room temperature
• 1 cup buttermilk, room temperature
Strawberry Chantilly Cream:
• 2 cups heavy cream
• 1 teaspoon vanilla extract
• 1.5 ounces instant strawberry jello
• 2 cups powdered sugar, divided
• 8 ounces cream cheese, softened
• 8 ounces mascarpone cheese, softened
✅Instructions
Strawberry Cake:
1️⃣ Add strawberries to a blender or food processor and puree until smooth. Pour into a small saucepan and bring to a simmer. Let simmer, stirring occasionally, until the mixture is thick and reduced by half, about 20 minutes. You should end up with just over 1 cup of reduced strawberry puree. Set aside for later use in both the cake batter and the frosting.
2️⃣ Lightly grease two 9-inch pans. Line the bottom with parchment paper. Preheat an oven to 350 degrees F.
3️⃣ In a large mixing bowl, use a hand mixer to cream the butter, vegetable oil, and sugar together until creamy, about 2 minutes. Beat in 1 cup of strawberry puree, sour cream, and vanilla and strawberry extracts. Use any remaining strawberry puree (up to 1/4 cup) in the frosting.
4️⃣ Use a fork to combine the eggs and buttermilk together in a bowl or 2 cup liquid measuring cup. Set aside.
5️⃣ In another mixing bowl stir together cake flour, baking powder, and salt.
6️⃣ Add 1/3 of the dry ingredients to the butter mixture and mix in until just combined. Add in half of the milk mixture and combine. Add in another 1/3 of the dry ingredients until combined followed by the remainder of the milk mixture. Add in the remainder of the dry ingredients and mix with the hand mixer until just combined, using a rubber spatula to scrape the sides and bottom to make sure everything is mixed in.
7️⃣ Divide the batter evenly between the two prepared pans. Bake at 350 for 25 to 30 minutes. Let sit in pans for 5 minutes and then transfer to a wire rack to cool completely before layering and frosting.
Strawberry Chantilly Cream:
1️⃣ In a large mixing bowl, use a hand mixer to whip cream and vanilla extract. Slowly add in strawberry jello while mixing. Once the cream reaches soft peaks, slowly add in 1/2 cup of powdered sugar. Continue beating until stiff peaks form.
2️⃣ In a separate mixing bowl, beat together cream cheese, mascarpone, and remaining 1/4 cup of strawberry puree until whipped and smooth, about 2 minutes. Add in the remaining 1 1/2 cups of powdered sugar and mix until combined.
3️⃣ Use a rubber spatula to fold whipped cream mixture in with the cream cheese mixture, until combined and no streaks remain.
