Hello Everyone! Long time no see! This video took a while to upload but you should not miss it! Who doesn't love Dan Dan Noodles?! It is a classic Sichuan noodle dish and it has been enjoyed by so many people all over the world! Dan Dan noodles was once a street food in Chengdu Sichuan and sold by street vendors. That's why they come in small bowls and they are super tasty. Today I'm sharing the traditional Sichuan Dan Dan Noodles recipe and you'll absolutely love it!

How To Make Spicy Dan Dan Noodles
Simone Tong of Little Tong Noodle Shop in NYC makes Mala Dan Dan Mixian, a traditional ground pork noodle dish that features tingling, spicy Sichuan peppercorn. Simone adds her twist to this recipe by serving it with rice noodles and adding pickled yellow mustard seeds.
Simone starts by pickling mustard seeds and celery, then chops and dresses peanuts, which provide different textures for the dish. While the rice noodles cook in boiling water, she starts on the soul of the dish: the dan dan. Simone heats up oil in a pan and adds ground pork, breaking it into small pieces, and mixes in Shaoxing wine (Chinese cooking wine), Pixian doubanjiang (fermented fava bean paste), and chili powder. She drains the noodles and continues to flavor the dan dan mixture, adding Sichuan peppercorn, sugar, white pepper, Lao Gan Ma (Chinese chili crisp), oyster sauce, dark soy sauce, and zha cai (pickled mustard plant stem). Simone finishes the dish with scallions, ginger, and garlic, and layers the dan dan mixture over the rice noodles. Finally, she tops the dish with pickled mustard seed, pickled celery, chopped peanuts, pea shoot tendrils, and chili oil.

Delicious Spicy Dan Dan Noodles Recipe (Dan Dan Mian)
Authentic Sichuan-style Dan Dan Noodles recipe made with stir-fried minced meat, wheat noodles, spicy Sichuan chilli oil, and delicious savoury sauce.
Full written recipe ▶️
Ingredients
▢300 gram Minced chicken (About 10.5oz) Chicken/pork/beef/lamb minced
▢3-4 tbsp Preserved mustard Su Mi Ya Cai, see details in note
▢1 tbsp Shao Xing wine Chinese cooking rice wine, see details in note
▢1 tbsp Hoisin sauce Or sweet bean sauce
▢2 tsp Dark soy sauce
▢1 tbsp Light soy sauce
▢1 tsp Chinese five spices
▢2 tsp Grated ginger
▢1 tbsp Grated garlic
▢2-3 tbsp Vegetable oil Peanut, sunflower, canola oil, etc
Sichuan Chilli Oil
▢3-4 tbsp Dried chilli flakes
▢1 tbsp Sichuan peppercorns
▢1 tbsp Chilli powder gochugaru, regular chilli powder, or paprika
▢1 point Star anise Optinal
Sauce Mix
▢2 tbsp Light soy sauce
▢1 tbsp Dark soy sauce
▢2 tbsp Sesame paste Chinese sesame paste or peanut butter
▢2 tsp Sugar
▢½ tsp Chinese five spices
▢1 tbsp Grated garlic
▢½ cup Hot water About 120ml, water or chicken broth/stock
Noodles & Toppings
▢400 gram Wheat noodles or egg noodles, 4 servings
▢1 Pak choy bok choy or choy sum
▢2-3 Spring onions cut thin slices
▢Roasted crushed peanuts to serve
▢Toasted sesame seeds to serve
Instruction
Heat the pan with low-medium heat and add oil.
Next, add star anise, dried chilli flakes and Sichuan peppercorns.
Stir it for a few seconds and turn off the heat.
Add the chilli powder and stir it well.
Let it cool down and set them aside.
Stir fry the minced chicken and add garlic and ginger.
Season with, light soy sauce, dark soy sauce, Shao Xing wine, hoisin sauce, and Chinese five spices.
Combine everything well and add preserved mustard and cook until the sauce is dry.
Remove from heat and set it aside.
Combine all the sauce ingredients in a bowl.
Prepare the noodles and set it aside.
Assemble the dish with base sauce, noodles, stir fried chicken and toppings.

Mala Noodles - Spicy Sichuan Mala Xiao Mian (重庆麻辣小面)
Chongqing Mala Xiaomian is a classic spicy noodle dish - a street food staple in Sichuan.
It's got a lot of similarities to Dan Dan noodles, but the flavor's predominantly spicy and numbing. After a good mala xiaomian, your forehead should be sweating and your mouth tingling.
