PERFECT SINGAPORE NOODLES - BETTER THAN TAKEOUT
Ingredients: Recipe serves 3
450g Rice Noodles
200g Boneless Chicken
2 Eggs
12- 15 King Prawns
1 each Red, Yellow Peppers
1 Carrot
1/2 Medium Onion
1 tbsp Garlic Paste
Vegetable Oil
Spring Onions
SLURRY INGREDIENTS:
2 tbsp Dark Soy Sauce
1 tbsp Light Soy Sauce
1 tbsp Cooking Wine
1 tsp Sesame Oil
Bouillon Cubes ( I used 1 Knorr Chicken Cube)
1 tbsp Chilli Flakes
1 tbsp Curry Powder
TO SEASON THE CHICKEN:
1 tsp Black Pepper
1 Knorr Chicken
1 tsp Onion Powder
1 tsp Garlic Powder
1 tsp Smoked Paprika
Salt to taste

How to Make DELICIOUS Homemade Singapore Noodles
Welcome back to Mei Lian's Kitchen! Today we are making some homemade Singapore Noodles that you can find in any local chinese restaurant. This is my take on Singapore Noodles. My family really likes this noodle dish, and I hope you will enjoy it like we did.
Ingredients
5oz Shrimp
5oz Chicken
4oz Rice Noodles
3 Cloves of Garlic
2 Green Onions
2 Eggs
1 Stalk of Celery
1 Green or Red Pepper
1 Small Yellow Onion
1.5 Tbsp Curry Powder
1 tsp Salt
1 tsp Chicken Powder
Meat Marinade
1 tsp Olive Oil
1 Pinch of Salt

Ingredients
- 300g vermicelli rice noodles, soaked in boiling water for 5 mins
- 3 spring onions, sliced into 2cm pieces
- 1 carrot, cut into matchsticks
- 1/4 head wombok, sliced thin
- 4 cloves garlic, finely diced
- 300g cold roast pork (chicken or ham)
- 8 raw prawns (or shrimp), deveined and sliced in half
- 2 eggs, beaten
- 1 tsp curry powder
- 2 tbsp soy sauce
- 3 tbsp peanut oil
Method
Note - if you don't have a hot burner, remove the ingredients from the wok after each step and let it get back up to temp before moving on to the next step. Once you get to the step with the noodles, you can add everything back in and toss.
1. Heat the peanut oil in a wok or large frying pan over high heat.
2. Add the garlic and stir fry for 15 seconds.
3. Add the beaten egg and stir fry for another 30 seconds.
4. Add the sliced prawns and pork, and stir fry for another minute.
5. Add the spring onion, carrot, and wombok and stir fry for 2-3 minutes until the vegetables are slightly softened.
6. Add the drained noodles, curry powder and soy sauce, and stir fry until the noodles are heated through and coated in curry powder.
7. Serve hot and enjoy!
Spicy Wagyu Beef Singapore noodles
Recipe for 2 portions
Ingredients
- 300g beef fillet, sliced thin
- 240g dried egg noodles, cooked in boiling water and refreshed in cold water
- 4 cloves garlic, minced
- 2 spring onions, sliced thin, keeping the greens separate from the whites
- 50ml grapeseed oil (or peanut)
- 2 tbsp doubanjiang
- 2 tbsp dark soy
- 1 tbsp sugar
Method
1. Pour oil into a wok or large frying pan over high heat.
2. Add the spring onion whites and garlic and sauté for 2 minutes.
3. Add your doubanjiang and sugar and cook for another 1 minute.
4. Now add the beef and cook for 3-4 minutes.
5. Add the noodles to the wok followed by the soy sauce.
6. Stir fry for 3-4 minutes and finish with the greens of spring onions.
7. Enjoy!

Recipe:
100g rice noodles / vermicelli
100g firm tofu
1 small carrot, sliced
80g napa cabbage, sliced
handful beansprouts
2 green onions, cut into 2 inch long
1 fresh chili, sliced
1/2 yellow onion, sliced
2 garlic, minced
2 tbsp soy sauce
1/2 tbsp sesame oil
1/2 tbsp curry powder
1 tsp brown sugar
3-4 tbsp water
Oil for cooking
Method:
1.) Soak the rice noodles/ vermicelli for 15 minutes, drain and set aside.
2.) Cook the tofu till water evaporate, remove from the heat and set aside.
3.) Heat 2 tbsp oil - sauté the garlic, yellow onion and fresh chilli. Add in the tofu and carrot, stir fry for 2 minutes.
4.) Add in the soaked rice noodles, soy sauce, sesame oil and brown sugar, curry powder and water. Stir fry until the sauce covers all the noodles, about 3-4 minutes.
5.) Lastly add in beansprouts, napa cabbage and green onions, stir fry another few more minutes. Remove from the heat and serve immediately.
