How To make Spicy Shrimp and Avocado Salsa
1 Yellow Bell pepper
1 Red Bell pepper
4 Roma tomatoes
6 Tomatillos, husks removed
4 Garlic cloves
1 sm White onion, peeled and
-quartered (6 oz) 2 Jalapenos, stems removed
1 c Loose packed chopt cilantro
1/4 c Tomato juice
2 ts Coarse salt
2 ts Maple syrup (real maple)
4 ts Fresh lime juice
2 Avocados, peeled, seeded and
-diced 1 lb Cooked shrimp, peeled and
-diced Tortilla chips Remove stems from Bell peppers. Split peppers in half, lengthwise and lightly oil the skin. In an oven-proof pan, arrange peppers (skin-side up), tomatoes, tomatillos, garlic, onion and Jalapenos. Broil under high heat 10 to 15 minutes, or until skins of the peppers are charred and the tomatoes and tomatillos are blistered and soft. Allow vegetables to cool. Peel skin from peppers. In a food processor, combine broiled vegetables (including any liquid from the pan) with cilantro, tomato juice, salt, maple syrup and lime juice; blend to yield a coarse puree. Just before serving, add avocado and shrimp and mix well. Serve with warm fried tortilla chips.

I love using this food mold tool to make shrimp stacks. If you don't have a tool you can also use a metal can. Just remove both ends and push through. Or, you can use a one-cup measuring cup to assemble the stack.

AVOCADO SALSA
Serves 6
INGREDIENTS
3 ripe avocados, diced
½ red onion, chopped
2 tomatoes, diced
¼ cup cilantro, chopped
2 limes, juiced
2 cloves garlic, chopped
Salt, to taste
Pepper, to taste
3 tablespoons red wine vinegar
½ cup feta cheese
Tortilla chips, for serving
PREPARATION
In a medium bowl, combine all ingredients and gently mix together.
For best flavor, allow to set 30 minutes.
Garnish with additional feta just before serving.

Avocado Salsa - An Easy Yet Delicious Recipe! Spicy!!
So recently I made some Carñe Asada tacos and nothing goes better with tacos than Avocado Salsa. Today I am going to show you how to make this spicy salsa recipe. Thanks for watching and be sure to subscribe!

Mexican Rice Recipe:
Ingredients:
5 - Jalapeños (can use Serrano chilis for a hotter flavor)
4 - Roma tomatoes
1 to 2 - Avocados
1/2 - bushel cilantro
1 - tsp salt
1 1/2 - tsp cumin
1 - lime
Start by slicing chilies and removing seeds, then dice.
Slice tomatoes in half and then remove hearts and liquid leaving only the outer tomato flesh with skin (this is to avoid a runny type salsa), then dice tomatoes.
Chop cilantro and combine with tomatoes and jalapeños in a bowl. Squeeze lime into bowl and mix. Then add cumin and salt and mix again.
Dice avocado and carefully add to salsa ensuring not to smash avocado.
Serve and enjoy!!
