PEANUT LIME SAUCE:
1/4 c Peanut butter 1/4 c Soy sauce 1/4 c Fresh lime juice 1 tb Rice vinegar 3 tb Coriander; chopped 1 tb Brown sugar 1/2 ts Chinese chili sauce; or ; 1/4 ts dried chili flakes Substitute chicken, shrimps or beef for the pork, if desired Make the sauce up to 3 days ahead of time, but grill the satays at the last minute. Thai Red Curry Paste - Mid Summer Seasonal Recipe from the Garden
We will use a few seasonal ingredients from the garden like cilantro root, Kaffir lime leaves, garlic, and shallots to make a yummy paste for our curry (another video). I do not have fresh hot peppers right now so I am using a few dried which I picked up from the Asian market. I also picked up some galangal, but you can use ginger if you cannot find it.
Here are the ingredients: 3-4 Small Roots of Cilantro 2 T Shallots 1 T Garlic 2 T Galangal or Ginger Zest of 2 Kaffir LImes 1 Stalk of Lemongrass Hot Chili's to Taste Salt Shrimp Paste (Optional - I do not use it in this video because the paste is for a family meal and there are allergies.)

Here's the recipe:
250g deep fried tofu 100g shallots sliced thin 50g spring onion sliced thin 50g coriander 50g Kaffir lime leaves 50g fresh mint 2 large sweet chilli toasted Half tbsp chilli powder ( crush the toasted sweet chilli to get this) 2-3 tbsp fish sauce (replace with light soy sauce if Vegan 1.5 tbsp Khao Khua (Toasted sticky rice powder) watch the video for details 3 wedges of lime
As with all Asian cooking this is a rough guide with regards to amounts, adjust for your own taste and spice tolerance. If you want to make it spicier then toast birds eye chillies instead of large sweet chilli. Good luck and let us know how you get on.
