How To make Spicy Mexican Bean Salad
1 Red onion, sliced
1/4 c Water
1 T Chili powder
2 c Cooked green beans
1 15oz can black beans,
-drained & rinsed 1 15oz can red kidney beans,
-drained & rinsed 1 15oz can white beans,
-drained & rinsed 1 1/2 c Frozen corn kernals, thawed
2 T Chopped cilantro or parsley
-Chili-Cilantro Dressing -(recipe following) Place the onion in a saucepan with the water. Cook gently until the onion is soft and separated into rings, 4 to 5 min. Add the chili powder and stir until well mixed. Remove from heat. Combine all of the ingredients in a large bowl and toss to mix well. Cover and chill for 1 to 2 hours to allow flavors to blend. Recipe for Mexican beans salad
Ingredients for olive oil Dressing
3 tbsp Extra Virgin Olive oil
1 tsp minced garlic
Some cilantro/ coriander leaves chopped
1 tsp chilly flakes
1 tsp cumin powder
1 tsp oregano
1 tsp salt
1/2 lemon juice
Mix everything and here we go dressing is ready to pour on salad
Ingredients for bean salad
1 bowl lettuce chopped
1 bowl boiled kidney / black beans
1/2 cup smoked sweet corn kernels
1 cup tomato chopped
1/2 cup yellow bell pepper
1/2 cup red bell pepper
1/2 cup onion finely chopped
1/2 cup spring onions
1 large roped avocado
1/2 cup jalapeño
Take a salad bowl or any deep bowl and add all the salad ingredients and pour olive oil dressing n top and mix everything together nicely.
Our Mexican bean salad is ready to eat , please serve it cold with nachos chip corn chip or just have it without any chips or bread.

This Mexican bean salad is one of the best kids favorites. It is a very good balance diet. Very easy to make and you can prepare this Mexican bean salad in less than 15 min.
Ingredients:
Kidney Beans - 100g
Chickpeas - 100g
Butter Beans - 60g
Sweet Corn - 60g
Bell Pepper - 100g (Red/Green/Yellow)
Onion - 1 Medium size
Olive Oil - 1/2 cup
Vinegar - 1 tbs
Garlic - 1 clove
Coriander - 1 tbs
Salt - to taste
Sugar - 1 tsp
Black Pepper - 1/2 tsp
Lemon juice - 1/2 lemon
Ketchup - 2 tbs
