How To make Fettuccine with Hot Mexican Bean Sauce
Nonstick cooking spray 1 medium onion
chopped
1 clove garlic :
minced
14 1/2 ounces canned no-added-salt stewed tomatoes -- undrained
10 ounces canned no-added-salt tomatoes undrained
2 tablespoons chopped green chiles
1 tablespoon chopped fresh cilantro
1 teaspoon chili powder
1/2 teaspoon sugar
1/4 teaspoon oregano
16 ounces canned kidney beans :
rinsed and drained
4 cups hot cooked fettuccine
cooked without salt
Coat a large skillet with cooking spray. Place over medium heat until hot. Add onion and garlic; saute until tender. Stir in tomatoes, green chiles, cilantro, chili powder, sugar, and oregano. Cover and bring to a boil. Reduce heat, and simmer 15 minutes, stirring occasionally. Mash beans slightly, and stir into tomato mixture. Serve over hot cooked fettuccine.

I was super excited to try this recipe, and it did not disappoint! The sundried tomatoes really do add this beautiful pop of color - paired with the crunch of the snap pea - YES! Total winner! You could totally add a little kale or spinach for some leafy greans - or brocolli for cruciferous. All would be good. As for the sauce, we added a little extra water to our sauce in order to thin it out - actually just added it by the bowl and mixed as we went. I'm not surprised as it's a bean sauce, which would suggets thickness. And my noodles were still quite warm when I added the sauce, but we didn't eat right away. So that little aspect of it will all depend on how and when you serve. But...nothing was lost in adding those bits of water - maybe a couple of tablespoons per bowl. One other thought: Dr. Greger's Nutty Parm coudl be a fun addition to finish it off if you wanted that sprinkled cheese look. Enjoy!!

INGREDIENTS:
Noodles
- 1 Pound Fettuccine Noodles
- water and salt as per requirement
Preparing Cauliflower
- 1 small head Cauliflower 1.5 lbs
- Hot water as per requirement
Vegan Alfredo Sauce
- 1 medium onion chopped
- 3 cloves garlic minced
- Salt and Pepper as per taste
- ½ Teaspoon Garlic Powder
- 1 Tablespoon Nutritional Yeast
- 1 can canned Coconut Milk 13.6oz
- 1 cup raw unsalted cashews
- ¼ cup green peas for serving
- fresh chopped parsley for garnish
METHOD:
1) Soak Cauliflower head in a bowl of hot water for 30-minutes. Keep it aside.
2) In a pot of salted boiling water, add pasta and cook until al dente. Drain the water and keep the pasta aside.
3) Chop Cauliflower into small 1-inch cubes.
4) Use a high speed blender jar to blend chopped cauliflower, salt, pepper, garlic powder, chopped onions, minced garlic, nutritional yeast, raw unsalted cashews, and coconut milk until creamy and smooth.
5) Pour Vegan Alfredo sauce over fettuccine noodles. Garnish with chopped parsley and green peas. Serve it immediately.
Soak Cauliflower in Hot water: This two is important as it makes your cauliflower soft and helps in blending into a smooth puree. Soak Raw Cashews in water: Soaking Cashews makes them soft and helps you make a silky smooth and creamy sauce. Salt your Pasta Water: Make sure you add salt to your pasta water or else your Fettuccine Alfredo will taste quite bland. Cook on High & then Simmer: After you've pureed your sauce, pour it into a saucepan. Cook on high heat for 2-3 minutes and then on low heat for 6-7 minutes. Your sauce needs to be cooked completely.
