1/3 c Soy sauce 1/2 ts Molasses 1/4 c Sesame oil 1/4 c Tahini 1/4 c Brown sugar 1 tb Chili oil 3 tb Balsamic or red wine vinegar 1/2 bn Sliced green onions Salt 1/2 lb Soba (Japanese - Buckwheat noodles) Heat soy sauce until reduced by half. Turn to low and add molasses. Warm briefly and transfer to bowl. Add remaining ingredients except noodles. Add salt to taste. Boil noodles about 3 minutes. Drain and plunge in ice water. Drain and rinse. Combine with sauce and chill. Makes 4 smaller servings at 467 calories each.

Spicy Cold Noodles
Ingredients For the Sauce 1 Tbsp gochujang, Korean red pepper paste 1 Tbsp soy sauce 1 Tbsp mirin 1 Tbsp sesame oil 2 Tbsp gochugaru, Korean red pepper flakes 2 Tbsp apricot jam (you can substitute to any fruit jam/jelly, honey or sugar) 3 to 5 cloves garlic, chopped (approximately 1 1/2 Tbsp) 1 serrano chili, chopped 1 1/2 Tbsp fresh lemon juice 2 tsp sesame seeds, crushed in between your palms
For Spicy Cold Noodles 12 to 14 oz neangmyeon noodles 3 to 4 handfuls green cabbage (add some purple cabbage too if you like!) 3 to 4 oz carrot, thinly julienne 3 to 4 oz cucumber, thinly julienne 1 tsp sesame oil 1 tsp sesame seeds

Korean icy cold noodles (naengmyeon) are one of my favorite things to make all year ‘round, even in the cold winter. I can’t resist the texture of the chewy and thin noodles, no matter if they are served with cold broth (mul-naengmyeon) or in a spicy sauce (bibim-naengmyeon). Especially on hot summer days like these, I really feel my body cools right down after I slurp the cold noodles and drink the leftover cold icy broth. Soba Nudeln in koreanischen Chilipaste (kalt)/Spicy cold soba noodles with korean red pepper paste
ZUTATEN (für 1 Person): - Soba Nudeln ( 1 kleines Bund, ca. 80g) - Gurke (1 kleines Stück) - Kochschinken (1 Scheibe) - Koreanische Chilipaste (Gochujang) 1 EL - Knoblauchpulver ½ TL - Weißweinessig 1 EL - Zucker 1 EL - Sesamöl ½ EL - Gerösteten Sesamkörner 1 TL
ZUBREITUNG: Sauce (zuerst): - Die Koreanische Chilipaste 1EL, - Knoblauchpulver ½ TL, - Weißweinessig 1 EL, - Zucker 1 EL & das - Sesamöl ½ EL Gut zusammen mischen! (Gochujang enthält Salz, d.h. ist hier kein Salz nötig)
- Die Gurke in dünne Streifen schneiden - Den Kochschinken in dünne Streifen schneiden - Die Nudeln in kochendes Wasser tun - Wenn das Wasser wieder sprudelt (kocht) ca. 50 ml kaltes Wasser dazugeben - Den obigen Schritt noch 2 Mal wiederholen - Die Nudeln in Eiswasser kurz kühlen oder im Sieb unter laufendem Wasserhahn kalt abspülen - Die Nudeln im Sieb abtropfen und abkühlen lassen & in eine Schüssel geben - Die Gurken- & Schinkenstreifen sowie die Sauce zu den Nudeln geben - Anschließend die gerösteten Sesamkörner dazugeben Gut mischen!
