How To make Cold Cellophane Noodles with Chicken
Marinade: 1/4 cup soy sauce
2 tablespoons rice wine vinegar
1 teaspoon minced garlic
1 teaspoon minced fresh ginger
1 teaspoon sesame oil
1 teaspoon sugar
2 large chicken breasts (about 1 pound total),
skinned and b o 2 ounces cellophane noodles
Dressing: 1 1/2 teaspoons wasabi powder
1/4 cup rice wine vinegar
1 tablespoon soy sauce
1/2 teaspoon sugar
1/2 teaspoon sesame oil
1/4 pound asparagus, blanched al dente and :
cut into
2-inch pie
c 1 small cucumber, peeled, seeded, and -- cut into
2-inch batonn
e 2 cups cleaned spinach leaves
2 tablespoons thinly shaved green onions
Make the marinade: Combine the marinade ingredients, mix well, and place in a non-reactive dish. Place the chicken breast into the marinade, turning it over to make sure it's coated on both sides. Cover and refrigerate for 4 hours.
Drop the bean threads into the hot water. Stir and let sit for 10 minutes or until the noodles are "glassy" and soft. Drain, run under cold water, and reserve. Make the dressing: In a small bowl, mix together the wasabi powder, and 1 tablespoon of water. Let sit 5 minutes. Add the rice wine vinegar, soy sauce, sugar, and sesame oil. Mix well.
Thinly slice the chicken breast. Toss together the noodles, chicken, asparagus, cucumbers, and the dressing. Place a nest of spinach on a salad plate. Make a small amount of noodle salad in the center of the spinach. Garnish with green onions.

INGREDIENTS

1. 4 - servings
2. Chicken breast-16.67 oz. (500 g)
3. Glass noodles-6.67 oz. (200 g)
4. 2 pcs onions
5. 1 pcs carrot
6. 2 pcs bell peppers
7. Olive Oil-1.67 oz. (50 ml)
8. Rice vinegar-1.67 oz. (50 ml)
9. Soy sauce-1.67 oz. (50 ml)
10. 1 tsp salt
11. 1 tsp black pepper
12. 2 garlic cloves
Preparation
************
1. Cut into long slices the fillet. Fry it on high heat, add spices. Add the onion to the fillet and fry.
2. Prepare glass noodles (bean noodles, or glass noodles) in the manner indicated on the package - pour hot water for 5–7 minutes, then rinse with cool water.
3. Bulgarian pepper (paprika - fragrant) cut into strips. Grate carrots on the Korean grater or on the ordinary large grater. Fry carrots, peppers until ready, add spices and finely chopped / crushed garlic.
4. In a large container mix the cooked chicken with onions, glass noodles and vegetables. Flavour with rice vinegar (as for me the Saint-Soi is the best) and soy sauce.
5. Let it brew for an hour. You can enjoy the dish both hot and cold.
P.S. For those who do not like garlic, you can use the soy sauce with garlic Saint-Soi, then the need for fresh garlic disappears.

Very tasty glass noodle salad is well known in Asian countries. There is a variety of such salad recipes – with fried chicken, beef, rice or other glass noodles. Here is a video recipe of glass noodles with vegetables.

✅ Ingredients:
• glass noodles – 7 oz | 200 g
• carrot – 7 oz | 200 g
• bell pepper –7 oz | 200 g
• fresh cucumber – 7 oz | 200 g
• garlic – 3 cloves
• fresh cilantro – 1 oz | 20 g
• soy sauce – 6 tbsp
• vinegar 9% - 3 tbsp
• vegetable oil – 2 tbsp
• sesame oil – 1 tbsp
• sugar – 1 tbsp
• ground coriander – 1 tsp
• red chili flakes – to taste
• sesame seeds – to taste
✔︎ You will need:
• carving board
• deep salad bowl
• colander
• bowl
???? Preparation:
1. Pour the glass noodles with boiling water for 7 minutes or cook as indicated on package instruction.
2. Prepare vegetables: grate the carrot with a korean carrot grater, cut the cucumbers and bell pepper into thin strips.
3. In a bowl combine the chopped up garlic, sugar, ground coriander, chili flakes, soy sauce, vinegar, vegetables and sesame oils.
4. Pour away the water and wash the noodles with cold water, drain in a colander.
5. Into a deep salad bowl lay out the glass noodles, grated carrot, cut cucumber and bell pepper, cilantro leaves, sesame seeds and the prepared sauce. Combine well and leave for 1-3 hours.
6. Serve your glass noodles with vegetables sprinkled with sesame seeds, cilantro leaves or chili rings.
