2 ts Cornstarch 1/2 c Stock 1 ts Chili paste with garlic 2 tb Soy sauce 1 tb Vegetable oil Salt to taste 1/2 ts Sugar
BEAN CURD:
2 tb Oil 3 Garlic cloves 1 ts Fresh ginger 3 Scallions 1 lb Bean curd - cut into 1-inch cubes Whisk together the sauce ingredients & set aside. In a wok, saute garlic & ginger. Add scallions, followed by the tofu. Cook for a few minutes. Pour suace over the sauted ingredients. Mix gently & simmer carefully. Let the sauce thicken, stirring gently every now & then. Serve over rice.

Spicy braised tofu (Dubu-jorim: 두부조림)
Today's recipe is dubu-jorim (spicy braised tofu). It's fresh tofu braised in a savory-spicy sauce and pan fried with caramelized onion, garlic, and green onions, making it juicy, a little spicy, crispy on the outside and soft on the inside. It's a delicious side dish for rice, noodles or porridge, and tastes meaty even though it's a totally vegetarian dish. The full recipe is here! My cookbook!

You can make changes in my recipe to suit your taste as you may prefer more of one ingredient and less of another. We may not cook the same way, yet we both can produce good results.
Ingredients: 150g of chicken 2 tube tofu 3 dried shiitake mushroom 3 cloves of garlic 20g of ginger 1 red onion 1 stalk spring onion 1 red chilli 1 tbsp of light soy sauce 2 tbsp oyster sauce 1/4 tsp black pepper 1 tsp dark soy sauce 1 tsp sesame oil 1 1/2 cup of water 1 tbsp corn starch + 2 tbsp of water

Spicy Bean Curd Recipe
Add the following to a bowl and stir to combine:
1. 3 Tbs Water 2. 5 TBs Soy Sauce or Liquid Aminos or Tamari 3. 1 1/2 Tsp Chili Paste with Garlic ( Add more for more heat ) 4. 1 Tsp Sugar 5. 1 Tsp Sesame Oil 6. 2 Cloves of Garlic
Prepare the following and set them aside in a separate bowl:
1. 2 Thin Sliced Scallions separated into rings 2. 1 TBs of Diced Ginger ( About 1 inch long ) 3. 14 Oz. of Cubed Firm Tofu ( Dried out for 1 hour between paper towels with something heavy on top )
Everything is ready so combine them this way:
1. Add 2 TBs of Canola Oil to a wok or large frying pan on high 2. Add the Scallions and Ginger and stir for about 3 minutes 3. Add the Tofu and delicately combine 4. Add the sauce to the pan and combine for 30 seconds 5. Turn the heat down to 20% on the stove 6. Cover and let simmer for 5 minutes or less
Here is my Spicy Bean Curd Recipe. I love this recipe because it doesn't lose its wonderful flavor as you increase the heat in the dish. I also love it because it can be made in 10 minutes and it has many flavors and textures you don't find in most meals. The Bean Curd (Tofu) is delicate and yet firm. The scallions have a nutty subtle bite. I really enjoy it.
This version is not very spicy, but feel free to double the amount of chili paste and ginger to increase the heat.
