How To make South African Vegetable Biryani
Ingredients

onions, sliced
4
tablespoon
ghee
6
each
chili peppers, crushed into a paste OR 2 ts cayenne
1
each
ginger, 2 inch piece
10
each
garlic cloves
1/2
cup
lentils, dried
1/2
pound
green peas, shelled
1/2
pound
carrots, chopped
1/2
pound
green beans, chopped
3
each
tomatoes, chopped
6
each
whole cloves
1
each
cinnamon stick, 4 inch piece
6
each
cardamom pods, crushed
1
teaspoon
turmeric
3
each
sprigs mint, pounded OR 1/2 ts dried mint
2
cup
long grain white rice
6
each
potatoes, chopped
2
teaspoon
salt
Directions:
In a large, heavy skillet, fry the onions in the ghee until golden. With a slotted spoon, remove 1/3 of the slices & set aside. Add to the pot, the ginger, garlic & chili paste. Fry for 5 or 6 minutes, stirring constantly. Add the lentils, peas, carrots & beans. Reduce heat & cook for 15 minutes. Add more ghee if necessary.
Add tomatoes, spices & mint. Stir for 5 minutes. Pour in 1 cup of very hot water, cover & simmer until the vegetables are half-cooked.
Add the rice, potatoes, salt & another 4-5 cups of hot water. Cover & cook for 20 minutes or until the rice is done & the water is absorbed. Garnish with the reserved onion slices.

Servings: 4
Ingredients :
Ghee - 3 tsp
Oil - 1 tbsp
Cooked Basmati Rice
Saffron Water
Fried Onions
Biryani Masala
Coriander Leaves
Mint Leaves
To Marinate The Vegetables:
Curd - 1/2 cup
Turmeric Powder - 1/4 tsp
Chili Powder - 2 tsp
Coriander Powder - 1 tsp
Biryani Masala - 1 tbsp
Salt - 1 tsp
Ginger Garlic Paste - 1 tsp
Onion - 2 nos. (sliced)
Green Chili - 1 no. (chopped)
Tomato - 2 nos. (chopped)
Carrot - 1 no. (chopped)
Beans - a few (chopped)
Potato - 1 no. (chopped)
Cauliflower Florets - 1 cup (chopped)
Green Peas - 1/4 Cup
Fried Onions - a few
Coriander Leaves - a handful
Mint Leaves - a handful
Methods:
To a bowl, add curd, salt, ginger garlic paste and spice powders required for the marinade mix well
Add the vegetables to this curd mixture and mix well
Let it marinate for 20 mins
Meanwhile, soak the rice for 20 mins
Cook the rice till it is 3/4th done and strain it and keep it aside
Heat a pan with ghee and oil
Add the marinated vegetables and saute for 5 mins
Now close and cook for 15 mins on medium flame
Cook till the moisture is completely gone
Take half of the vegetable masala and keep it aside
Layer the cooked rice on one layer of vegetable masala
Add the remaining vegetable masala and another layer of rice on it
Finally add fried onions, coriander leaves, mint leaves, biryani masala powder, and saffron water
Close the pot and leave it in dum for 15 mins on low flame
Now turn off the stove and let the biryani rest for about 15 mins
Serve the Veg Dum Biryani hot with some raita by the side

3 cups of Basmati rice (long grained Nagiah’s)
Cinnamon stick
Lentils
Boil in salted water
Ghadra beans (Borlotti)
Boil in salted water
1 Large sliced onion
2 Diced tomatoes
250g of Green beans
125g of Peas
3 Sliced carrots
250g of Sliced mushrooms (optional) or cabbage
Fresh Dhania & mint (soak in salted water)
5 Potatoes
1 Stem of curry leaf
A few stems of Fresh thyme
3 or 4 Chillies
Half a cup of Oil
Breyani Mix
1 Heaped tsp of Dhania powder
3 Quarters tsp of Jeera powder
Half a tsp of somph powder
1 Heaped tsp of Turmeric
1 tsp of Ground breyani mix
2 tbs of Masala
1 Heaped tsp of Chili powder
1 Heaped tsp of Ginger & garlic
Rough salt
Water (If needed)
1 Heaped tsp of Egg yolk coloring
2 tbs of Butter
Sour Milk:
Fresh mint
Half a tsp of Salt
Half a cup of Sour milk
1 chili

It definitely takes me down memory lane when my late grandmother used to whip this up for us. Of course, she used fresh veggies but hey frozen veggies are convenient right? This Vegetable Biryani Using Harvestime Frozen Veg is a must try & there's even a twist with the potatoes!
Fresh vegetables need to be purchased close to the time of cooking or else they just go bad & that's a waste of money. If you are in the mood for some vegetable biryani, you should be able to satisfy that craving, so I say - buy them frozen, there's no difference in the flavour of this biryani.
Biryani otherwise called biriyani or biriani, is a blended rice dish with its origins among the Muslims of the Indian subcontinent. It is mainstream all through the subcontinent & among the diaspora from the area. It is made with flavors, rice, meat &/or vegetables.
It can be prepared using long grain basmati rice or parboiled rice.
South Africans usually prepare biryanis' with parboiled rice.
Biryani is a Urdu word got from the Persian dialect, which was utilized as an official dialect as a part of various parts of medieval India, by different Islamic administrations.

◆Handful of Harvestime Potato Chips (according to how much you prefer)
◆410 grams (1 can) butter beans (optional)

◆½ teaspoon cumin (jeera) seeds
◆½ teaspoon fennel (soomph) seeds
◆2 star aniseeds
◆2 cinnamon sticks
◆3 bay leaves
◆2 green chilies
◆3 red birds eye chilies (optional)
◆1 tomato
◆1 sprig thyme
◆½ teaspoon ginger & garlic paste
◆1 teaspoon red chili flakes
