How To make West African Pot Roast
3 1/2 lb. boneless beef chuck roast
2 tablespoons oil
1 cup onion -- thinly sliced
1 cup water mixed with 1/2 cup peanut butter
1/4 cup tomato paste
1/3 cup lemon juice
1/2 teaspoon dried thyme leaves
1/2 teaspoon ground red pepper
Heat 2 tablespoons oil in a 4 to 5 qt. ovenproof pot over medium heat. Pat meat dry with paper towels. Add to hot oil along with onion. Brown meat on all sides. Stir onion occasionally. Add water mixed with 1/2 cup peanut butter, tomato paste and seasonings. Cover tightly and bake for 2 1/2 to 3 hours in a preheated 325 oven, until meat is fork tender. Lift meat to a cutting board. Cover loosely with foil and let stand 10 to 15 minutes. Skim fat from sauce. If you like, thicken the sauce by stirring in 3 tablespoons flour mixed with 1/4 cup water. Slice meat across the grain and serve with the sauce.

¼ cup Vinegar
3 Tbsp. Cooking Oil
Salt to Taste
Serves: 6
Preparation Time: 30 mins + 1 hr marination

African Chicken Peanut Stew
African chicken peanut stew is a delicious and versatile traditional dish enjoyed by many Africans all over the world. This hearty stew is made from simple ingredients and is low carb and keto-friendly!

✅ INGREDIENTS
- 1.5 lb chicken thighs
- 1/2 cup tomato sauce
- 1 red bell pepper, chopped
- 1/2 cup peanut butter
- 1/4 cup olive oil
- 1/2 onion, chopped
- 1 tsp cayenne pepper
- 1 tsp bouillon powder
- 2 cups chicken stock or water
- 1 tsp black pepper
- 1 tsp salt or to taste
✅ INSTRUCTIONS
- Wash the chicken under running water, then pat dry with paper towels.
- Mix some salt and pepper in a small bowl, then rub it on both sides of each chicken part.
- Pour some olive oil into a large skillet and then brown the chicken pieces on both sides on medium-high heat.
- When sufficiently browned, remove the chicken thighs from the oil and set them aside.
- Pour a bit of olive oil in a large soup pot and when heated, add the chopped onions and bell pepper. Sauté for a few minutes on medium heat.
- Next, add the tomato sauce and spices (except the salt), simmer for a few minutes, and pour in the chicken broth.
- Add the chicken pieces, give it a stir and simmer for about 10 minutes.
- Taste for salt and add some if you need.
- Finally, add the peanut butter into the pot and stir till it is well mixed in.
- Cook till the stew becomes thick.
- Your African chicken peanut stew is ready to be enjoyed!
