How To Cook Vegetable Biryani - Restaurant Style Vegetable Biryani Recipe - Perfect Vegetable Biryani
There are several tricks that go into making a perfect biryani. If you follow these steps then you will soon master it and will be really proud of yourself. I feel this vegetable biryani tastes equally good like chicken or mutton biryani.

Ingredients required for making vegetable biryani -
For cooking rice - Serves 3 to 4
* 500 gm/1 lb/ 2 cups (standard measuring cup) of long grained Basmati rice
* 2 tablespoons salt
* 2 dried bay leaves
* 1 cinnamon stick
* 3 to 4 green cardamoms
* 8 to 10 cloves
* 1 tablespoon lime/lemon juice
* 1 tablespoon oil
For making the vegetable curry and layering rice - Please note the weight of rice should be more or less equal to the weight of veggies taken.
* 200 gm/7 oz cauliflower
* 100 gm/ 4 oz / 1 medium to large potato
* 108 gm/ 4oz/ 2 medium carrots
* 30 gm/1/4 th cup frozen green peas. Add it after the vegetable curry is done if using frozen ones. If using fresh green peas, add them along with other vegetables before marination.
* 60 gm/ 2 oz green beans
* 2 large onions
* 1 cup plain unflavored yogurt
* 1 teaspoon shahi jeera (black cumin seeds)
* 1/2 teaspoon turmeric powder
* 1 tablespoon kashmiri red chilli powder
* 1 tablespoon ground coriander (dhania powder)
* 20 gm ginger/ 1 tablespoon finely grated
* 20 gm / 6 large garlic cloves/ 1 tablespoon finely grated
* 1/3 rd cup oil
* 1 tablespoon ghee for making curry + 2 tablespoons will go on rice while layering
* 1 dried bay leaf
* 2 to 3 green cardamoms
* 1 cinnamon stick
* 20 to 30 fresh mint leaves
* 1 tablespoon Kewra water. Please note if using Kewra essence just use 2 to 3 drops
* 1 to 2 teaspoons rose water
* 3/4 th cup rice water
* few threads of saffron
For making aromatic spice blend -
* 10 - 11 green cardamoms
* 1 teaspoon ground mace (javetri)
* 1/4 th teaspoon ground nutmeg (jaifal)
* 1 heaped teaspoon garam masala powder. Recipe for homemade garam masala -

INGREDIENTS -
For Soaking Rice & Saffron
Basmati Rice - 3cups
Water - 2lt
Saffron - a pinch
Milk - ¼ cup
For Biryani Stock (jhol)
Oil - ¼ cup
Bayleaf - 2nos
Cinnamon (2” piece) - 2nos
Cloves - 7-8nos
Peppercorns - 8-10nos
Cardamom - 10-12 nos
Javitri whole (mace) - 2nos
Shahi jeera - 2tsp
Onion sliced - 1½ cups
Green chilli slit - 2nos
Garlic roughly chopped - 1½ tbsp
Ginger roughly chopped - 1½ tbsp
Orange (kinnu) - 1no
Mint leaves - 1 small bunch
Water - 6cups
Salt - to taste
Rosewater - 1tbsp
Kewra - 2tbsp
Meetha Ittar - 2drops
Ghee - 2tbsp

Chicken 1½ kg cut curry pieces
Basmati rice 3 cups (Soaked before 30 minutes)
Oil ½ cup oil and
3 tbsp ghee
500gm Onions (around 6 pieces) sliced

Ingredients
- 3 large red onions, sliced thin
- 200ml peanut oil for frying
- 1 kg chicken thighs, skin off
- 4 tbsp yogurt
- 1 tsp chilli powder
- 1/2 tsp ground turmeric
- 1 tsp garam masala
- 3 tsp ginger paste
- 1 tsp garlic paste
- Juice of 1 lemon
- 2 green chillies
- 2 cinnamon sticks
- 12 cardamom pod
- 2 tsp cumin seeds
- 6 cloves
- Salt to taste
- 1 bunch mint
- 1 bunch coriander
- 1 kg aged basmati rice
Method
1. Start by making the crispy onions by heating up the oil in a saucepan over a medium high heat and frying the sliced onions in batches until golden brown.
2. Next, marinate your chicken by adding the chicken, 1/3 of the crispy onions, yoghurt, chilli powder, turmeric, garam masala, ginger, garlic, one cinnamon stick, 8 cardamon pods, 1 green chilli sliced thin, 1 tsp cumin seeds, 4 cloves and a tsp of salt in a large pot. Mix well and marinate for 4-24 hours.
3. With the rice, rinse it twice then soak it in water for 40 minutes
4. In a large pot, half filled with water, add 1 tbsp salt, 1 green chilli sliced lengthways in half, 6 green cardamon, 1 cinnamon stick, 2 cloves and 1 tsp cumin seeds and bring to a simmer.
5. Add the soaked rice to the simmering water, stir once and cook for 6-8 minutes or until its just cooked. You still want a bit of bite in the rice.
6. Remove the rice from the water and set aside.
7. Place the marinated chicken onto a high heat and cook for 6-7 minutes, stirring every 1-2 minutes.
8. Remove half of the chicken, then sprinkle half of the rice on the chicken in the pot.
9. Next, add a layer of the crispy onions, some mint and coriander.
10. Place the rest of the chicken and repeat with the rice, crispy onions and herbs.
11. Place a clean tea towel over the lid of the pot and cover the biryani.
12. Turn your element to medium high for 10 minutes, then turn it down to very low for 30 minutes. Take from the heat and let it rest for 20 minutes before taking the lid off and serving.
13. Enjoy!

-Tamatar (Tomato) sliced 1 medium
-Hari mirch (Green chillies) 6-7
-Aalo bukhara (Dried plum) 4-5
-Podina (Mint leaves) 1 Cup
-Hara dhania (Fresh coriander) ½ Cup
-Biryani masala 1 tbs
-Lemon juice 1 tbs
-Cooking oil 1/3 Cup
-Pyaz (Onion) sliced 1 medium
-Sabut kali mirch (Black peppercorns) 1 tsp
-Zeera (Cumin seeds) 1 tsp
-Darchini (Cinnamon sticks) 2
-Badiyan ka phool (Star anise) 1
-Laung (Cloves) 3-4
-Hari elaichi (Green cardamom) 2
-Badi elaichi (Black cardamom) 2
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Tamatar (Tomato) sliced 1 large
-Dhania powder (Coriander powder) 1 & ½ tbs
-Namak (Salt) 2 tsp or to taste
-Lal mirch powder (Red chilli powder) 2 tsp or to taste
-Haldi powder (Turmeric powder) ½ tsp
-Garam masala powder 1 tsp
-Water 2 Cups
-Aalo (Potatoes) peeled & large cubes 2 medium
-Dahi (Yogurt) whisked ½ Cup
-Chicken mix boti 750g
-Zarda ka rang (Orange food color) ½ tsp
-Kewra water 1 tbs
-Cooking oil 3 tbs
Directions:
-In a bowl,add basmati rice,water,wash thoroughly and soaked for 30 minutes then strain soaked rice & set aside.
-In a pot,add water & bring it to boil.
-Add salt,star anise,bay leaves,cloves,lemon juice,cooking oil & mix well.
-Add soaked rice,mix well & boil until 3/4th done then strain & set aside.
-In a bowl,fried onion,tomato,green chilies,dried plums,mint leaves,fresh coriander,briyani masala, lemon juice,mix well & set aside.
-In a pot,add cooking oil,onion & sauté until translucent.
-Add black peppercorns,cumin seeds,cinnamon sticks,star anise,cloves,green cardamom,black cardamom & mix well.
-Add ginger garlic paste and mix well.
-Add tomato,mix well & cook until soft (2-3 minutes).
-Add coriander powder,salt,red chilli powder,turmeric powder,garam masala powder & mix well.
-Add water & mix well.
-Add potatoes,mix well and bring it to boil,cover & cook until potatoes are half done (5-6 minutes).
-Add yogurt & mix well.
-Add chicken,mix well and cook on medium flame until water is reduced (8-10 minutes).
-Add orange food color & mix well.
-Add & spread tomato & onion mixture,boiled rice,kewra essence and cooking oil,cover & cook on high flame for 4-5 minutes then steam cook on low flame for 8-10 minutes.
-Mix rice & serve with salad & raita!

-Bowl mein chawal aur pani dal ker thoroughly wash ker lein aur 30 minutes kliya bhego dein phir soaked chawal ko strain ker lein & side per rakh dein.
-Pot mein pani dal ker ubal lein.
-Namak,badiyan ka phool,tez patta,laung,lemon juice aur cooking oil dal ker ache tarhan mix ker lein.
-Soaked chawal dal ker mix karein aur 3/4th done ho janay tak boil ker lein phir strain ker ka side per rakh dein.
-Bowl mein fried pyaz,tamatar,hari mirchein,aalo bhukara,podina,hara dhania,biryani masala aur lemon juice dal ker ache tarhan mix ker lein & side per rakh dein.
-Pot mein cooking oil aur pyaz dal dein aur translucent hunay tak sauté ker lein.
-Sabut kali mirch,zeera,darchini,badiyan ka phool,laung,hari elaichi aur badi elaichi dal ker ache tarhan mix ker lein.
-Adrak lehsan paste dal ker ache tarhan mix ker lein.
-Tamatar dal ker ache tarhan mix karein aur naram ho janay tak paka lein (2-3 minutes).
-Dhania powder,namak,lal mirch powder,haldi powder aur garam masala powder dal ker ache tarhan mix ker lein.
-Pani dal ker ache tarhan mix ker lein.
-Aalo dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur aalo half done ho janay tak paka lein (5-6 minutes).
-Dahi dal ker ache tarhan mix ker lein.
-Chicken dal ker ache tarhan mix karein aur darmiyani ancch per pani reduce ho janay tak paka lein (8-10 minutes).
-Zarda ka rang dal ker ache tarhan mix ker lein.
-Tamatar & pyaz ka mixture dal ker pheela lein,boiled chawal,kewra essence aur cooking oil dal ker dhak dein aur tez ancch per 4-5 minutes kliya paka lein phir halki ancch per 8-10 minutes kliya steam cook ker lein.
-Chawal mix ker lein,salad & raita ka saath serve karein!
