How To make South African Vegetable Biryani
Ingredients

ghee

chili peppers, crushed into a paste OR 2 ts cayenne

ginger, 2 inch piece

garlic cloves

lentils, dried

pound
green peas, shelled
1/2
pound
carrots, chopped
1/2
pound
green beans, chopped

tomatoes, chopped

each
whole cloves
1
each
cinnamon stick, 4 inch piece
6
each
cardamom pods, crushed
1
teaspoon
turmeric
3
each
sprigs mint, pounded OR 1/2 ts dried mint
2
cup
long grain white rice
6
each
potatoes, chopped
2
teaspoon
salt
Directions:
In a large, heavy skillet, fry the onions in the ghee until golden. With a slotted spoon, remove 1/3 of the slices & set aside. Add to the pot, the ginger, garlic & chili paste. Fry for 5 or 6 minutes, stirring constantly. Add the lentils, peas, carrots & beans. Reduce heat & cook for 15 minutes. Add more ghee if necessary.
Add tomatoes, spices & mint. Stir for 5 minutes. Pour in 1 cup of very hot water, cover & simmer until the vegetables are half-cooked.
Add the rice, potatoes, salt & another 4-5 cups of hot water. Cover & cook for 20 minutes or until the rice is done & the water is absorbed. Garnish with the reserved onion slices.

Ingredients to feed 6+ people:
2 cups long grain rice, par
Rice boiled with 1 tbsp rough salt, 2 bay leaves, 1/2 tsp Hurdee
After boiling add 1 tbsp margarine and 1 tsp egg yellow colouring
For biryani
4 medium potatoes, cut and fried
2 carrots cut and fried
4 outer leaves of a cabbage
1 1/2 cup gadhra (Borlotti) beans
1 cup double (dubla) beans
1 cup mixed veg
1/2 cup frozen peas
1/2 cup biryani dhal soaked overnight
1 onion sliced
1 tbsp crushed ginger and garlic
A handful of curry leaves, mint, thyme, shallots/spring onions and dhania
1 tbsp rough salt (to your taste)
1 tbsp margarine
~1 tbsp biryani mix which includes bay leaves, cinnamon sticks, fennel and black elaichi
1 curry spoon mixed masala
1 tsp hurdee
1 tsp dhania powder
1/4 teaspoon yellow food colouring
1/2 cup oil
1/2 cup sour milk/maas
1.5 ltr water but will depend on how soft cooking your vegetables are
To serve - dhal and salad

Indian inspired spiced rice that will please every family members tummy.
This recipe makes enough to feed 8 very hungry people or a family of 4 for dinner one day and lunch the next! Halve recipe to make enough for 4.
Ingredients:
2 cups brown rice (rinsed)
2 cups lentils (rinsed)
1 L water or veggie stock
2 onions diced
6 jalapenos (optional)
2 large carrots diced
4 - 6 potatoes cubed
2 tsp garlic
3 cups of frozen or fresh veg of your choice - we used corn, peas and green beans (1 cup of each)
1 tsp cardamon
1/2 tsp ground clove - or a few whole cloves
4 - 5 bay leaves
1 stick of cinnamon - Ceylon
1 tsp black cumin seeds
2 aniseed stars
1 tsp ginger
4 tsp paprika
4 tsp coriander
1 tsp cumin
2 tsp masala - we used bombay masala
1 tsp cayenne pepper
1 tsp ground black pepper
The above is cooked in a Midea 6 Litre InstaChef Multi-Cooker. I used the stew setting for 13mins.

Ingredients Required For Making Chicken Biryani -
For Ginger Garlic Paste -
* 25 gm fresh ginger
* 45 gm/ 1 whole head of garlic
* 1 green chilli (optional)
* 1/3 cup water
For marinating chicken -
* 1.160 kg chicken on bones. Use large pieces
* 250 gm/ 1 cup plain unflavored yogurt(curd)
* 2 teaspoons kashmiri red chilli powder (please use just a teaspoon if you want to avoid the chilli heat or adjust proportion according to your preference)
* 1 teaspoon turmeric powder
* 2 teaspoons coriander powder
* 2 tablespoons Shan Biryani Masala. Put the leftover masala in an airtight container in the refrigerator. You can use it in any meat curry.
* 1 teaspoon salt
* 1 tablespoon oil
* 2 tablespoons chopped coriander leaves (cilantro)
* 3 to 4 mint leaves
* ginger garlic paste made earlier
For the curry -
* 200 ml / little less than three quarters of a cup of oil. Can also use a combination of ghee and oil.
* marinated chicken
* 2 dry bay leaves
* 475 gm onion ( use brown onions as shown in the video)
* 5 potatoes (optional)
* 1 teaspoon garam masala powder
For the rice - Always use less rice compared to the weight of chicken.
* 600 gms long grained Basmati rice rinsed till water runs clear and soak it in water for 30 mins. If using Sella Basmati, please soak it for over an hour.
* 1 tablespoon oil
* 1 tablespoon white vinegar/lemon juice
* 1 tablespoon salt
* 1 teaspoon Shahi jeera (optional)
* 2 dry bay leaves
* 5 to 6 green cardamoms, 5 cloves, 2 inch long cinnamon stick (if not using Shan Biryani Masala)
For Layering -
* 100 ml/1/2 cup warm milk with few strands to saffron crushed and soaked in it. Add 2 teaspoons Kewra water to it. You can also use Rose water if you do not like Kewra water.
* brown onions
* 4 tablespoons melted ghee/ skimmed out oil from curry( I used all of the skimmed out oil)
* chopped coriander leaves(cilantro)
* 10 to 15 mint leaves
* tiny pinch of yellow/orange food color (totally optional)
* 1 Tablespoon Biryani Masala
* 2 to 3 green/red chillies (optional)
* 1 tablespoon lemon juice
For Raita -
* heat a pan on medium heat. Add little less than a teaspoon of cumin seeds.
* stir the seeds on low heat till they become fragrant. Please do not allow seeds to turn too dark in color as they will get bitter.
* crush the seeds using a mortar and pestle or with the help of a rolling pin
* Beat 1/2 a cup of plain unflavored yogurt to a smooth consistency
* add the roasted crushed cumin seeds in the yogurt
* add 1/2 teaspoon chaat masala
* add 1 teaspoon sugar
* add 1/4 th teaspoon salt
* freshly crushed black pepper
* chopped coriander leaves.
Always taste your raita and adjust the seasonings accordingly. You can also add some grated cucumber (squeeze out the water before adding)
