How To make Smoked Salmon with Brown Soda Bread

3 c Torn greens (such as red
-leaf lettuce, frisee and -arugula) 1 lb Thinly sliced smoked salmon
-(such as Irish, Scottish or -Norwegian) 2 tb Drained capers
1 sm White onion, thinly sliced
24 Red cherry tomatoes or pear
-tomatoes 24 Yellow pear tomatoes or
-cherry tomatoes 2 tb Olive oil (preferably
-extra-virgin) A plate of smoked salmon with brown soda bread is a calling card in Ireland. In fact, the last thing my mother gave me as I was ending my latest visit home was a whole smoked salmon to bring back to the States. The greens and olive oil give a modern spin to my version of this classic starter. (Gerri Gilliland, author of article) Lemon wedges Unsalted butter Divide greens among plates. Top with salmon. How to make Catherine's Guinness Brown Bread and Salmon | Ireland AM
Catherine is back in the AM Kitchen to make some Homemade Guinness Brown Bread with Salmon, an ideal St Patrick's day brunch!

Ingredients:
450g/1lb Odlums Coarse Wholemeal Flour
2 level teaspoons Odlums Bread Soda
25g/1oz Odlums Pinhead Porridge Oats
4 tablespoons Shamrock Demerara Sugar
80g Shamrock Chopped Walnuts (optional)
50g/2oz Butter or Margarine
1 tablespoon Treacle
400ml Guinness
Instructions:
1) Preheat oven to 190°C/375°F/Gas 5. Lightly grease a 2lb loaf tin.
2) Put butter/margarine and treacle into a saucepan over low heat and allow the butter/margarine to melt.
3) Meanwhile, combine the wholemeal, pinhead, sugar and chopped walnuts into a bowl. Sieve in the bread soda and mix well.
4) When the butter/margarine has melted, add the Guinness and stir.
5) Add the liquid to the dry ingredients and mix well. Transfer mixture to the prepared tin and bake for about 40-50 minutes until risen and sounds hollow when tapped underneath.
6) Wrap in a clean tea towel and allow to cool.

A delicious demonstration of Hermine's Smoked Salmon and Chive Irish Soda Bread from Season 11 of Great British Bake Off. I watched this episode and was fascinated at how to make Irish Soda Bread, and also at all the ways to add extra ingredients and flavor. I love savory baked goods, so Hermine's recipe was especially attractive with the smoked salmon and chives. In this recipe demonstration, I used both smoked trout and smoked salmon. HERMINE’S SMOKED SALMON AND CHIVE SODA BREAD

from The Great British Bakeoff
200g plain flour
2 tbsp plain wholemeal flour
2 tbsp spelt flour
½ tsp baking powder
1 tsp bicarbonate of soda
½ tsp cream of tartar
2 tbsp porridge oats
3 tsp onion powder
30g salted butter, chilled
120g smoked salmon, very finely chopped
50g gruyère cheese, grated
15g chives, finely snipped
Good pinch of freshly ground black pepper
1 large egg
160ml buttermilk
1 tbsp runny honey
*slight variation in cooking time from the original recipe
Bake time: 45 minutes
Bake temp: 400F/200C
Bake in cast iron, if possible
Recipe summary: Whisk together dry ingredients (flour, baking powder, baking soda, cream of tartar). Stir in oats and onion powder. Cut in butter until flour mixture looks like sand. Stir in fish, chives, cheese, and pepper. Weigh together 1 egg and buttermilk to reach 210 mL. Whisk the honey into the egg/milk mixture. Stir into dry ingredients. Not working the dough, just combining wet and dry ingredients. Turn the dough out onto a floured surface and shape into a flattened ball. Cut a cross into the dough ball and bake for 45 minutes in cast iron at 400F/200C.
