How To make Seafood Kebabs In Pita Rounds
1 1/2 pounds shrimp
shelled and deveined
1 1/2 pounds scallops
1/2 cup olive oil
1/4 cup lemon juice :
fresh
2 cloves elephant garlic crushed
salt and pepper 12 whole mushroom :
fresh
12 whole scallion -- some green
6 whole wheat pita bread
12 bamboo skewers
plain yogurt, guacamole, salsa
Place shrimp and scallops in a shallow ceramic or glass dish. Combine oil, lemo n juice, garlic, salt, and pepper in a small bowl. Blend well and pour over sea food. Cover and marinate two hours in the refrigerator, turning the pieces occa sionally.
Heat coals in barbecue or preheat oven broiler. Pour off marinade from seafood and reserve. Thread shrimp and scallops alternating with vegetables on the skew ers. Place skewers on a broiler pan or about 7 inches above the coals. Cook, t urning frequently and basting with the reserved marinade until seafood is opaqu e, about 8 to 10 minutes.
Open the pocket of warmed pita bread rounds and slide the cooked kebabs inside. Offer plain yogurt, guacamole, and salsa as condiments to accompany the kebabs .

Greek Food! Souvlaki (Chicken Gyro)
MARINADE
1/2 cups greek yogurt
¼ cup lemon juice
1 tbsp olive oil
1 tsp salt
2 garlic cloves
1 tsp coriander powder
1 tsp paprika
1 tsp ground cumin
½ tsp cayenne pepper
1 tsp black pepper
1 tsp oregano
1 tbsp red wine vinegar
Tzatziki
1 cucumber
1 cup greek yogurt
1 garlic clove
1-2 tbsp fresh mint
1-2 tbsp olive oil
Marinade chicken at least 2 hours.
For sauce, salt the cucumber, grate, and remove as many liquid as you can.

How To Make Persian Mahi Kebab (Kabab Mahi) [Salmon Kebabs]
3 salmon fillets (app 800g)
1 coarsely diced onion
1 tsp salt
1/2 tsp black pepper
1/2 tsp ground coriander
1/2 tsp ground turmeric
juice of 1 lime
2 crushed garlic cloves
1 tbsp saffron water
Garma garam Seekh Kabab(hotel jaisay????)with turkish pita bread????-Dinner in lawn after a long time????️
ASLI SEEKH KABABS (AUTHETIC TASTE AND TEXTURE)
INGREDIENTS
• Onion 1 medium
• Green chilies 4-5
• Coriander 1 big bunch
• Chicken boneless 1 kg
• Coriander Seeds 1 tbsp full (coarsely crushed)
• Cumin Seeds 1/2 tbsp (coarsely crushed)
• Salt to taste
• Chili powder 2 tbsp
• Turmeric powder 1/2 tbsp
• Garam Masala 1.5 tbsp
• Coriander powder 1 tbsp
• Cumin powder 3/4 tbsp
• Ginger paste 1.5 tsp
• Garlic paste 1.5 tsp
• Some skewers
• Oil for shaping the kababs and frying.
For Garnish
• Onion Rings
• Lemon wedges
• Sumac
• Fresh chopped coriander
PREPARATION
1. Wash the chicken and pat dry. There should be no moisture in the Grind/chop the boneless chicken into fine mince.
2. Add onion, green chilies and fresh coriander and chop again as fine as possible (trick to get restaurant style kabab texture.
3. Take the mince out in a bowl and add coarsely crushed coriander seeds and cumin seeds.
4. Add salt, red chili powder, turmeric powder, garam masala powder, coriander powder and cumin powder. Add ginger and garlic paste as well.
5. Cover and refrigerate overnight.
6. Next day, shape into big sized kababs on skewers and freeze for half an hour to firm the shape up a little bit.
7. Grill on a greased griller or shallow fry in a pan for 5-6 minutes until cooked through.
8. Do not overcook otherwise the kababs will become dry due to loss of moisture.
9. Serve immediately with poori paratha/naan/roti and mint raita.

TURKISH FLAT BREAD (PITA BREAD VARIANT)
INGREDIENTS
• All-purpose flour 500 Grams
• Active Dry Yeast 2 tbsp
• Salt 1 tsp
• Oil 3 tbsp
• Milk 3/4 cup (Luke warm)
• Water 3/4 cup (Luke warm)
• Some extra water for kneading
Topping
• Sumac/fresh coriander chopped
• Butter
PREPARATION
1. Sift the all-purpose flour into a big bowl.
2. Add yeast and salt and mix.
3. Add oil, warm milk and warm water and mix to form a dough. Add more water if needed.
4. Knead for a few minutes to form and smooth dough. Dough should be firm and not too soft.
5. Shape the dough into a ball and apply oil all over.
6. Cover and allow to rise until the dough is double in size (about 1 hour)
7. Take out of the bowl, deflate and cut into 6 equal sizes. Shape into 6 doygh balls.
8. Put a pan on medium to low heat (not too low).
9. Roll the dough balls one by one into a flat sheet, a little thick than our traditional chapati).
10. Heat on both sides until cooked.
11. Take out in a plate and apple butter and sumac.
12. If you don’t have sumac you can add chili flakes, fresh coriander etc.
13. Enjoy while hot with my asli seekh kababs.
CHILKA MOONG DAL WITH SABZI (SPLIT GREEN LENTIL WITH VEGGIES)
INGREDIENTS
• Chilka Moong Dal (split Green Lentil) 1 cup
• Water 4-5 cups
• Salt to taste
• Red chili powder 1/2 tbsp or to taste
• Turmeric powder 1/4 tbsp
• Chicken stock cube 1 (optional)
• Garam Masala 1/4 tbsp
• Coriander powder 3/4 tbsp
• Yellow bell pepper (or green) 1 chopped
• Fresh green coriander chopped
For the tarka (tempering)
• Onion 1 medium (sliced)
• Desi Ghee (Clarified Butter) 1-2 tbsp
• Tomato 1 medium, chopped coarsely
• Green chilies 4-5 split
• Cumin seeds 1 tbsp
PREPARATION
1. Wash the lentil and add to a pot along with the water and turn the flame on.
2. Add salt, red chili powder and turmeric powder.
3. Cook until soft.
4. In a pan, add desi ghee and sliced onions. Cook until the onions are soft.
5. Add tomatoes, green chilies and cumin seeds. Cook until the tomatoes are soft.
6. Add this tempering to the lentil along with bell pepper, chicken cube, garam masala and coriander powder. Cover and cook on low until all are well combined.
7. Garnish with fresh coriander and serve the Chilka Moong Dal with chapati or rice.
8. Enjoy!

I have brought this easy Turkish kebab recipe for you all. This is a minced mutton kebab recipe in specific. You can very easily make these kebabs at home and enjoy the flavors of Turkey sitting at your home, in any part of the world.
The recipe is so easy, and ingredients are very easily available, as I have given replacement to traditional recipe, it will give you the same flavor and texture.
I am showing two cooking methods here, cooking on BBQ and cooking on a nonstick , for those who like in flats and cant arrange BBQ.
