How to make Perfect Raw Indian Green Round Cucumber Salsa easily(recipe):
This is VEGAN,GLUTEN-FREE & NUT-FREE
This is one of my favorite salsa which my mom used to make when I was a kid. This will taste amazing with hot rice and a dollop of ghee(clarified butter) and also goes well with breads, rotis and dosa.
Ingredients:
• 1 Big size Indian Raw Green Round Cucumber, diced to small pieces with seeds, it tastes good(you can remove seeds if you like)
• 1 Medium size diced tomatoes/cherry tomatoes,
• 4 Green Chilies(or per your taste)
• 1 teaspoon Cumin(Jeera - Indian spices, it is optional)
• 1/4 teaspoon Curcumin(Turmeric - Indian spices, it is optional)
• 2 to 3 teaspoons extra virgin olive oil
• 7 to 8 Garlic cloves
• 1 teaspoon lemon juice(optional)
• 2 tablespoons fresh cilantro
• salt per your taste
For talimpu/tempering:
Mustard seeds - 1 tbsp, Jeera- 1 tbsp, minapappu(urad dal) and sanagapappu(chana dal) 1 tsp each, 1 red chili, Curry leaves, cilantro.
Procedure:
1. Wash, peel and cut the cucumbers into small pieces.
2. Add tsp of oil in a pan and sauté slit green chilies. You can put lid, stir in frequently and let it cook.
3. Add tomato pieces and sauté it for few seconds or until the tomato is half cooked.
4. Off the stove and let all these cool down.
5. Add Cumin, and 4 Garlic cloves and all these above cooled vegetables to Grinder and grind them to a coarse/rough paste.
6. (Since this is Raw cucumber salsa, we don't sauté cucumber)In separate bowl take our Raw Green round Cucumber pieces and add Turmeric, salt and mix well.
7. Add all the grinded coarse paste to this bowl and mix well.
8. Put talimpu/tempering: In a pan, heat 2 tsps of oil, then add Mustard seeds - 1 tbsp,Jeera- 1 tbsp, minapappu(urad dal) and sanagapappu(chana dal) 1 tsp each,
1 red chilli,Curry leaves.
9. Mix tempering into our grinded coarse paste and mix well.
10. Garnish with Cilantro.
11. Optional- you can mix 1 tsp of lemon juice(usually we don't need this as the Indian round cucumbers are little sour)
12. Our very tasty, healthy, Perfect Indian Raw Round Cucumber Salsa is ready. Please try it and enjoy!

Southe Munchi Ingredients:
Mangalore cucumber - 1 no.
Turmeric powder- 1/4 tsp
Salt - 1 tsp
Tamarind - lemon sized
Jaggery - 2 tsp
TO POWDER:
Cumin seeds - 1 tsp
Black pepper - 1 tsp
TO TEMPER:
Oil - 1 tbsp
Mustard seeds - 1/2 tsp
White lentils - 1/2 tsp
Curry leaves - few
Red chilliy broken- 2
SERVES 3 people
Southe Saasmi Ingredients:
Mangalore cucumber - half sized
Turmeric powder - 1/4 tsp
Salt - 1.5 tsp
TO GRIND:
Coconut - 3/4 cup
Mustard seeds - 1/2 tsp
Red chillies - 3 nos.
Tamarind - Marble sized
Water - 1/2 cup (as needed)
Slightly thick gravy and serves 4 people.
Southe Huli (temple style) Ingredients:
Mangalore cucumber (southe kayi) - 1 no.
Tamarind - lemon sized
Jaggery - 1.5 tbsp
Salt - 1 tbsp
Turmeric powder - 1/4 tsp
Cooked lentils (toor dal) - 1/2 cup
TO ROAST and GRIND:
White lentils - 2 tsp
Coriander seeds - 1 tbsp
Cumin seeds - 1 tsp
Fenugreek seeds - 1/4 tsp
Red chillies (byadagi) - 4 nos.
Curry leaves - few
Coconut - 1/2 cup
TO TEMPER:
Oil - 2 tsp
Mustard seeds - 1/2 tsp
White lentils - 1/2 tsp
Red chilly - 1 no.
Curry leaves - few

Cucumber & Cheese Rolls
Ingredients:
1 cucumber
100 grams vegan white cheese
finely chopped red bell pepper
fresh dill
Preparation
In a medium bowl, add in cheese & mash
Add in finely chopped bell pepper & dill
Stir all ingredients to combine.
Using a vegetable peeler or mandoline, peel the cucumbers lengthwise into thin slices.
Spread a small spoonful of filling over a cucumber slice.
Starting from one end, roll the cucumber into a spiral. Repeat with remaining cucumber slices and filling.
Cucumber Avocado Rolls
Ingredients
1 Avocado
½ of a lime
salt
black pepper
1 cucumber
1 medium-size carrot( finely slice into strips)
red & yellow bell pepper( finely slice into strips)
Instructions
Into a mixing bowl, add the avocado & lime juice.
Mash with a fork. Season with salt & pepper.
Use a mandoline or potato peeler to cut long thin strips from the cucumber. Take a cucumber strip and spread a thin coat of the avocado mixture along the length of the cucumber. Roll it up needed.
Do the same with the rest of your cucumber strips.
