1 cn Salmon, red (14.75 oz)
- drained, flaked - skin & bones removed 1/3 c Yogurt Cheese
1 tb Lemon juice
2 ts Lemon zest (rind wo/pith)
1 ts Garlic salt
1 ts Seasoned pepper
1 ts Tarragon leaves, dried
- crushed 1/4 c Scallions
- minced 32 sl Cucumber
12 lg Olives
- sliced 1/4" In bowl combine salmon, Yogurt Cheese, lemon juice and zest, garlic salt, seasoned pepper, tarragon and scallion; blend well. Miture can be covered and store in refrigerator for 2 to 3 days. When ready to serve, spoon salmon mixutre into pastry tube fitted with wide tip and pipe onto cucumber slices. Garnish each with olive slice. Nutritional Analysis per serving: 25 calories, 3 g. protein, 1 g. carbohydrates, 1 g. fat, 0 g. dietary fiber, 6 mg. cholesterol, 158 mg. sodium. Cucumber & Cheese Rolls
Ingredients:
1 cucumber
100 grams vegan white cheese
finely chopped red bell pepper
fresh dill
Preparation
In a medium bowl, add in cheese & mash
Add in finely chopped bell pepper & dill
Stir all ingredients to combine.
Using a vegetable peeler or mandoline, peel the cucumbers lengthwise into thin slices.
Spread a small spoonful of filling over a cucumber slice.
Starting from one end, roll the cucumber into a spiral. Repeat with remaining cucumber slices and filling.
Cucumber Avocado Rolls
Ingredients
1 Avocado
½ of a lime
salt
black pepper
1 cucumber
1 medium-size carrot( finely slice into strips)
red & yellow bell pepper( finely slice into strips)
Instructions
Into a mixing bowl, add the avocado & lime juice.
Mash with a fork. Season with salt & pepper.
Use a mandoline or potato peeler to cut long thin strips from the cucumber. Take a cucumber strip and spread a thin coat of the avocado mixture along the length of the cucumber. Roll it up needed.
Do the same with the rest of your cucumber strips.

- Smoked salmon
- Cream cheese
- Cucumber
== RECIPE ==
Version One:
1. Slice the cucumber into slices
2. Put some cream cheese ontop
3. Put smoked salmon ontop
Version Two:
1. Slice the cucumber with a potato peeler
2. Put some cream cheese on it
3. Chop up the salmon really fine and put it on the cream cheese
4. And then roll it up
Version Three:
1. Chop the cucumber and the salmon
2. Put it in a bowl
3. Add cream cheese and season with pepper
4. Mix and present in a cute little pot

1 large cucumber
1 tbsp dill chopped
3 oz hot smoked salmon

1. Combine softened cream cheese, chopped dill, and smoked salmon into a smooth spread.
2. Using a vegetable peeler, peel the cucumber into thin strips.
3. Spread the smoked salmon spread onto each strip and roll-up. Serve chilled.

Salmon cucumber canapés
4 oz / 113 g smoked salmon
1 medium cucumber
1 tbsp lime / lemon juice
1 tbsp finely chopped onion
1 tbsp mince fresh parsley
1/2 tsp Dijon mustard
a pinch of ground pepper
fresh parsley to garnish

Cucumber and Smoked Salmon Appetizer | Low Carb and Keto Snack Idea
Such a simple, impressive and delicious appetizer! Ready in less than 10 minutes. Easy to make as little or as many as you need. The smoked salmon paired with the cream cheese, fresh dill and lemon on top of the cucumber is just delicious! Kind of reminds me of a Philadelphia Sushi Roll. :) Yum!
You'll need:
Cucumber
Sea Salt
Cream Cheese (approx 1 tsp per slice)
Fresh Dill
Smoked Salmon
Fresh Lemon
1. Wash the cucumber. Peel it. Cut into 1 inch slices and pat dry with a paper towel. Sprinkle with some sea salt.
2. Spread about 1 teaspoon of cream cheese onto each slice and add some fresh dill.
3. Using a sharp knife, cut the salmon into strips. Fold into thirds and place on top of the dill. If it’s not staying down, feel free to add a toothpick.
4. Splash some lemon juice on top and serve!
