For this one, I'm showing you the best way I know how to make cinnamon raisin bread and how you can really up the ante on this breakfast (or brunch or dessert or anytime) fav.

FOR THIS RECIPE, YOU'LL NEED:
▪220g or just under 1c warm water
▪90g or 3/8c room temp buttermilk
▪5g or 2tsp instant yeast
▪65g or 1/3c sugar
▪525g or 4 1/4c ap flour (11.7% protein)
▪14g or 2.5tsp salt
▪130g or 9tbsp melted butter
▪Eggwash (1 egg + couple teas water)
▪cinnamon sugar blend (10g / 4tsp ground cinnamon, 100g / 1/2c brown sugar, 2g / 1/3tsp salt)
▪150g or 1c raisins
Into a medium mixing bowl, measure water, buttermilk, yeast, sugar, flour, salt, and melted butter. Stir to combine with a spoon. Once combined well, use a very wet hand to squeeze and mix until fully combined. Cover and let sit for 30 minutes.
Conduct 4-5 strength building folds followed by 10-12 slap and folds as shown @1:45. Cover again and let sit at room temp for another 30 minutes. Conduct another set of stretch & folds + slap & folds. Cover and allow to ferment at room temp for 90 minutes.
Turn out dough onto a lightly floured work surface and flour top of dough and rolling pin. Roll out into approximately 24x12-16 sheet that's about 1/2 thick. Brush top of dough with egg wash. Sprinkle with cinnamon sugar mixture followed by raisins in an even layer. Roll tightly (starting at a short edge) then cut in half lengthwise. Twist one half over the other, keeping the cut sides facing up (see @6:26).
In the meantime, butter all sides of an 8.5x4.5 (or 1 pound) loaf pan. Place into well buttered bread pan. cover with a towel and let rise at room temp for 1 hour. Brush top with egg wash. Bake in a preheated 400F/204C oven for 30min. Tent with foil, lower oven temp to 350F/176C, and finish baking for 15-20min. Once cooled, cut into slices, toast, add a little butter and enjoy.

100g California raisins (2/3 cup)
390g all purpose flour (3 cups)
180ml warm milk (¾ cup)
140g unsalted butter (2/3 cup)
1 ¼ tsp salt
1 tsp instant yeast
1 egg
2 tsp cinnamon powder
70g brown sugar (1/3 cup)
80g cream cheese (2/3 cup)
50g powdered sugar(1/3 cup)

Cinnamon Raisin Buns • Tasty • How to Make Fluffy Raisins Rolls • Valentine Rose Buns
Cinnamon Raisin Bun (Rose shaped)
This rose shaped lightly sweet fluffy goodness is so easy to make that you won't be able to stop at just one.
When served with a cup of coffee, it tastes heavenly.
Bake them for you loved ones...Coz it is ROSE DAY guys...
Ingredients required:
Dough:
1. All-purpose flour- 250g (2 cups)
2. Milk – ½ cup (125ml)
3. Active Dry yeast - 1 tsp
4. Granulated Sugar - 1 tablespoon
5. Egg - 1 large
6. Unsalted butter - ¼ cup
7. Salt - 1 teaspoon
Fillings:
1. Raisins – ½ Cup
2. Cinnamon – 1 tablespoon
3. Granulated sugar- 3 tablespoon
One extra egg for glazing the buns.
Recipe:
For dough:
1. In a small bowl add ½ cup of lukewarm milk followed by granulated sugar. Mix till the sugar dissolves.
2. Once the sugar dissolves add dry active yeast. Mix well and set aside for 10 min or till bubbles start to appear on milk surface.
3. In a separated bowl add all-purpose flour, salt and butter.
4. Also crack an egg in the bowl.
5. Mix all the ingredients to form a soft dough.
6. On a flat on a lightly dusted surface, knead the dough for a at least 5 minutes. This will help to make the buns soft when baked later.
7. Place the dough back in the bowl & cover it using a cling wrap.
8. Let it rest in a warm place for 45- 1 hour or till the dough doubles in size.
9. Once it doubles. Punch the dough and form into a round shaped ball.
Shaping the dough:
1. Place it on a flat surface or tabletop. Using a dough cutter divide the dough into equal 12 equal sections.
2. Dust the work top with some flour.
3. With the help of a rolling pin flatten each section into an oval/rectangular shape of 6 to 7 inches in length.
4. Add the sugar cinnamon mixture on the rolled dough. Spread it evenly. Also, put few raisins.
5. Roll it length wise and cut in half lengthwise, leaving one end attached.
6. Now twist the two sections kind of intertwining each other.
7. Roll the twined section to form a rose shape. Tuck it at the end.
8. Repeat the process with other 11 sections.
9. Keep all the rose buns on a butter paper lined baking tray.
10. Cover it using a cling wrap and keep aside for 30 minutes.
11. After 30 min you will notice that the buns have doubled in size.
12. Apply some egg wash/beaten egg using a brush on all the buns.
13. Preheat the oven to 180 degrees and bake for 20-22 minutes.
14. Your tasty, lightly sweet Cinnamon raisin buns are ready!!!
15. Enjoy with a cup of coffee or tea.
