Super Easy No-Bake Cheesecake (No Egg, No Gelatine, No Condensed milk)
This no-bake vanilla cheesecake is with smooth creamy filling, perfectly combined with a biscuits base that has a slight salty touch to it. Great combo! Super easy and doesn't require gelatine. Do try!

---------------------------------- RECIPE ------------------------------------
✨Ingredients✨
***For the Crust***
125g (4 oz) cookies crumbs (Leibniz Butterkeks, Oreo, digestive bisquits etc.)
1/4 cup (50g) butter, melted
***For the Cheese filling***
1+1/3 cups (300 g) Full fat Cream cheese, room temperature
5.3 oz (150g) white chocolate
3/4 cup (200ml) Heavy cream
1 teaspoon Vanilla extract
????????Instructions
✅Line the sides and the bottom of 7-inch (18 cm) springform pan.
✅To make the crust: crush cookies into fine crumbs (using a food processor or a Ziploc bag). Add melted butter and mix until combined. Press into bottom of 7-inch (18 cm) springform pan. Refrigerate while making the filling.
✅Melt a white chocolate over the water bath. Allow to cool down slightly.
✅Add cream cheese and vanilla mix until everything is combined and smooth and there are no lumps in the mixture.
✅In a separate bowl whip heavy cream to medium peaks. Gradually fold into the cheesecake mixture.
✅Pour the filling into the pan.
❄️Refrigerate overnight
✅Decorate the top of the cake with cookies crumbs or with fresh fruits if desired
**Storage:**
✅Store in the fridge up to 3 days or freezer up to 1 month

Although US volume measurements have been included for your convenience, it is highly encouraged that you weigh your ingredients using a kitchen scale to get the best possible results. This delicious home made New York Style cheesecake may be gluten free and sugar free but no one will ever know it! Perfect for keto and ketogenic diets, and low carb and even diabetic! You can exchange the sugar substitutes to fit your particular goals. I have also included a link to a recipe for a low carb non - nut crust for those that have tree nut allergies. Bon Appetit!

CRUST - 9 Inch Spring form Cheesecake pan.
You will need: 2 1/2 cups of walnuts, coarsely ground in food processor ( or you can buy them that way), 4 tablespoons of butter, two tablespoons of granular sugar substitute. 2 teaspoons of ground cinnamon.
Heat oven to 350. Combine all ingredients in a bowl and mix together with a fork. Mixture will be course.
Press mixture firmly and completely cover the bottom of the cheesecake spring form pan. Bake for 10 minutes. Remover from oven and reduce the oven temperature to 325.00

CHEESCAKE FILLING
What you will need: 4 8oz packages of cream cheese and 5 eggs at room temp.
1 cup of sourcream
2 teaspoons of vanilla extract
3/4 cup of sugar substitute + 10 drops or 10 packets of Stevia sweetener.
Zest of one each, orange, lemon, lime.
In a large bowl, combine cream cheese, sugar substitue, Stevia, and vanilla. Cream until smooth and all lumps are removed.
Add sour cream and mix again for about a minute. Then add one egg at a time, just beating egg into the batter, then adding the next egg. We don't want to much air in the batter. After the last egg is added, add the zests, and beat mixture 2 minutes scraping sides often.
Pour batter into cheesecake pan with crust ad bake for 45 minutes to an hour. Sides will rise and brown slightly while middle stay lower and gels. Turn oven off and leave door closed for an additional 10 minutes then crack the door to allow the cake to cool very slowly. This takes about half an hour.
Remove cake from oven and allow it to cool further for another half hour and then unlatch the spring form part of the pan and remove it. Cake needs to cool about another half hour then should be refrigerated overnight to completely set.
Top with your favorite sugar free or preferred topping.
