2/3 c : Sugar
1 c : Sifted Unbleached Flour
2 ts : Warm Water
1 ts : Cinnamon
1 ts : Vanilla
1/2 c : Seedless Raisins
1/4 ts : Salt
1/2 c : Liquid Egg Substitute
1 tb : Brandy
3 tb : Sugar
1/2 c : Walnuts; Chopped
3 tb : Plain Nonfat Yogurt
1/3 c : Corn Oil
1/4 ts : Nutmeg
2 : Very Ripe Persimmons,
3 tb : Brandy

Ingredients for baking persimmon cake:
persimmon: 1 glass
Pastry flour: 2 glasses
Sugar: 1 glass
Eggs: 4 pcs
Oil: three quarters of a glass
Walnuts: 5 pcs
Baking powder: 1 tablespoon
Cinnamon powder: 1 small spoon
Vanilla: 1 small spoon
50 minutes at 180 degrees Celsius

Persimmon Upside-Down Cake
8 tablespoons unsalted butter
1 cup plus 2 tablespoons real maple syrup (grade B if you can get it, but grade A is fine as long as it's the real thing)
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine table salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 large egg at room temperature
1 large egg yolk at room temperature
2/3 cup buttermilk
1/2 cup finely chopped roasted pecans
2-3 ripe fuyu persimmons, cut into slices parallel to the equator, about 1/4-inch thick
Maple Cream
1 cup heavy whipping cream, well-chilled
2 tablespoons real maple syrup, well-chilled
1/8 teaspoon ground cinnamon
