How To make Persimmon Spice Cake
4 to 6 very ripe, soft persimmons, yielding 1 1/4 cup pureed pulp
1 teaspoon baking soda
1/2 cup butter
1 cup sugar
1 egg
1 3/4 cups unsifted flour
1 teaspoon cinnamon
1/2 teaspoon each fresh nutmeg and ground cloves
1/2 cup walnuts
1 teaspoon each orange and lemon zest
Puree persimmons until smooth and stir in baking soda. Mix well. It will set. Weird but not to worry.
Beat butter and sugar until fluffy. Add egg and persimmon mixture. Combine flour and spices and add to persimmon mixture. Blend well, stir in nuts and zest. Spoon into a 9 inch greased cake pan. Bake at 350 for about 40 or more until knife comes out clean.
Before serving, sprinkle with powdered sugar
This recipe can be increased with no adverse effects, except perhaps your waistline. The cake freezes well, although don't powder sugar until it's time to serve.
The original recipe calls for 2 tsp of baking powder, to be added with the flour. However, it was rather serendipitous that our baker over looked it. The resulting cake is very moist and dense but not too heavy. You can try with the baking powder if you want. But our version omits it.

Persimmon cake: a fluffy dessert to try!
INGREDIENTS
4 eggs
120ml Oil
80g Sugar
300g Flour
120g Chocolate chips
300g Persimmon
16g Baking powder
Icing sugar
METHOD
Pour the eggs into a bowl, add oil, sugar, and mix. Add persimmon pulp and mix again.
Add chocolate chips, flour, baking powder, and mix again. Pour into a circular baking tray.
Bake for 30 minutes at 180 ºC (356ºF) Use a toothpick to check that it is cooked. Sprinkle with icing sugar to serve.

Persimmon Cake
Ingredients:
Persimmon: 2 pc.
Eggs: 4 pc. (room temp)
Flour: 3 cups
Sugar: 1 cup
Olive Oil: 1 cup
Vanilla: 1 tsp
Cinnamon: 2 tsp
Walnut: 5 pc. (toasted, roughly chopped)
Preheat oven to 330 degrees F (165 degrees C). Grease and flour a cake pan. Sift together the flour and baking powder in a bowl, set aside. Whisk together the eggs, persimmon puree, sugar, cinnamon, olive oil, and vanilla in a separate bowl until smooth. add the flour mixture into the persimmon mixture while sifting the flour mixture and beat until no dry lumps remain. Pour into the prepared pan. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pan for 10 minutes, then remove from the pan
