How To make Indiana Persimmon Almond Pudding Cake
1/2 cup Butter
1 1/4 cups Sugar
2 Eggs
1 3/4 cups All-purpose Flour
1 1/2 teaspoons Baking Powder
1/4 teaspoon Salt
1/2 teaspoon Baking Soda
1 cup Sieved Persimmon Pulp
1/4 cup Buttermilk
1 cup Ground -- unblanched almonds
Sugar
Preheat oven to 350 degrees. In a large bowl of electric mixer, place butter and sugar. Beat together until very light and fluffy. Add eggs, one at a time, and beat smooth.
In a small bowl, stir flour with baking powder, salt and soda. Add dry ingredients alternately with persimmon pulp (made by putting about 1 pt. of ripe persimmons through ricer or mashing and sieving) and buttermilk to the creamed mixture, mixing until smooth. Stir in ground almonds.
Pour into greased 10" tube pan. Bake for 45-55 min., or until a toothpick inserted into center of cake comes out clean.
Cool in pan about 15 min. before turning out. If desired, dust each slice with powdered sugar and garnish with fresh red and green grapes.

ingredients:
1 c of persimmon pulp
1 c white sugar
1 L egg
1 c flour
1/2 c milk
1/2 c evaporated milk
1 tsp baking powder
1 tsp cinnamon
2 tbs butter
for the syrup
1 c brown sugar
1 tbs flour
1 c water
1 tbs butter
preheat the oven a 350f/175c
bake for 30-35 m
pour syrup and return to oven for 5 m more
let it cool before serving

Persimmon Pudding My Way~ by Roxanne Rogers
David Graham created the music I used in this short slide show of me making persimmon pudding. The previous version had no music. I hope you like them both! Or, one over the other if you want! I think the music makes this soooo much tastier. David is a gem. I know him through Melanie, who was my friend back in the Bloomington days of old, and was David's wife until she passed away... way too young. I bet she is somewhere out there ... laughing at how much energy I have put into this silly little video!

Persimmon Pudding baking
This is just a few seconds of a persimmon pudding baking in our oven.
My mother's recipe calls for baking about 45 mins. At 375 then adding sugar, butter, plus a little bit of boiling water to the top and then bake a little longer until the extra water is gone.
This video was taken about 15 minutes into the second baking phase. I was struck by how the water was bubbling up around all of the edges of the dish. The extra water was only added to the top, not the sides!
