1/2 c Shortening 1 c Sugar 1 c Persimmon pulp 2 Eggs 1/4 ts Soda 2 c Sifted flour 3 ts Baking powder 1/2 ts Salt Cream the shortening and sugar together, add the persimmon pulp and beaten eggs. Sift the dry ingredients and add to the liquid mixture. Beat well, then pour into a greased pan and bake in a moderate oven (325 to 350 degrees) for about an hour Source: Publix leaflet. Here’s your fact of the day: the persimmon is Japan’s national fruit! If you’ve never seen one before, well, they kind of look like an orange tomato! But unlike a tomato, you have to peel them. And they are sweet. And they don’t have gooey little seeds in them. So basically they are nothing like a tomato except the outward appearance. Oooh, here’s another fun fact. Did you know that tomatoes and persimmons are both berries?! Yup, Wikipedia just told me. Interesting huh?

Pour the eggs into a bowl, add oil, sugar, and mix. Add persimmon pulp and mix again.
Add chocolate chips, flour, baking powder, and mix again. Pour into a circular baking tray.
Bake for 30 minutes at 180 ºC (356ºF) Use a toothpick to check that it is cooked. Sprinkle with icing sugar to serve.
