Recipe in English:
Ingredients:
-Sabut kali mirch (Black peppercorns) 2 tbs
-Beef steak undercut 400g (200g each)
-Worcestershire sauce 1 tbs
-Namak (Salt) ½ tsp or to taste
-Dried thyme ½ tsp
-Cooking oil 2 tbs
-Butter 1 tbs
-Butter 2 tbs
-Lehsan (Garlic) crushed ½ tsp
-Maida (All-purpose flour) 1 tbs
-Yakhni (Stock) ½ Cup
-Pakola Full Cream Milk 1 Cup
-Worcestershire sauce 2 tsp
-Namak (Salt) ½ tsp or to taste
-Cooking oil ½ tbs
-Butter ½ tbs
-Yellow bell pepper julienne ½ Cup
-Red bell pepper julienne ½ Cup
-Shimla mirch (Capsicum) julienne ½ Cup
-Pyaz (Onion) sliced ½ Cup
-Namak (Salt) to taste
-Makhan (Butter) 1 tsp
Directions:
-In frying pan,add black peppercorns and dry roast until fragrant.
-Let it cool.
-In mortal & pestle,add roasted black peppercorns,crush coarsely & set aside.
-In a bowl,add beef steak,worcestershire sauce,salt,dried thyme,black pepper crushed (2 tsp) and mix well,cover & marinate for 30 minutes.
-Heat cast iron pan,add cooking oil,butter and let it melt.
-Add marinated beef steak and cook from both sides until done (6-8 minutes each side).
-On the same frying pan,add butter and let it melt.
-Add garlic and mix well.
-Add all-purpose flour,mix well and cook for a minute.
-Add 1 tbs black pepper crushed (reserve remaining for later use) and mix well.
-Add stock,milk and whisk well.
-Add worcestershire sauce,salt and mix well,cook until sauce is thick,whisk continuously & set aside.
-In a wok,add cooking oil,butter and let it melt.
-Add yellow bell pepper,red bell pepper,capsicum,onion,remaining black pepper crushed,salt and stir fry for a minute.
-Heat sizzler pan,add butter and let it melt.
-Add stir fried vegetables,beef steak and peppercorn sauce & serve!

-Bowl mein beef steak,worcestershire sauce,namak,dried thym aur kali mirch crushed (2 tsp) dal ker ache tarhan mix karein aur dhak ker 30 minutes kliya marinate ker lein.
-Cast iron pan ko garam karein,cooking oil aur makhan dal ker melt ker lein.
-Marinated beef steak dal dein aur dono sides sa paka lein (6-8 minutes each side).
-Us he frying pan mein makhan dal ker met ker lein.
-Lehsan dal ker ache tarhan mix karein.
-Maida dal ker ache tarhan mix karein aur ek minute kliya paka lein.
-1 tbs kali mirch crushed (reserve remaining for later use) dal ker ache tarhan mix ker lein.
-Yakhni aur doodh dal ker ache tarhan whisk ker lein.
-Worcestershire sauce aur namak dal ker ache tarhan mix karein aur sauce garha ho janay tak paka lein aur musalsal whisk kertay rahein & side per rakh dein.
-Karahi mein cooking oil aur makhan dal ker melt ker lein.
-Yellow bell pepper,red bell pepper,shimla mirch,pyaz aur remaining kali mirch crushed aur namak dal dein aur ek minute kliya stir fry ker lein.
-Sizzler pan ko garam karein aur makhan dal ker melt ker lein.

Kerala Style Beef Roast | Authentic Beef Roast Recipe | Nadan Beef Varattiyathu | Beef Ularthiyathu
Kerala Beef Roast is a traditional styled ethnic dry curry dish very popular in Kerala. Keralites favorite Nadan Beef Varattiyathu! Also called Beef Ularthiyathu. If anyone asks me what would be best with beef then I would tell them – “Beef Roast”. This mouth drooling Malabar Style Beef Roast is unique with pressure cooked beef roasted dry with coconut flakes and other spicy seasonings. The roasting process takes about 15 to 20 minutes. But I would say the more you roast the more tastier beef roast you get. This Beef Roast dish is so simple to make and goes really well with a side of thoran (vegetable dish) and some buttermilk curry (yellow moru curry) to go over matta rice.
This dish also goes perfect with appam, tapioca, puttu, pathiri etc.

Ingredients :
750 gms Beef (washed & cut into small cubes)
For the Masala Paste :
25 to 30 (60 gms) whole Shallots
1 medium sized (75 gms) Onion - roughly chopped
2 inch Ginger (20 gms)roughly chopped
15 cloves (25 gms) Garlic medium sized
2 tbsp Coriander Powder
1 tbsp Kashmiri Red Chilli Powder
1 tbsp Garam Masala Powder
1 tsp Turmeric Powder
½ tsp Pepper Powder
1 tsp Fennel Seeds (saunf)
½ tsp Cumin Seeds
100 ml Water
Other ingredients :
5 to 6 tbsp Coconut Oil (use as per your diet restrictions)
3 nos Green Chillies (slit in the middle)
2 to 3 sprigs Curry Leaves
½ Salt (or as per taste)
200 ml Water
For roasting :
5 to 6 tbsp Coconut Oil (use as per diet restrictions)
½ tsp Mustard Seeds

Make the Perfect Roast Beef with Garlic Gravy - Guaranteed to be a HIT at your next dinner party!
I love a Sunday roast of beef, but I have to have it perfectly done. I've gone through many methods of cooking roasts, but this has to been one of the best fail proof methods I've ever come across. It works perfectly every time.
In this video we show how to cook this perfect roast beef done to medium rare. The process is straight forward, simple, and fair proof. First, seasoning the beef, on all sides, with a combination of of spices such as thyme, rosemary, garlic, salt, and pepper. Then, coat the roast with olive and then rub the spices into all sides. Another note is to make sure the meat be at room temperature, so I leave mine out for about 4 to 6 hours.
Next, place the vegetables of your choice into the bottom of the roasting pan. The roast is placed on the top baking tray. Put the roast and vegetables into a 500 degree F or 260 degrees C preheated oven for 5 minutes per pound. My roast was about 2.2 pounds, so I left it about 13 minutes or so. After about 13 minutes, the heat is turned off and the roast is left in the oven to bake for 15 minutes per pound. It is very important not to open the oven door at all. In the case of this roast, I left it for 35 - 40 minutes, pulled it out, and allowed it to rest for an additional 15 minutes.

Beef Varattiyathu malabar style
Fenugreek (uluva) plays an important role in the malabar beef recipes. The northern Keralites prefer beef roast rather than beef curry and beef fry. A typical Friday starts off in Malappuram Area with people flocking around the small beef shops. The beef starts boiling in the clay pots by around 10 am and the men taste this gravy along with dosa or steam cake before going for the friday prayer.
The ladies in the house then roast this beef by adding freshly ground pepper, fresh coconut oil, Curry leaves and uluva and a drooling flavor spreads all over the house.
Parotta ( porata) and beef is also a special combo for most of the special occasions in the Malabar households and even this combo is available as a breakfast dish in most of the restaurants in these part of Kerala.
