How To make Pepper Beef Balls
1 x Recipe Of Basic Meatballs; * 1 tb Margarine Or Butter
1 ea Onion; Sliced, Md 1 1/2 c Water
1 1/2 ts Instant Beef Bouillon 1/2 ts Garlic Salt
1/2 ts Ginger; Ground 3 tb Soy Sauce
2 ea Green Peppers; Md, ** 2 tb Cornstarch
2 tb Water 1 ea Tomato; Lg, ***
* See Recipe 12 ** Seed the Medium Green Peppers and cut into strips. *** Cut the tomato into 8 wedges. ~
Prepare the basic meatballs recipe and set aside. Melt the margarine in a large skillet. Add the onion and cook and stir until tender. Add the cooked meatballs, 1 1/2 cups of water, the bouillon, garlic salt, ginger and soy sauce; heat to boiling. Reduce the heat and cover. Simmer for 10 minutes, stirring occasionally. Add the green pepper. Mix the cornstarch with the 2 Tbls of water and add to the sauce mixture. Cook, stirring carefully, until mixture thickens and boils. Cover and simmer until the pepper is crisp tender, about 3 minutes. Add the tomato, cover, and heat for about 2 to 3 minutes longer. NOTE: Hot cooked rice makes an ideal accompaniment for this zesty dish. :

Ingredients:
1 lb. ground sausage
½ cup seasoned bread crumbs
2 eggs
1 green bell pepper (½ chopped, ½ sliced)
1 red bell pepper (½ chopped, ½ sliced)
1 yellow bell pepper (½ chopped, ½ sliced)
1 medium Spanish onion (½ chopped, ½ sliced)
2 gloves garlic chopped
¼ cup white wine
¼ cup Extra-Virgin Olive Oil
¼ cup canola oil
1 TBS chopped parsley
1 TBS salt
1 Tsp black pepper
Pecorino Romano for garnish
Directions:
1. Place ground sausage, eggs, breadcrumbs, ½ the garlic, chopped peppers and onions into a bowl and mix.
2. Pre-heat a medium frying pan on medium high heat, add canola oil.
3. Portion balls, roll them and pan fry them at until golden brown on the outside.
4. Place fried balls onto a sheet tray and place in a 350F oven for 15 minutes or until internal temperature reaches 145F.
5. Preheat a large sauté on high heat. Add extra-virgin olive oil, sliced onions, salt and pepper.
6. After 1 minute add remaining chopped garlic and sliced peppers. Sautee for 5 minutes.
7. Add white wine. Sautee another 4-5 minutes. Peppers should be soft. Once peppers are finished, placed cooked meatballs into pepper mix and toss.
8. Garnish with shaved Pecorino and chopped parsley.

When I was in Spain, one specific tapa I found myself ordering very often was Albondigas, which is meatballs in tomato sauce. This is usually served in a terra-cotta plate with three to four balls in a generous amount of tomato sauce and country bread on the side.
In this recipe, I am sharing with you my take on this simple dish.
DELICIOUS Italian Meatballs | Red Pepper Tomato Sauce
Simple and so savoury, these little meatballs pack explosive flavour set to be a hit at any get together. Soft, moist and crazy good, the perfect accompaniment to a nice bowl of spaghetti.
✿ INGREDIENTS ✿
Ground Meat - 2 Pounds (Nonna is using both beef and veal)
Italian Bread - 2 Slices soaked in water or milk
Eggs - 2
Romano Cheese - 1/2 Cup
Italian Parsley - 1/2 Cup, Chopped
Fresh Garlic - 3, Minced
Sea Salt - 1 Tablespoon
Black Pepper - 1 Teaspoon
✿ DIRECTIONS ✿
In a large bowl, mix all ingredients together until well combined.
Roll the meat mixture into the desired size of meatball (golfball size) and place on a parchment lined baking sheet.
Bake at 450º for 20 minutes
Get a saucepan of of your favourite tomato sauce going and lower to a simmer - you can use Nonna's famous Red Pepper Sauce for this!
Add in the meatballs to the simmering sauce and let them simmer for 10 min.

Rice and meatballs go together like a charm. So, first, for this main dish, let’s bring together rice and sweet pepper and flavor them with beef stock and oregano. Next, let’s season the ground beef with garlic and, again, with oregano; you can even give it an acidic touch, like we did, by tossing in lemon zest.
