How To make Beef~ Pepper & Mushroom Kabobs
: 1 lb Boneless beef top sirloin : -steak, cut 1-1/4" thick (or : -boneless chicken : -cubes or boneless pork : -cubes) : 1 md Green, red or yellow bell : -pepper, cut into 1-1/4" : -pieces : 2 tb Olive oil : 1 tb Lemon juice : 1 tb Water : 2 ts Dijon-style mustard : 1 ts Honey : 1/2 ts Dried oregano leaves, : -crushed : 1/4 ts Pepper : 12 lg Mushrooms : Salt, if desired Trim excess fat from beef top sirloin steak; cut steak into 1-1/4" pieces. Whisk together oil, lemon juice, water, mustard, honey, oregano and pepper in large bowl. Add beef, bell pepper and mushrooms, turning to coat. Alternately thread beef, bell pepper, and mushrooms on each of four 12" metal skewers. Place kabobs on rack in broiler pan so surface of meat is 3 to 4" from heat. Broil 9 to 12 minutes for rare to medium, turning occasionally. Season with salt, if desired. Makes 4 servings. Perfect Middle Eastern Kofta Kebabs!

Beef Kofta Kebabs
Ingredients:
2 lbs Ground Beef
1/2 Onion (finely minced)
4 Garlic Cloves (finely minced)
1 Bunch Of Mint (finely minced)
1 Bunch Of Parsley (finely minced)
1 Tbsp Lemon Juice
1 tsp Ground Coriander
1 tsp Ground Ginger
1 tsp Cinnamon
1/2 tsp Nutmeg
2 tsp Allspice
1 tsp Cumin
2 tsp Paprika
1/2 tsp Cayenne
1/2 tsp Ground Green Cardamom
1 tsp Sumac (optional)
Salt and Black Pepper
Accoutrements:
Pita or Flat Bread
Sliced Onion
Sliced Cucumber
Sliced Tomato
Shredded Lettuce
Lemon Wedges
Tzatziki Sauce Ingredients :
1 Cup Yogurt
1/2 Cup Cucumber (grated)
1 Garlic Clove (minced)
1 Tbsp Mint (finely minced)
1-2 Tbsp Lemon Juice
1 Tbsp Olive Oil
Salt
Instructions:
In a large bowl combine all the tzatziki sauce ingredients and season with salt to taste. Place in the fridge until ready to serve.
In a large bowl combine the ground beef, all the dry spices, finely minced onion, garlic, mint, lemon juice, and parsley. Season with salt and pepper then mix until completely incorporated and slightly tacky.
Form a few ounces of the ground meat mixture into a oblong shape in your hand. Using a flat skewer, skewer the meat through the center and evenly spread the meat across the length of the skewer. (PRO-TIP: keep the meat cold, this will help the meat stick and stay on the skewer). Repeat with the rest of the kebabs. Place the kebabs on a sheet tray then place in the fridge to keep cold while you fire up the grill.
Next using a charcoal grill with a few wood chunks added for smoke, grill the kebabs suspended by a metal kebab holder (Check Amazon). Turn the kebobs every 30 seconds until cooked then remove from the grill. (You can also grill the kebabs directly on the grill just make sure the grill grate spacing is close together).
Serve the kofta with sliced tomatoes, red onion, cucumber, lemon wedges, lettuce, pita or flatbread, and the tzatziki sauce.

Steak kabobs look good, taste great, and are extremely easy to make.
Everything cooks together and you get those crispy charred bits around the edges. Serve it over some rice pilaf and bam! You have a great meal.

NY Steak Kabobs | Grilled Steak Kabobs

This recipe for beef steak kabob is easy and doesn't require a marinade. The key with these beef steak kabobs is to use a good quality steak. I like to use a New York Strip Steak.
Here is what you need for these New York Strip Steak Kabobs:
- 2 16oz New York Strip Steaks
- 3 Bell Peppers various colors
- 1 Red Onion
- 1 Medium size Yellow Squash
- 1 Medium size Zucchini Squash
- 16oz Whole Mushrooms
- Salt, Pepper, and Montreal Steak Seasoning to taste
Cut Strip Steaks into 4 equal size portions about 4oz each; trim excess fat from edges. Rinse and paper towel dry peppers, onion, and squash.
Slice peppers and onion into equal size portions about 2” square. Slice Squash cross wise into circle shape portions ½” in width.
Use metal or bamboo soaked skewers for assembling steak kabobs. Skewer vegetables and steak pieces alternating each type.
Brush steak kabobs with olive oil and season with salt, black pepper, and Montreal steak seasoning.
Grill kabobs over medium high heat for 16 minutes turning steak kabobs every 4 minutes. During the last 4 minutes of cooking baste with butter mixture.
Butter Baste for Steak Kabobs
- 1 stick Unsalted Butter
- 3-4 Garlic Cloves minced
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried parsley
Melt butter in microwave for 1 minute. Add salt, black pepper, and parsley. Stir to combine.
Use as baste for steak kabobs and vegetables.
