How To make Pfeffernusse (Pepper Balls)
4 c Flour; Unbleached, Unsifted
1 ts Baking Powder
1 ts Cinnamon
1 ts Cloves; Ground
1/2 ts Mace
1 ts Allspice; Ground
1 x Black Pepper; As Desired
1 1/4 c Honey
2 tb Butter; (No Margarine)
2 ea Eggs; Large
1 c Confectioners' Sugar
1 ts Vanilla
1 x ; Water
Sift flour, baking powder and spices together. Heat honey and butter until butter melts. Cool to lukewarm and beat in eggs. Add flour mixture. Chill dough 1/2 hour. Shape dough into 1-inch balls. Place on greased cookie sheet. Bake at 350 degrees F. for 15 minutes. Cool Cookies on wire racks. Mix confectioners sugar, vanilla, and water to form a thin glaze. Dip cookies in glaze and place on wire rack to dry. Store cookies in airtight tins. Makes 4 dozen cookies. -----

Ingredients
1⁄2 cup honey
1⁄3 cup unsulfured molasses
2 tbsp. butter
2 eggs, at room temperature
2 cups whole wheat pastry flour
1⁄2 cup candied lemon peel, finely chopped
1⁄3 cup almonds, finely ground
3⁄4 tsp. freshly ground cinnamon
3⁄4 tsp. freshly ground black pepper
3⁄4 tsp. freshly ground cloves
3⁄4 tsp. freshly ground cardamom
1⁄2 tsp. baking powder
2 tbsp. vegetable oil
1 cup confectioners' sugar, sifted
1-2 tbsp. light rum

Pfeffernüsse Spiced & Iced Cookies
Well, what can I say about these delightful cookies? I have been eating pfeffernüsse and lebkuchen cookies since I was a wee one. My heritage is 3/4 German (you'd never know it to hear me stumble through some of these words- plus kind of mispronouncing pfeffernüsse) but what can I say? These spiced and iced cookies are remarkably easy, and look at how cute they are! Never buy store bought again!
