1/2 c Brown sugar; firmly packed
1/2 ts Cinnamon
3 tb Butter or margarine; cut up
1/2 c Pecans; chopped
1 3/4 c All-purpose flour
1 1/2 ts Baking powder
1/2 ts Baking soda
1/4 ts Salt
6 tb Butter or margarine; soften
2/3 c Sugar
2 lg Eggs
1 ts Vanilla extract
1/2 pt Sour cream
1 1/4 lb Peaches; peeled, cut in
- 1" chunks (2 cups) Powdered sugar Preheat oven to 350~. Grease 9" square baking pan. Make streusel: Combine oats, flour, brown sugar and cinnamon in medium bowl. With pasty blender or 2 knives, cut in butter until mixture resembles coarse crumbs. Stir in
pecans. Combine flour, baking powder, baking soda and salt in medium bowl. Beat butter and sugar in mixer bowl at medium speed until light and fluffy. Beat in eggs one at a time, then add vanilla. Add sour cream alternately with dry ingredients, beginning and ending with dry ingredients; beat just until combined. Spread batter in prepared pan. Sprinkle evenly with half the streusel. Spoon peaches on top; sprinkle with remaining streusel. Bake 50-60 minutes, until toothpick inserted in center comes out clean. Cool in
pan on wire rack 30 minutes. Sprinkle with confectioners' sugar. Serve warm or at room temperature. Makes 8 servings. -----

PEACH STREUSEL CAKE
Ingredients
* 1/2 cup unsalted butter, room temp.
* 3/4 cup white sugar
* 2 eggs
* 1 teaspoon vanilla extract
* 1/2 cup milk
* 1/2 cup full fat sour cream
* 2 cups all purpose flour
* 2 tsp baking powder
* 1/4 tsp salt
* 1 tbs unsalted butter (for greasing the pan)
* 3-4 fresh peaches
For streusel topping:
* 2/3 cup all purpose flour
* 2/3 cup white sugar
* 4 tbs melted butter
* 1/2 tsp cinnamon
Instructions
* Preheat your oven to 350 degrees F.
* Wash 3-4 large peaches and chop them into bite sized pieces or slices (you'll need about 2 and a half cups of chopped or thinly sliced peaches to cover the cake.). Set them aside.
* Add the butter and the sugar to the bowl of your stand mixer and beat them together until the mixture is fluffy and becomes a pale colour (about 4-5 minutes). It's important that the butter is at room temperature before you begin.
* Feel free to use a hand mixer if you prefer.
* Add the eggs and the vanilla and beat them in on medium speed until the mixture is smooth. Scrape down the bowl periodically.
* Add the milk and sour cream and beat in these ingredients on low speed until they're combined.
* To a separate bowl add the flour, the baking powder and the salt and mix these ingredients together with a fork or a wire whisk. Once they're all incorporated, dump the flour mixture into the bowl of the stand mixer with the wet ingredients. Turn the mixer on low and watch the batter come together. As soon as you see the batter form with streaks of flour throughout, turn off the mixer and remove the bowl.
* Over-mixing at this stage can cause an overly dense and dry cake. Using a rubber spatula, scrape down the sides of the bowl by hand and gently fold in the remaining flour. Be sure to stop folding as soon as everything is combined.
* Grease a 9x13 rectangular glass cake pan (or a metal pan) with some butter and pour the batter into the pan, using the spatula to push the batter into the corners and even out the surface. The batter will seem thick but it's supposed to be like that.
* Spread the peaches over the top of the batter.
* In a clean bowl mix together the flour, sugar and cinnamon for the streusel topping. Add in the melted butter and mix everything together with a fork until the mixture becomes crumbly.
* Sprinkle the streusel mixture over the cake and the peaches, making sure to spread it at evenly as possible.
* Bake the cake at 350 degrees Fahrenheit for 47-50 minutes. When it's finished baking the topping will be slightly browned on top, and when you insert a toothpick into the centre of the cake it will come out clean.
* Let the cake cool for at least 25 min.

2 eggs
10 g. vanilla sugar
100 g. sugar
50ml. sunflower oil
50 g. butter
340 g. flour

cream :
200 g. peaches in syrup
400ml. milk
10 g. vanilla sugar
2 yolk
100 gr sugar
4 tablespoons cornstarch
200ml. whipping cream already sweetened
sliced almonds

Easy Peach Coffee Cake
Easy Peach Coffee Cake is the perfect dessert! Fresh or frozen peaches in a delightfully moist and flavorful coffee cake, fit for any occasion.
Peaches And Cream Coffee Cake
Serving Size: 8
INGREDIENTS
2 boxes of cinnamon streusel cake mix
1 ½ cups water
½ cup vegetable oil
5 eggs, divided as 4 and 1
1 package (8 ounces) cream cheese, softened
¼ cup granulated sugar
3 peaches, thinly sliced
Whipped cream to garnish
PREPARATION
Preheat the oven to 400ºF / 200ºC.
In an empty bowl, mix cream cheese, sugar and 1 egg until smooth, set aside.
In a separate bowl, mix the cake mix according to box instructions
In a buttered cast iron skillet, pour half of the cake batter in and evenly spread it. Then drop spoonfuls of the cream cheese filling on top of the batter, carefully spread it over the batter.
Arrange the peaches over the cream cheese filling, then add the rest of the batter.
Garnish the top with leftover peach slices and sprinkle crumble topping if your cake batter includes it.
Bake for 30 minutes or until a toothpick comes out clean.
Garnish with whipped cream and enjoy!
