1. With cooking spray, grease 9 x 5 x 3 inch loaf pan; line with plastic
wrap. In bowl, mix crumbs, nuts, ginger, sugar and butter; spoon 1 cup mixture over bottom of pan. Cut 1 pint frozen yohurt in half lengthwise through container; peel off wraper. Cut each half crosswise into six pieces. Quickly arrange pieces in one layer over crumbs, cutting as necessary. Pour all the caramel sauce over yohurt; freeze 1 hour. On top, layer curmbs, yogurt, crumbs, ice cream (cut into pieces) and crumbs. Cover; freeze overnight. 2. To Serve: Uncover cake. Invert onto platter; unwrap. Serve with
fruits. 1- 300ml can condensed milk
1 cup cream cheese, at room temperature
2 cups cream (all-purpose, or thickened, or heavy), chilled
• Beat together condensed milk, cream cheese, and cream until thick and smooth.
7-10 packs sweet crackers
2 cups sliced mangoes
2 cups sliced canned peaches
1 cup Nata de coco
• Arrange crackers at the bottom of your prepared pan, or container, or cups. Top with sliced mangoes, peaches, nata de coco, and the cream layer.
• Repeat the same process one more more time.
• Chill for at least 8 hours to allow layers to set, and crackers are soaked with fruit juices.

4 ripe peaches, peeled and chopped
1 tablespoon lemon juice
50 grams (1/4 cup) granulated sugar
250 milliliters (1 1/2 cup) whipping cream
150 milliliters (1 cup) unsweetened condensed milk
2 teaspoons vanilla extract
1 ripe peach, peeled and cut into small cubes
DIRECTIONS:
1- In a food processor, add the chopped peaches, sugar, lemon juice, and mix until the texture becomes smooth like a puree. Set aside.
2- In a large bowl, add the heavy cream and beat it using an electric egg beater until peaks form.
3- Add the sweetened condensed milk, vanilla extract, and continue beating until well combined.
4- In a small bowl, add the milk, cornstarch, and mix together with a spoon until a smooth paste is obtained.
5- Add the prepared paste and peaches puree to the whipped cream mixture and mix well all-together with a spatula until the texture becomes homogeneous.
6- Pour the ice cream mixture into an airtight container, add peach chunks on top and freeze for 6 hours or until the texture becomes firm. Serve immediately.
