2 tb Flour
1/2 c Brown sugar; firmly packed
1/2 ts Cinnamon
3 tb Butter or margarine; cut up
1/2 c Pecans; chopped
1 3/4 c All-purpose flour
1 1/2 ts Baking powder
1/2 ts Baking soda
1/4 ts Salt
6 tb Butter or margarine; soften
2/3 c Sugar
2 lg Eggs
1 ts Vanilla extract
1/2 pt Sour cream
1 1/4 lb Peaches; peeled, cut in
- 1" chunks (2 cups) Powdered sugar Preheat oven to 350~. Grease 9" square baking pan. Make streusel: Combine oats, flour, brown sugar and cinnamon in medium bowl. With pasty blender or 2 knives, cut in butter until mixture resembles coarse crumbs. Stir in
pecans. Combine flour, baking powder, baking soda and salt in medium bowl. Beat butter and sugar in mixer bowl at medium speed until light and fluffy. Beat in eggs one at a time, then add vanilla. Add sour cream alternately with dry ingredients, beginning and ending with dry ingredients; beat just until combined. Spread batter in prepared pan. Sprinkle evenly with half the streusel. Spoon peaches on top; sprinkle with remaining streusel. Bake 50-60 minutes, until toothpick inserted in center comes out clean. Cool in
pan on wire rack 30 minutes. Sprinkle with confectioners' sugar. Serve warm or at room temperature. Makes 8 servings. -----

Peach Coffee Cake
Cake
1 box (15.25 oz.) white, yellow or tench vanilla cake mix
1/3 cup vegetable oi
3 large eggs
Peach layer
2 cans (15 oz. each) sliced peaches in juice drained and 1 cup peach juice reserved
2 tablespoons all-purpose flour
Crumb Topping
1 cup all-purpose flour
1 cup slivered pecans or walnuts
2/3 cup light brown sugar
6 tablespoons butter melted
Glaze
1 cup confectioners sugar
1 tablespoon butter melted
1 teaspoon vanilla
1-2 tablespoons milk
Instructions
Preheat oven to 350 degrees.
Grease a 9x13 baking dish and set aside.
In a large bowl mix together cake mix, 1 cup reserved peach juice, oil, and eggs until combined.
Pour batter in prepared baking dish.
Toss sliced peaches with flour.
Lay sliced peaches on top of batter.
Crumb Topping
In a medium bowl mix together flour, nuts, sugar, and butter until combined and crumbly.
Sprinkle topping evenly on top.
Bake cake in preheated oven for 23-28 minutes until cake tester inserted into the center of the cake comes out clean.
Glaze
In a small bowl mix together butter, vanilla, powdered sugar and milk 1 tablespoon at a time until glaze is combined. Glaze should be thick. If it's too thin add a little more confectioners sugar.
Drizzle glaze over cake

We decided to make use of all the perfectly ripe peaches that are in season and put them to use in a coffee cake where we used a standard yellow cake box mix as the base. By adding a few extra ingredients - and arranging delicate peach slices in a spiral pattern on the bottom/top of the cake - we created a dessert that never fails to impress, and that will have you longing for leftovers long after you’ve scarfed down the last piece...good thing it’s easy enough to make again whenever the craving strikes!
